Broiled Lamb Chops With Minted Pears image

This is an easy and quick dish made with canned pear halves. I copied from a co-worker about 13 years ago.

Number Of Ingredients 9

1 (16 ounce) can pear halves, drained
1/4 cup butter, melted, can use margarine
1 large lemon, juice of, can use 1/4 cup lemon juice
1/2 teaspoon dried mint
mint jelly (optional)
8 lamb chops, enough for 4 sevings
salt, to taste
pepper, to taste
garlic powder, to taste

Steps:

  • Season lamb chops and place on a boiler pan.
  • Arrange pear halves, cut side up in an ovenproof dish; or can arrange around the lamb on the broiler pan if desired.
  • Mix butter (or margarine), lemon juice and mint in a small bowl.
  • Brush mixture over the pear halves, reserving mixture.
  • Broil chops until done, turning lamb midway through cooking. Check on pears and can baste with the mixture again. Turn pears if you like.
  • Meanwhile, heat the remaining lemon juice mixture and and serve with the broiled pears and lamb.
  • If desired, fill pear halves with mint jelly.

4 Golden Delicious apples, unpeeled, halved, cored, thinly sliced lengthwise
4 Bosc pears, unpeeled, halved, cored, thinly sliced lengthwise
1/4 cup extra-virgin olive oil
1 tablespoon minced fresh rosemary
Fresh rosemary sprigs (optional)

Steps:

  • Preheat broiler. Brush 2 large baking sheets with olive oil. Gently toss apples, pears, 1/4 cup oil, and minced rosemary in large bowl. Arrange fruit in single layer on sheets. Broil until fruit is tender and edges begin to brown, watching closely to avoid burning and turning sheets for even browning, about 5 minutes.
  • Transfer fruit to platter. Sprinkle with pepper. Garnish with rosemary sprigs, if desired. Serve warm or at room temperature. (Can be prepared 4 hours ahead. Let stand at room temperature.)

4 fuji apples, unpeeled halved cored and thinly sliced (can use other non-tart green apples too)
4 bosc pears, unpeeled halved cored and thinly sliced (try to get firm not quite ripe pears)
1/4 cup extra virgin olive oil
1 tablespoon minced fresh rosemary
fresh rosemary, to garnish

Steps:

  • Preheat broiler.
  • Brush 2 baking sheets with olive oil.
  • Gently toss apples and pears in oil and rosemary.
  • Arrange fruit in single layer on the 2 sheets.
  • Broil until fruit is tender, about 5 minutes.
  • Watch closely or it will burn-- you may need to turn the sheets to avoid burning.
  • Transfer fruit to platter, sprinkle with pepper and a pinch of salt if you wish.
  • Garnish with rosemary sprigs.
  • Can be made ahead and served at room temperature.

2 pears
2 teaspoons margarine
4 teaspoons brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg

Steps:

  • Slice pears in half lengthwise and scoop out core and seeds with small melon baller. Place pears on a baking sheet, cut side up. Spoon ½ teaspoon of margarine in middle of each pear. Sprinkle brown sugar, cinnamon, and nutmeg over pears. Place oven rack at top setting. Cook pears under the broiler until butter melts, about 5 minutes. Optional: Serve with vanilla ice cream.
