APPLESAUCE OATMEAL CAKE WITH BROILED COCONUT TOPPING

Steps:
- In 1-quart saucepan, heat applesauce to boiling over medium-high heat. Stir in oats. Let stand 20 minutes.
- Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, cinnamon, nutmeg and salt, scraping bowl once, just until blended. Pour into pan.
- Bake 40 to 50 minutes or until toothpick inserted in center comes out clean.
- Meanwhile, in small bowl, mix all topping ingredients until well blended. Spread topping over hot cake. Broil cake with top 6 inches from heat 1 to 2 minutes or until top is golden and bubbly. Cool 30 minutes. Serve warm.

BROILED COCONUT TOPPING
My husband does not like the gooey icing of German Chocolate cake, so I found this pretty slick alternative! It has all the flavors, but a very distinct "crunch", it almost caramelizes on top of the cake. Try it, I think you will be pleasantly surprised! I do not use the nuts as my husband does not like nuts in his cakes, only cookies! This is perfect for a 13x9 cake, I often use a Swiss Chocolate cake mix.

- Mix all ingredients well.
- Spread mixture over a slightly warm cake.
- Set your oven to broil.
- Place cake approximately 5 inches from the heat source and broil until topping bubbles and browns slightly.

I saw this recipe in an issue of Betty Crockers Slow Cooker Recipes magazine and knew right away this was a keeper. This was great for dessert but was just as good the next morning as a Coffee Cake.

BUSY-DAY CAKE WITH BROILED COCONUT TOPPING
Steps:
- 1. Grease an 8x1/2 inch baking pan;set the pan aside.
- 2. In a mixing bowl combine flour,sugar,and baking powder.Add milk,butter,egg,and vanilla.Beat on low speed till combined.Beat on medium speed for 1 minute.pour batter into prepared pan.
- 3. Bake in a 350 oven for 25 to 30 minutes or until a wooden toothpick comes out clean.Spread broiled coconut topping over warm cake.Broil about 4 inches from heat for 3 to 4 minutes or till golden.Cool slightly in pan on a wire rack.serve warm,makes 8 servings.
- 4. BROILED COCONUT TOPPING:Beat 1/4 cup packed brown sugar and 2 tablespoons softened butter or margarine till combined.Stir in 1 tablespoon milk.Stir in 1/2 cup flaked coconut and,if desired, 1/4 cup chopped nuts.
BROILED COCONUT TOPPING
This makes enough topping for a 9 X 13 cake. I've used this topping on a variety of cakes over the years and it never fails to draw compliments.
