1 sleeve round buttery cracker, crushed
1 (5 ounce) container crumbled blue cheese
6 slices bacon, cooked and crumbled
1/4 cup finely chopped green onion
1/4 cup butter, melted
3 large tomatoes, cut in half crosswise
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 500. Line a small rimmed baking sheet with aluminum foil.
  • In a small bowl, combine cracker crumbs, blue cheese, bacon, and green onion. Add butter, stirring to mix well. Place tomatoes, cut sides up, on prepared baking sheet. Sprinkle tomato halves evenly with salt and pepper. Divide cracker mixture evenly amoung tomato halves.
  • Broil, 5 inches from heat, for 6 to 8 minutes, or until lightly browned.

Combine the enhanced flavor of romaine with smidgens of bacon and our irresistible blue cheese dressing, and that old-fashioned wedge of lettuce becomes a slice of heaven.

8 strips good-quality bacon
1 large egg
2 hearts romaine lettuce
Kosher salt and freshly ground black pepper
Blue Cheese Dressing, recipe follows
1 cup mayonnaise
1 cup crumbled blue cheese (about 4 ounces)
1/2 cup buttermilk
1 shallot, peeled
1 tablespoon freshly grated lemon zest
1/2 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon celery seeds
2 tablespoons minced fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon strips on a roasting rack and bake in the oven until crisp, about 20 minutes. (To make bacon curls: Wrap each slice of raw bacon around a metal skewer in a barber-pole fashion and lay the skewers on the roasting rack.) Pat dry with a paper towel. When cool enough to handle, break into pieces or in half, if using curls.
  • Put the egg in a small saucepan with enough cold water to cover. Bring to a boil, cover, and remove from the heat. Set aside for 10 minutes. Drain the egg and roll it between your palm and the counter to crack the shell, then peel under cool running water. Rub the egg through a fine-mesh strainer and set aside.
  • Remove the large outer leaves from the romaine hearts and rinse. Chop these leaves into bite-size pieces and spin dry. (Use an extremely sharp knife to minimize bruising the edges.) Halve the hearts through the cores to make 4 wedges. Rinse under cold running water and shake to air dry.
  • Divide the wedges among 4 plates. Mound some of the chopped romaine on top and season with salt and pepper, to taste. Spoon about 1/4 cup of Blue Cheese Dressing over each salad and top with some of the sieved egg and bacon. Pass the remaining dressing at the table.
  • Pulse the mayonnaise, blue cheese, buttermilk, shallot, lemon zest, Worcestershire sauce, salt, and celery seeds in a food processor to make a chunky but pourable sauce. Stir in the parsley and season with plenty of pepper. Use immediately or refrigerate in a tightly sealed container for up to 3 days.

1 tablespoon butter
3 tablespoons panko bread crumbs
⅛ teaspoon garlic powder
4 roma (plum) tomatoes
1 tablespoon olive oil
salt and freshly ground black pepper to taste
¼ cup crumbled blue cheese

Steps:

  • Set an oven rack 4 to 5 inches from the heat source and preheat the oven's broiler.
  • Melt butter in a small skillet over medium heat. Stir in panko bread crumbs and garlic powder until well combined and cook until bread crumbs are very lightly browned, 1 to 2 minutes. Remove from heat.
  • Cut tomatoes in half lengthwise and place on a baking sheet, cut sides up. Brush with olive oil and sprinkle with salt and pepper. Broil tomatoes until warmed through and lightly browned, about 3 minutes.
  • Finely chop blue cheese if there are any large chunks. Sprinkle on top of tomatoes, then top with bread crumb mixture. Broil until cheese is melted and bread crumbs are golden brown, about 1 more minute. Watch carefully, as bread crumbs can burn quickly.

6 slices firm white sandwich bread
1/4 lb sliced bacon (about 5 slices)
6 tablespoons olive oil
1/4 cup finely chopped shallot
3 tablespoons Sherry vinegar
4 assorted medium heirloom tomatoes (2 lb total), cut into 1/4- to 1/3-inch-thick slices
30 small fresh basil leaves
1 1/2 oz blue cheese (preferably Maytag Blue), crumbled, at room temperature
Garnish: very small heirloom cherry or currant tomatoes
Special Equipment
a 3-inch round cookie cutter

Steps:

  • Cut 1 round from each bread slice with cookie cutter.
  • Cook bacon in a 10-inch heavy skillet over moderate heat until crisp, then transfer to paper towels to drain. Pour off bacon fat from skillet and reserve fat (do not clean skillet).
  • Heat 1 1/2 tablespoons oil in skillet over moderate heat until hot but not smoking, then toast 3 bread rounds, turning over once, until golden brown, about 3 minutes total. Transfer toasts to a rack to cool and season with salt and pepper. Toast remaining 3 bread rounds in 1 1/2 tablespoons more oil in same manner.
  • Cook shallot in 2 tablespoons reserved bacon fat and remaining 3 tablespoons oil in a small heavy saucepan over moderate heat, stirring, until softened, about 2 minutes. Add vinegar and simmer, whisking, until emulsified, about 1 minute. Season dressing with salt and pepper and keep warm, covered.
  • Crumble bacon. Arrange bread rounds on 6 plates and divide tomato slices among them, stacking slices and sprinkling some basil and bacon between slices. Sprinkle cheese and remaining basil and bacon over and around tomatoes. Spoon some of warm bacon dressing over and around tomatoes and season with salt and pepper.

I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

4 beefsteak tomatoes (or any large)
2 tablespoons extra virgin olive oil
1/2 cup seasoned bread crumbs or 1/2 cup plain breadcrumbs
1/2 cup mixed Italian herbs (such as basil, oregano, thyme, parsley)
8 1/4 teaspoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
  • Remove the cores of the tomatoes then cut them in half (horizontally).
  • Place cut side up: then rub Olive oil over cut side (use fingertip).
  • Sprinkle bread crumbs on next.
  • Sprinkle Herb seasonings on and salt/pepper.
  • Then place 1/4 teaspoon of unsalted butter on each half.
  • Broil until tomato is hot completely.
  • ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.
