1 large or 2 small sweet red bell pepper, cut into strips
1 large or 2 small orange
1/4 teaspoon grated orange peel
1 teaspoon sesame oil for flavor

Steps:

  • 1. Microwave broccoli red peppers, and 2 Tbsp. of water in covered casserole on HIGH for 6-8 minutes, until broccoli is tender-crisp, stirring once. Drain. Save juice for soup.2. Peel and section oranges, saving juice. Add grated peel and oil to orange juice. Microwave on HIGH 20-30 seconds until bubbly.3. 1 tablespoon olive or vegetable oil
2 cloves garlic, finely chopped
2 cups broccoli florets
1 large red bell pepper, coarsely chopped (1 cup)
1 small onion, coarsely chopped (1/2 cup)
3 tablespoons water
1/4 teaspoon salt
2 tablespoon shredded Parmesan cheese

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat.
  • Stir garlic into hot oil. Immediately add broccoli, bell pepper, onion and water. Cook 4 to 6 minutes, stirring constantly, until broccoli is crisp-tender and onion is beginning to brown. Stir in salt.
  • Place in serving dish; top with cheese.

This makes a beautiful side dish to serve with pork or chicken. I use a combination of yellow and red bell peppers for a wonderful color combination. The recipe is from The Diabetic Cookbook with some minor changes.

3 1/2 cups broccoli florets
1/2 medium red bell pepper, cut into thin strips
1/2 medium yellow bell pepper, cut into thin strips
1 tablespoon butter
3 green onions, sliced in 1/2-inch slices on the diagonal
1 garlic clove, minced
1 1/2 teaspoons cornstarch
2/3 cup orange juice
2 teaspoons dijon-style mustard

Steps:

  • Place the broccoli and bell peppers in a steamer basket.
  • Place over 1 to 2 inches of boiling water, cover and steam for 6 to 8 minutes or just until crisp tender.
  • In a small saucepan, melt the butter, add green onions and garlic.
  • Cook until onion is tender.
  • Stir in cornstarch, orange juice and mustard.
  • Cook and stir until mixture is thickened and bubbly; stir and continue to cook for 2 minutes more.
  • Place steamed broccoli in a serving bowl, pour sauce over and toss gently to coat.

1 lb broccoli
1 sweet red pepper
1 yellow sweet pepper
1 tablespoon vegetable oil
1 onion, chopped
1 teaspoon grated fresh gingerroot
1/4 cup chicken stock
2 teaspoons soy sauce

Steps:

  • Peel tough broccoli stems.
  • Cut stem and florets into bite size pieces.
  • Blanch in large pot of boiling water for 2 to 3 minutes or until bright green and tender crisp, drain, cool under cold running water and dry on paper towels.
  • Seed peppers and cut into thin strips.
  • In a large frypan or wok, heat oil over medium heat.
  • Add onion and ginger, stir fry for 1 minute.
  • Add peppers and stir fry for 2 or 3 minutes, adding chicken stock when necessary to prevent sticking or scorching.
  • Add broccoli, stir fry until heated through, sprinkle with soy sauce.
  • Serve immediately.

This is quick and very addictive. The original recipe came from a magazine, I 'm not sure which one. It's probably from bon appetit. I have so many from that magazine that I've saved. I have tweaked it a little to suit my way of doing things.

1 1/4 lbs broccoli florets, cut into florets (about 8 cups)
3 1/2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup parmesan cheese
1 pinch red pepper flakes

Steps:

  • Preheat oven to 450. Toss broccoli with all the other ingredients. Transfer to a rimmed baking sheet. Spread them out in a single layer. Sprinkle with salt and pepper.
  • Roast 15 minutes. Toss them and turn them over and roast another 8 to 10 minutes until broccoli is browned nicely. Serve immediately. Yum!
