EASY BROCCOLI SLAW SALAD
This is a cool, delicious, crunchy, savory and sweet broccoli slaw that will satisfy. Try this instead of coleslaw. Tastes just as good if not better the next day.

Steps:
- Whisk olive oil, vinegar, sugar, and ramen noodle seasoning packets together in a bowl.
- Combine broccoli coleslaw mix, broken ramen noodles, almonds, raisins, green onions, and green bell pepper together in a bowl; fold in dressing. Refrigerate at least 2 hours. Stir again before serving.

- Vinaigrette: combine first 5 ingredients in a small bowl, stirring well with a whisk.
- Slaw: combine apple, broccoli slaw and dried cherries; drizzle with vinaigrette, toss well to combine.

BROCCOLI SLAW SALAD WITH APPLE - BROCCO SLAW
This is an easy, quick salad that even kids love. It's a good way to get them to eat broccoli if they think they don't like it! Most supermarkets have packaged brocco slaw in the produce section. If not, you will have to make very thin matchsticks of broccoli stems, about 2-3 inches long. Don't use the crowns at all. You will need to add in 5% shredded carrot and 5% shredded red cabbage to the broccoli matchsticks. Then continue with the recipe. I just noticed that the review on this recipe exactly mirrors my review of her chicken divan recipe 6 months ago. Sad.

- Place brocco slaw and apple in a bowl.
- Whisk together mayonnaise, vinegar, honey and salt and pepper. Pour over brocco slaw and apple. Mix well, with your hands.
- Serve.

BROCCOLI SLAW
Steps:
- Place the currants in a medium bowl and cover with boiling water. Let sit until soft and plump, about 5 minutes. Drain and set aside.
- Meanwhile, mix the vinegar, honey, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Drizzle in the olive oil, whisking constantly, until emulsified.
- Shred the broccoli florets and stems and red cabbage using the shredding disc of a food processor (see Cook's Note). Add to the bowl with the dressing and fold in the currants, almonds, onions, cilantro, parsley, 3/4 teaspoon salt and a few grinds of black pepper. Transfer to a serving bowl and garnish with more cilantro and parsley leaves, if desired.

- In a large bowl, combine the apples, broccoli, onion and raisins. In a small bowl, combine the mayonnaise, vinegar, sugar, lemon juice and salt; pour over apple mixture and toss to coat. Cover and chill for at least 2 hours. Just before serving, stir in the bacon and walnuts.
