Great for spring/summer cookouts, potlucks, camping and Easter side dish! We ate this for lunch and dinner the same day. Can make ahead and refrigerate for several days. Such a quick and easy fruit and vegetable side dish recipe!

6 cups fresh broccoli florets
1 cup grated Cheddar cheese
½ medium red onion, (chopped)
1 cup red seedless grapes (halved)
½ cup diced fresh pineapple
¼ cup chopped pecans
3 slices of cooked bacon (chopped)
1 cup mayonnaise or Greek yogurt
2 Tbsp apple cider vinegar
1 Tbsp sugar

Steps:

  • In a large bowl, combine the broccoli, cheese, onion, grapes, pineapple, pecans and bacon.
  • In a small bowl, combine the mayonnaise, vinegar, and sugar. Spoon the dressing over the broccoli mixture and toss gently until evenly coated.

3/4 cup pecans (roughly chopped)
1/2 cup red onion (chopped)
12 ounces bacon (cooked and chopped)
1/2 cup cheddar or Mozzarella (cut into small cubes)
1/2 cup dried cranberries or dates
1 cup mayonnaise
1/2 cup orange juice
1/4 Cup sugar
2 tablespoons apple cider vinegar
1 tablespoon fresh orange zest
1 teaspoon dijon mustard
1/4--1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a small bowl, whisk together the mayonnaise, orange juice, sugar, apple cider vinegar, orange zest, Dijon, salt, and pepper until smooth and creamy.
  • In a large salad bowl, toss together the broccoli, grapes, pecans, red onions, bacon, cheese, and dates. Toss the salad with half the dressing. Cover the bowl with plastic wrap and refrigerate for 2 hours. Adjust seasoning, adding more salt and pepper and dressing as needed. Serve

1/4 cup sugar
1-1/2 teaspoons honey
1 teaspoon ground mustard
1/2 teaspoon cornstarch
2 tablespoons water

2 tablespoons mayonnaise
2 tablespoons sour cream
4-1/2 teaspoons butter
4 cups broccoli florets (about 1 medium bunch)
1 cup salted cashews
1 cup cubed Swiss cheese
1 can (11 ounces) mandarin oranges, well drained
1/2 cup raisins
6 bacon strips, cooked and crumbled
1/2 cup chopped red onion, optional

  • In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar. ¾ cup sliced almonds

2 large head of broccoli, stems chopped and florets cut to bite size

Steps:
