Broccoli Pineapple Salad - so simple and SOOO good!! Seriously delicious!! Fresh broccoli, cheddar cheese, red onion, red grapes, fresh pineapple, pecans, bacon, mayonnaise, cider vinegar and sugar. Great for spring/summer cookouts, potlucks, camping and Easter side dish! We ate this for lunch and dinner the same day. Can make ahead and refrigerate for several days. - In a large bowl, combine the broccoli, cheese, onion, grapes, pineapple, pecans and bacon.

- In a large salad bowl, toss together the broccoli, grapes, pecans, red onions, bacon, cheese, and dates. Toss the salad with half the dressing. Cover the bowl with plastic wrap and refrigerate for 2 hours. Adjust seasoning, adding more salt and pepper and dressing as needed. Serve

- In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar. Cook and stir over medium heat until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in mayonnaise, sour cream and butter until blended. Cool. , Meanwhile, in a large bowl, combine broccoli, cashews, cheese, oranges, raisins, bacon and onion if desired. Just before serving, add dressing and toss to coat.

- Toss 1 pound broccoli florets with olive oil, salt and pepper. Char in a hot cast-iron skillet, 5 minutes, then roast at 500˚ F until tender, 8 to 10 minutes. Cut out the segments from 1 orange; squeeze the juice from the membranes. Whisk 2 tablespoons of the juice with 1/4 cup mayonnaise, 2 tablespoons olive oil, 1 tablespoon each white wine vinegar and orange marmalade and 2 teaspoons Dijon mustard.
