PARMESAN CRUSTED BROCCOLI STEM FRIES



Parmesan Crusted Broccoli Stem Fries image

4 broccoli stems
1 tablespoon olive oil
1/4 cup plus 1 tablespoon grated Parmesan or Pecorino-Romano
Nonstick cooking spray, for the pan
Flakey sea salt

Steps:

  • Preheat oven to 400 degrees F.
  • Peel the hard, woody exteriors of the broccoli stems. Cut each stem in half lengthwise, and then again into quarters.
  • Toss the broccoli stem fries with olive oil in a bowl, then coat in Parm. Line a baking sheet with parchment paper and spray lightly with cooking spray. Place the fries on the parchment. Bake until golden brown, 15 to 20 minutes. Sprinkle with flakey salt and serve immediately.

DEEP-FRIED BROCCOLI

Vegetable oil, for frying
3 tablespoons grated Parmesan
1 teaspoon ground sumac
1/2 teaspoon ground cayenne
Zest of 1 lemon, plus wedges, for serving
6 large cloves garlic, thinly sliced
1 head broccoli (about 1 pound), cut into florets
Kosher salt

Steps:

  • Heat about 2 inches of oil in a large pot to 365 degrees F. Meanwhile, line a baking sheet with paper towels.
  • In a small bowl, stir together the Parmesan, sumac, cayenne and lemon zest.
  • Add the garlic to the oil. Fry until light golden, 30 seconds to 1 minute. Remove to the lined baking sheet to drain. Add half of the broccoli to the oil and fry, turning occasionally, until browned and crispy, about 3 minutes. Remove to the lined baking sheet to drain and season with salt. Repeat with the remaining broccoli.
  • Put the broccoli in a serving bowl and toss with the Parmesan mixture. Sprinkle with the fried garlic. Serve immediately with lemon wedges.

Broccoli with pan-fried potatoes is an accompaniment that goes with everything, from broiled steak to scrambled eggs.

1 pound broccoli, florets cut into small pieces, stalks peeled and cut into 1/4-inch dice
1 tablespoon plus 1 teaspoon olive oil
2 large russet potatoes, (about 1 pound), peeled and cut into 1/2-inch dice
1 tablespoon unsalted butter
Salt and freshly ground pepper

Steps:

  • Bring 1 1/2 inches of water to a boil in a small saucepan fitted with the steamer insert. Add broccoli; cover, and cook until broccoli is just tender, 2 to 3 minutes. Drain in a colander, and rinse with cold running water until broccoli has cooled completely.
  • Heat oil in a large skillet over medium-high heat. Add potatoes; cook, stirring occasionally, until crisp, golden, and just tender, 15 to 20 minutes.
  • Add butter and broccoli to the skillet; season with salt and pepper. Cook, stirring occasionally, until potatoes and broccoli are browned, about 4 minutes.

This is a recipe I came up with when I was on the South Beach Diet. It is a very healthy recipe and my husband asks for it almost all the time.

1 (16 ounce) package frozen broccoli, thawed
1 tablespoon olive oil
½ teaspoon crushed red pepper flakes
salt, to taste

Steps:

  • Rinse and pat dry the broccoli.
  • Heat the olive oil in a large skillet over medium heat, add the crushed red pepper and heat 1 minute. Cook and stir the broccoli in the skillet until it begins to get crispy, 5 to 7 minutes. Season with salt to serve.

1 pound ground beef
3 cups frozen chopped broccoli, thawed
1 can (2.8 ounces) french-fried onions, divided
1 medium tomato, chopped
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup shredded cheddar cheese, divided
1/2 cup 2% milk
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Line bottom and sides of a greased 13x9-in. baking dish with cottage fries. Bake, uncovered, at 400° for 10 minutes. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. These cheese-y baked cauliflower fries are fairly time consuming to make but, served with a spicy ketchup dip, they'd make a great party snack.

2 (2.5 pound) heads cauliflower
1 tablespoon kosher salt
2 large eggs
4 ounces shredded Cheddar cheese
1 ounce finely grated Parmigiano-Reggiano cheese, plus more for topping
4 cloves peeled garlic, crushed fine
½ teaspoon freshly ground black pepper
¼ teaspoon dried oregano
⅛ teaspoon cayenne pepper
1 tablespoon olive oil, divided

Steps:

  • Cut cauliflower into medium-sized florets and process in batches in a food processor. For each batch, pulse until pieces break down and continue processing until texture resembles rice grains. Transfer to a large pot. Sprinkle with kosher salt. Cook over medium-high heat, stirring, until mixture is wet and soft, about 30 minutes. Reduce heat if it begins to brown. Remove from heat and allow cauliflower to cool.
  • Transfer cauliflower in batches to a clean cotton towel. Bring up sides, twist towel, and squeeze out as much liquid as you can. For this recipe, you should have about 3 1/2 cups cooked, squeezed-dry cauliflower.
  • Preheat oven to 350 degrees F (175 degrees C). Line a large rectangular baking dish with parchment paper, allowing ends to extend up over the sides for easy lifting. Lightly brush parchment with olive oil.
  • Crack eggs into a large mixing bowl. Add crushed garlic, oregano, pepper, and cayenne pepper; whisk together. Transfer cauliflower to mixing bowl. Add shredded Cheddar cheese and grated Parmigiano-Reggiano. Mix thoroughly. Transfer to prepared baking dish. Tamp down and smooth out evenly.
  • Bake in preheated oven until deeply golden brown, about 1 hour. Allow to cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 or 4 hours.
  • Preheat oven to 400 degrees F. Line a baking sheet with a silicone mat; lightly oil the mat.
  • Lift cauliflower out of pan. Slice in half lengthwise; slice each half crosswise into thin "fries," about 1 inch wide. Arrange fries on the mat so they do not touch; brush lightly with olive oil. Sprinkle with a dusting of grated Parmigiano-Reggiano cheese.
  • Bake in preheated oven until deeply browned, about 20 to 25 minutes. Allow to cool slightly before serving.

4 cups frozen broccoli florets

Steps:

  • In a large skillet, brown pork chops in oil; sprinkle with seasoned salt. In a small bowl, combine cheese sauce and milk until blended. , Spread into a greased 13x9-in. baking dish. Top with cottage fries and half of the onions. Layer with broccoli and pork chops., Cover and bake at 350° for 45 minutes. Sprinkle with remaining onions. Bake until a thermometer reads 160°, 10 minutes longer.
