BRIE & SPICED PEAR PASTE SANDWICH

A delicious sandwich made with your choice of bread, slices of brie, Maggie Beer's scrumptious Spiced Pear Paste and baby spinach leaves. The first time I made this I used Maggie Beer's equally delicious Apple and Rosemary Paste. On that occasion, I used sour dough bread, but I've also made this sandwich with ciabatta. I've made it as a take-to-work sandwich, which has meant that by the time I have eaten it, the brie has been wonderfully melted - making the use of margarine or butter totally unnecessary. Since making this sandwich the first time - a serendipitous creation: it was simply what I had on hand - I've added chopped walnuts as I love the textural variety that they bring to the sandwich. This sandwich would, I believe, also be delicious pan-fried, though I've not yet tried it that way. Maggie Beer is an Australian chef and writer and she produces many, many food products and drinks. Her products are available online: http://www.maggiebeer.com.au/home/. For Australian Zaar members, her Spiced Pear Paste should be readily available from any good delicatessen, greengrocer's or supermarket. Her pastes might seem expensive but a little bit goes a long way when it comes to the flavour they bring to a sandwich. And I haven't yet even begun to explore where else I might use them. Zaar would not allow me to use Maggie Beer's Spiced Pear Paste as an ingredient, so in the ingredients I have listed slices of pear and I have suggested some spices that could be added if you are using slices of pear. Add one or more of these, according to your taste preferences.

2 slices ciabatta or 2 slices of your choice bread
3 -4 slices brie cheese
30 g slice pears (for Australians, Maggie Beer's Spiced Pear Paste)
1/4 cup hazelnuts, chopped or 1/4 cup pecans, chopped, if using slices of fresh pear
1 pinch cinnamon, if using slices fresh pear (optional)
1 pinch nutmeg, if using slices fresh pear (optional)
1 pinch ginger powder, if using slices fresh pear (optional)
1/4 cup baby spinach leaves

Steps:

  • Place slices of brie on a slice of bread, and spread Maggie Beer's paste on the other slice of bread.
  • Sprinkle the chopped walnuts on top of the brie, add the baby spinach leaves, (and if you are unable to access Maggie Beer's Spiced Pear Paste add the slices of pear); then place the slice on which the Spiced Pear Paste has been spread on top of the slice containing the brie, walnuts and baby spinach leaves; cut the sandwich in half; put in the fridge ready to be grabbed on your way out the door next morning!
  • OR if you are using slices of pear, add chopped hazelnuts or chopped pecans, add the spices of your choice, then place the other slice on top of the slice containing the brie, nuts (of your choice) and baby spinach leaves; cut the sandwich in half; put in the fridge ready to be grabbed on your way out the door next morning!
  • OR, if you're enjoying this sandwich at a more leisurely pace, enjoy it when you're ready to eat it. But allowing it to sit for a while out of the fridge is essential if you want to really enjoy the brie at its best.

This grilled Brie and pear sandwich is dedicated to National Grilled Cheese Sandwich Day, which happens every April 12, thanks mostly to bored food bloggers and cheese-industry marketing cartels. I'm looking at you, Wisconsin.

2 tablespoons butter, softened
2 thick slices French bread
6 thin slices Brie cheese, or more to taste
12 fresh thyme leaves, or to taste
1 pinch cracked black pepper
6 slices pear (such as Bosc)
salt to taste

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

GRILLED PEAR & BRIE SANDWICH

Number Of Ingredients 7

2 slices of sourdough, french or Italian bread.
6 - 8 thin slices of brie cheese
6 - 8 thin slices of pear, skin on or off - your choice.
8 - 12 thyme leaves
Pinch of pepper
Pinch of salt
2 - 3 tablespoons of butter

Steps:

  • Set pan on stove and turn stove to medium-low heat. Generously butter two slices of bread and place in pan. Place thin slices on each slice of bread, covering entire slice. On ONE of the brie topped slices, LIGHTLY pepper brie. Sprinkle thyme onto brie. On top of the pepper & brie, place pears slices, covering entire slice of bread. LIGHTLY sprinkle salt onto pears. Flip brie only slice of bread on top of pear slice of bread. Grill, flipping every minute or two until bread is golden brown on both sides and brie is melted. Remove and slice in half and devour!

24 mini phyllo tart shells
¼ pound ripe Brie cheese, cut into 24 small chunks
1 ripe pear, cut into small dice
2 sprigs fresh thyme
2 tablespoons honey, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a jelly roll pan with parchment paper.
  • Arrange tart shells onto prepared pan. Put a piece of Brie cheese into each shell. Sprinkle diced pear and a couple thyme leaves into each shell and drizzle with honey.
  • Bake in preheated oven until cheese is melted and tarts are golden, 12 to 15 minutes.

1 round Brie cheese (8 ounces)
1 small ripe red pear, thinly sliced
2 teaspoons brown sugar
1 tablespoon chopped pecans
1/4 teaspoon butter
Assorted crackers or bagel chips

Steps:

  • Place cheese in an ungreased oven-proof serving dish. Top with pear slices. Sprinkle with brown sugar and pecans. Dot with butter. Bake at 400° for 5-10 minutes or until cheese is softened. Serve with crackers.
