5 medium tomatoes, sliced 1/2" thick, lightly salted
1 deep pie shell, baked
5 slice bacon, chopped and cooked along with onion
1 medium onion, finely chopped (saute this with bacon while cooking)
1 1/2 c (total) shredded Monterey Jack and cheddar cheese
1 1/2 c Nibs cheese crackers (Ritz crackers ok too), smashed lightly
1/2 c mayo
1/2 pkg ranch dry mix
1/4 c butter milk (reg milk ok)
3 Tbsp butter, melted

Steps:

  • 1. Prebake pie shell at 350 for 15 minutes.
  • 2. Saute chopped bacon and chopped onions until bacon is done.
  • 3. Place sliced tomatoes on paper towels for a few minutes to soak up some liquid.
  • 4. In a medium bowl, mix ranch with mayo and buttermilk (or regular milk).
  • 5. Place half of the tomatoes in the baked pie shell.
  • 6. Then sprinkle half of the onions and bacon.
  • 7. Then comes half of the cheese.
  • 8. Then half of the ranch mixture.
  • 9. Repeat process one more time.
  • 10. Top with crushed cheese crackers.
  • 11. Drizzle melted butter over crackers.
  • 12. Bake for 20-25 minutes.
  • 13. Let cool for 5 minutes.
