1 sourdough bread bowl
7 oz brie cheese, 1 wheel
2 tablespoons olive oil
1 tablespoon white wine
4 cloves garlic, minced, divided
2 strips bacon, cooked and chopped
pepper, to taste
fresh chive, chopped, to taste
potato chip
mini potato
spaghetti
carrot

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut off the top of the bread boule so the top surface is flat and without crust. Slice the crusty top into sticks and set aside.
  • Set the brie wheel on top of the bread and cut out a hole for the brie. Set the brie aside and remove the cut out bread.
  • In a small bowl, mix the olive oil with 2 cloves of garlic and brush over the bread. Set the boule aside.
  • Carefully cut the top rind off of the brie wheel. Place the brie, cut-side up, inside the bread and set it on a baking sheet lined with parchment paper.
  • Scoop out about a tablespoon of the center of the brie and pour the white wine into the divot.
  • Top the brie with the remaining minced garlic and chopped bacon, and season with pepper. Arrange the bread sticks next to the bread on the baking sheet.
  • Bake for 15- 20 minutes, until the brie is completely melted.
  • Sprinkle with chives.
  • Dip the bread sticks and any other dipping items you'd like in the brie.
  • To reheat, bake the brie at 250°F (120°C) for about 15 minutes, until melted.
  • Enjoy!

2 slices thick-cut applewood-smoked bacon, chopped
1 large onion, thinly sliced
Kosher salt and freshly ground pepper
5 sprigs thyme, plus leaves for topping
3 cloves garlic, thinly sliced
1 tablespoon red wine vinegar
1 teaspoon packed dark brown sugar
1 tablespoon whole-grain mustard
1 tablespoon chopped fresh parsley
1 7- to 8-ounce wheel brie cheese
1 7- to 8-inch round loaf white or sourdough bread
2 tablespoons extra-virgin olive oil

Steps:

  • Put the bacon in a large nonstick skillet and turn the heat to medium. Cook until the fat renders, about 5 minutes, then add the onion and season with salt and pepper. Cook, stirring, until the onion softens, about 5 minutes. Add the thyme sprigs and garlic; reduce the heat to medium low. Continue to cook, stirring occasionally, until the onion is browned and broken down, 30 to 35 minutes, adding the vinegar and brown sugar in the last 5 to 10 minutes. If the pan gets too dry, add a splash of water and scrape up any browned bits. Remove from the heat; stir in the mustard and parsley.
  • Meanwhile, preheat the oven to 350˚ F. Put the brie in the freezer to firm up, 5 to 10 minutes. Using a serrated knife, slice off the top one-third of the bread loaf (reserve the top). Hollow out the bread so that the brie will fit inside. Slice the top and insides of the bread; drizzle with the olive oil and season with salt and pepper. Arrange the sliced bread on one baking sheet and put the bread bowl on the other.
  • Remove the brie from the freezer and trim off the top rind. Fit the brie inside the bread bowl and top with the onion jam, discarding the thyme stems. Transfer both baking sheets to the oven and bake until the bread is toasted and the brie is hot, about 10 minutes for the sliced bread and 15 to 20 minutes for the bread bowl. Sprinkle the brie with thyme. Serve with the toasted bread.

1 sourdough bread boule
One 8-ounce Brie wheel, double cream preferred
2 tablespoons olive oil
2 tablespoons habanero pepper jelly
Pinch kosher salt
Pomegranate seeds, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice off the top third of the bread boule and set aside. Place the Brie wheel in the center of the bread and cut around to "trace" the outline of the Brie in the bread; be careful not to go all the way through the bottom. Remove the center part of the bread that was traced out and cut into 1-inch pieces for dipping. Brush the oil along the inside exposed bread. Spread the pepper jelly on the bottom and sprinkle with salt. Cut slices in the side of the bread about halfway down and about 1 inch wide all the way around. This will create tearable pieces to enjoy later.
  • Cut the top layer off the Brie and discard, then place the Brie in the bread. Cover with the bread top and bake until the cheese is melty and the bread is crusty, about 20 minutes. Top with a sprinkling of pomegranate seeds. Serve with the bread and fruit or veggies if desired.

  • In a small bowl, combine the wine, brown sugar and seasonings. In a large skillet over medium heat, cook shallots in butter until tender. Add pears; cook and stir 3 minutes longer. Add wine mixture; bring to a boil. Cook and stir for 10 minutes or until liquid is evaporated., Cut the top fourth off of the loaf of bread; carefully hollow out enough of bread from the bottom so cheese will fit (discard removed bread or save for another use). 1 large onion, halved and thinly sliced
6 sprigs thyme
Kosher salt and freshly ground pepper
1 tablespoon Worcestershire sauce
1/4 cup low-sodium beef broth
2 tablespoons chopped fresh chives, plus more for topping
1 loaf French bread (18 to 20 inches)
8 ounces brie cheese, rind removed, thinly sliced
Crackers and/or crudites, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the olive oil in a medium nonstick skillet over medium heat. Add the onion and thyme sprigs, season with salt and pepper and cook, stirring occasionally, until the onion is caramelized, 15 to 17 minutes (reduce the heat if the onion is getting too dark). Add the Worcestershire sauce and cook until the skillet is dry, about 1 minute. Add the beef broth and cook, stirring, until the mixture is slightly saucy, 2 to 3 minutes. 1 cup granulated sugar
1 cup orange juice
12 ounces frozen cranberries (about 2 cups)
2 teaspoons fresh rosemary leaves, chopped
One 6-inch wheel Brie
One 9-inch round bread boule
2 tablespoons unsalted butter, melted
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment.
  • Bring the sugar and orange juice to a boil in a medium saucepan over medium-high heat and cook until the sugar has dissolved, about 3 minutes. Stir in the cranberries and 1 teaspoon rosemary and cook, stirring occasionally, until the liquid has thickened and reduced by half, about 20 minutes. Transfer to a baking sheet and refrigerate until cooled, about 1 hour.
  • Meanwhile, center the wheel of Brie on top of the bread boule. Using the Brie as a guide, trace a circle a little larger than the wheel of cheese with a paring knife and cut into the top of the bread and pull out the "plug". Trim and flatten it so it can be used as a lid for the bread bowl. Scoop out the insides of the bread boule, leaving about 1/2-inch of bread around the side.
  • Starting halfway up the side of the bread boule, use a serrated knife to cut a 1/2-inch deep horizontal slit around the entire bread boule. Now, starting at the rim of the bread boule cut down about 3/4-inch deep to connect to the first horizontal cut. Repeat all around the rim of the bread, spacing these vertical cuts about 1-inch apart. Brush the inside of the bread with the butter and sprinkle with the remaining 1 teaspoon rosemary, 1/2 teaspoon salt and a few grinds of pepper.
  • Reserve 1/4 cup of the cranberry sauce and spread the remaining sauce into the bottom of the bowl. Slice the top off the Brie and place into the bread on top of the cranberries. Transfer to the prepared baking sheet. Place the lid back on top and bake until the cheese is warm and gooey and the bread has turned a golden brown, 45 to 50 minutes.
  • Transfer to a serving platter and remove the lid and top with the reserved cranberry sauce. Rip the pull-apart pieces off around the outer edge and dip. Toast the extra scooped out bread and serve as extra dippers on the side.

This is an outstanding addition to your Tapa Table and so easy to make. I received this recipe from my friend Pat who I had met in Sint Maarten.

1/4 lb butter
6 ounces brie cheese
1/4 cup onion, diced
1/4 teaspoon basil
1 loaf French bread

Steps:

  • Melt the butter in a sauce pan and onion and basil.
  • Cut the Brie into small pieces and add to the butter mixture.
  • Stir until the Brie is melted.
  • Slice the French Bread in half lengthwise.
  • Take each half and cut ALMOST all the way through into slices about 1 1/2 inches each.
  • Spread the melted brie mixture over each half of the loaf.
  • Note: At this point you can refrigerate the bread/brie and continue just before serving.
  • Place each half of the under the broiler until the cheese is bubbly.
  • Tear the individual pieces completely off the loaves and place on serving platter.

2 garlic cloves, minced

  • Preheat oven to 350°F.
  • With sharp knife, cut just inside outer edge of bread leaving a shell.
  • Do not cut through bottom.
  • Gently remove insides of bread creating cavity for the cheese and cut into pieces for dipping.
  • Mix garlic and butter.
  • Paint inside of shell with mixture.
  • Reserve remaining mixture.
  • Trim cheese to fit inside shell, leaving rind on if desired.

1 tablespoon unsalted butter
1 medium white onion, thinly sliced
26 oz pizza dough
½ cup bacon, chopped
4 tablespoons unsalted butter, 1/2 stick, melted
8 oz brie cheese, 1 wheel
1 fresh chive, chopped, for garnish
broccoli floret, steamed, for serving
1.5 lb baby potato, boiled, halved, for serving
mushroom, sauteed, for serving

Steps:

  • Preheat the oven to 400˚F (200˚C). Prepare a 9-inch (22 cm) round cake pan with a 3½- inch (8 cm) ramekin in the center and set nearby.
  • Melt the butter in a large pan over medium-low heat. Add the onion and sauté until caramelized, stirring occasionally for about 15 minutes. Remove the pan from the heat.
  • Take a golf ball-sized piece of pizza dough and flatten it out with your fingers. Stuff the dough with about a teaspoon of caramelized onions and cooked bacon. Close the dough ball by pinching at the seam and roll into a ball in your hands. Repeat with the remaining dough and fillings.
  • Dip each stuffed ball in the melted butter. Place the stuffed balls in the prepared cake pan, stacking them around the ramekin.
  • Bake for 30 minutes, or until golden brown. Remove from the oven and reduce the oven temperature to 350˚F (180°C). Remove the ramekin with tongs (it will be hot!).
  • Place the wheel of brie in the center. Return the pan to the oven for 10 minutes more, or until the brie is soft.
  • Brush the monkey bread with more melted butter and sprinkle the bread and cheese with chives. Serve with vegetables like broccoli, potatoes, and mushrooms for dipping.

1/4 cup room temp butter
1 (3 ounce) package cream cheese
8 ounces round brie cheese
1 egg, beaten

Steps:

  • In a medium bowl mix together the flour, butter and cream cheese until dough forms.
  • Shape into a ball and wrap tightly with plastic wrap.
  • Chill for 1 hour.
  • Preheat oven to 400 degrees.
  • Divide dough into 2 rounds and roll out.

This is a combination appetizer that I serve based on a few different appetizers that I have seen offered in resturants. Your guests must love garlic, of course, but it is a rich, elegant appetizer that is sure to impress. I even occasionally make it for myself for dinner!

French bread (crusty)

Steps:

  • Preheat oven to 350 degrees.
  • Cut the tops off of the garlic, so that the cluster of cloves can be seen. Do not seperate cloves.
  • Baste with oil and sprinkle lightly with Thyme.
  • Place garlic on a medium piece of foil and then wrap foil around garlic, until it is complelety wrapped up in foil.
  • Bake in oven for 1 hour to 1 hour and 15 mins. Allow to cool.
  • Serve baked garlic with crusty French bread and Brie cheese.
  • Squeeze garlic onto bread slices and alternate with slices of Brie on bread (you can also combine garlic and Brie slices, but it is quite rich).

1 round sourdough bread loaf - (1 lb)
3 tablespoons melted butter
3 garlic cloves minced
1/2 pound firm brie cheese
1/8 teaspoon thyme
1/8 teaspoon marjoram
1 dash cayenne pepper

Steps:

  • With a sharp knife, cut a 'lid' from the top of the bread. Carefully remove insides, leaving a 1-inch crust. In a small bowl, mix butter with garlic. (Time-saving tip: Microwave butter and garlic together until butter melts.) Brush the garlic butter inside the loaf. Slice brie into cubes and place the cheese inside the loaf. Sprinkle with thyme, marjoram and cayenne pepper. Top the loaf with the reserved bread lid. Set the brie-filled loaf on a baking sheet and bake at 350 degrees, until cheese is melted and loaf is crusty, 12 to 15 minutes. Serve a salad while the bread is in the oven. Serve the bread hot on a large wooden cutting board set in the center of the table. Break off pieces and dip into the melted cheese. This recipe yields 2 servings.

GRILLED BRIE AND GRAPES WITH GRILLED BREAD

Vegetable oil, for brushing
Kosher salt and freshly ground black pepper
1 large baguette, sourdough, ciabatta or Italian loaf
2 bunches purple, red or green grapes (about 1 pound)
Two (8-ounce) wheels of brie (or one 16-ounce wheel)

Steps:

  • Light a grill or preheat a grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Slice the baguette in half lengthwise and brush the cut sides with a little oil. Sprinkle with salt and pepper.
  • Place the grapes with their stems still attached in a medium bowl. Coat the grapes with a little oil. Season with salt and pepper.
  • Brush the brie with a little oil, as well.
  • Once the grill is heated, grill the bread until charred on both sides, 3 to 5 minutes per side. Remove and slice into pieces.
  • Add the grape bunches to the grill and cook, turning every couple of minutes, until some of them begin to burst and they turn golden in color, 8 to 10 minutes. About 5 minutes before the grapes are done, add the brie to the grill.
  • If using two 8-ounce wheels of brie, grill until you see nice grill marks, 1 to 2 minutes per side. If using one 16-ounce wheel of brie, grill until you see nice grill marks, 2 to 3 minutes per side.
  • Remove the grilled grapes and brie and arrange on a board or platter along with the grilled bread.
  • Slather a little of the gooey, grilled brie on a piece of bread and top with a couple of the grilled grapes picked from the stem.

  • Preheat oven to 425 degrees Farenheit. Cut 1/4 of the top off of the bread loaf. Tear out the inside bread from the loaf. Tear into 1 inch pieces and set aside into a serving bowl. Leave a 1 inch thickness to walls of the bread loaf. Rub the cut side of the garlic clove all over the inside of the hollowed out bread bowl. Brush 2 tablespoons of the olive oil on the inside of the hollowed out loaf. Cube the brie into 1 inch pieces. You can remove the rind or leave it on. (To remove the rind without losing a lot of cheese, use a piece of unflavored dental floss. Hold both ends of the floss and run it just underneath the rind and pull all the way through.) Fill the bread with the cubes of brie. Sprinkle the Herbs de Provence and pepper over the cheese. Cover the bread bowl with the lid that was previously cut. Brush the outside of the loaf with 1 tablespoon of olive oil. Wrap the filled bread bowl with foil and bake for 30-40 minutes. Remove from oven. Take the bread bowl out of the foil, remove the lid and serve with the bread pieces.

BRIE WITH HERBS IN BREAD

1 French baguette-type loaf of bread (about 10 ounces)
1/4 cup virgin olive oil
3 tablespoons dry white wine
1 teaspoon coarsely ground black pepper
2 cloves garlic, peeled and chopped (about 1 teaspoon)
1 piece of ripe Brie cheese (about 10 ounces)
3 tablespoons chopped chives
1 cup coarsely shredded basil leaves
1 1/2 cups loose coarsely shredded sorrel leaves (other herbs can be used instead, depending on availability)

Steps:

  • Cut the baguette in half lengthwise and sprinkle the cut surface of each half with the oil, wine, pepper and garlic, dividing the ingredients evenly between the two halves.
  • Trim the Brie to remove any crust and cut into quarter-inch slices, preferably large and thin. Spread half the herbs on the cut surface of the bottom half of the loaf and arrange the cheese slices on top. Spread the remaining herbs on top of the Brie and place the top half of the bread loaf on top to reform the loaf. Press firmly together and roll as tightly as possible in plastic wrap and then in aluminum foil. (If tightly wrapped, the bread absorbs the juices better.)
  • Press the loaf between two baking sheets and refrigerate with three-to-five pounds of weight (a can or jar, perhaps) on top for four to five hours before cutting in slices to serve. It can be consumed cold or lukewarm

½ pound soft ripened brie
½ cup (1 stick) butter
2 tablespoons tomato paste
3 garlic cloves, minced
½ loaf fresh French bread, cut in half lengthwise

Steps:

  • In food processor fitted with the metal blade or blender, process brie, butter. tomato paste and garlic until smooth, scraping sides often. Place bread halves on baking sheet. Spread brie mixture over cut sides. Bake at 375 degrees 15 minutes until cheese is brown and bubbly. Cut each half in thirds. Serve warm. Makes 6 servings.

1 8-10 inch rustic round loaf of bread (Boule)
12 oz wheel of Brie
3 Tbsp salted butter, melted
1/2 tsp chopped fresh rosemary
1/2 tsp chopped fresh thyme
1/4 tsp ground pepper
1/2 c whole cranberry sauce
1/4 c chopped pecans
1/4 c dried cranberries

Steps:

  • 1. Preheat the oven to 350 degrees. Cut the bread in 1-inch cross section squares to resemble a checkerboard. Make sure not to cut all the way through the bread.
  • 2. Wrap the bottom of the bread in aluminum foil.
  • 3. Mix together the melted butter, rosemary, thyme, and pepper.
  • 4. Brush the seasoned butter in between the cuts in the bread.
  • 5. Slice the Brie into 1/2-inch wide strips and then into 1-inch long pieces.
  • 6. Stuff the Brie in between the cuts of bread.
  • 7. Then, spoon the cranberry sauce over the Brie and in between the bread cuts.
  • 8. Sprinkle the chopped pecans and dried cranberries over the top of the bread making sure to get into the crevices.
  • 9. Place the stuffed bread onto a cookie sheet. Bake for 20 to 25 minutes.
  • 10. Serve hot. To eat, simply tear off pieces of the bread.
