SMOKED TURKEY, AVOCADO & BRIE SANDWICHES
Make these when you have some beautiful fresh herbs. This is different and delicious because of the fresh herbs, garlic and pepperoni in the mayo mix. It makes a very special sandwich. If you like, you can also use this as a filling for lavosh wrapped sandwiches. Roll them up, chill them for an hour, and cut on the diagonal for a very nice lunch presentation.

Steps:
- Cut 6 small (one-person size) baguettes in half.
- Mix together mayo, cilantro, oregano, garlic and pepperoni.
- Spread evenly over the baguette halves.
- On 6 halves, now layer the brie first, spread a bit to fill in gaps, then turkey, tomatoes, avocado, and season with s&p.
- Top with spinach.
- Put the other half of the baguette on top of the filling mix.
- This can be refrigerated for about 2 hours, but any longer and the avocado will start to darken.

Steps:
- Heat a skillet over moderate heat.
- Add the olive oil, onion, jalapeno and bell pepper, and saute 2 or 3 minutes.
- Working on a plate to catch the milky juices, scrape corn off the cob.
- Break up kernels and pour into the skillet.
- Combine with peppers and onions.
- Season with sugar, cayenne and salt.
- When mixture bubbles, reduce heat to a simmer.
- Cut butter into pieces, stir into corn mixture, and simmer until creamy, 5 to 7 minutes.
- Cut the avocados in half lengthwise and remove the pits.
- Squeeze lime over the avocados to keep them from browning and season with a little coarse salt.
- Fill the avocado with maque choux, allowing the corn to spill down and over the sides.
- The ripe avocado is spooned away from its skin with bites of creamy, warm corn and peppers.
- Great served with tilapia, or other fresh fish.
AVOCADO AND CHICKEN MELTS
This is nice for an easy brunch/lunch/supper dish. I made these up when I had a couple of avocados that needed using and some uncooked chicken left over from making another dish. You can also use some crushed garlic in with the avocado and also top with sliced tomato before topping with the cheese. I have also made this with some shredded chicken from the deli and this works well too. If your avocado is still firm just use slices instead of mashing.

Steps:
- Slice chicken breast if using horizontally through middle.
- Place raw chicken on plate and squeeze over the juice from 1/2 a lemon.
- Sprinkle with the garlic pepper and turn to coat.
- Leave to marinate for a few mins then drain and fry in a little oil until golden brown on each side.
- Remove from pan and slice.
- Place avocado into a bowl and mash (if soft) or slice.
- Add juice of other 1/2 of lemon, salt, crushed garlic (if using)and freshly ground black pepper and mix well.
- Place the four slices of bread on a baking paper lined tray and place in hot oven and grill/broil for a few mins until lightly browned.
- Remove tray from oven, turn bread slices over and spread right to the edges with the mashed or sliced avocado.
- Top with the chopped chicken, sliced tomatoes (if using) and cover with grated cheese and return to oven and grill/broil until cheese melts.
- Remove from oven and serve hot.

AVOCADO AND BRIE ON A BAGEL
This is a great brunch or lunch sandwich. It would also be great on lightly toasted French bread. You can leave off the brie and it's still wonderful and refreshing.

- Spread butter or margarine on bagel halves.
- Put thin slices of brie on that.
- Layer 1 slice of onion on the brie.
- Put a layer of sliced avocado on the onion.
- Squeeze some lime juice on the avocado.
- Sprinkle salt and pepper on top.
- Eat open faced.
