I came across this hearty breakfast when we were on vacation in Tennessee, and I adapted the recipe to our tastes. Now it's one of our most favorite breakfasts-especially when we have overnight guests. My husband and I are busy with our own construction company. So I appreciate recipes like this that can be made up in advance and frozen. It's quick and easy to thaw this breakfast ring overnight and then cook it in the microwave while preparing the eggs to be placed in the center.

2 pounds lean bulk pork sausage
2 large eggs, lightly beaten
1-1/2 cups crushed butter-flavored crackers
1 cup shredded peeled apple
1/2 cup finely chopped onion
1/4 cup milk

Steps:

  • Line a 2-1/2-qt. ring mold with plastic wrap or waxed paper. Combine all ingredients; mix well and press firmly into mold. Chill several hours or overnight. , Unmold, removing plastic/paper, onto a baking sheet with raised edges. Bake at 350° for 1 hour. , Transfer onto a serving platter; fill center of ring with scrambled eggs.

1 cup finely chopped apple
1/2 cup half-and-half or 1/2 cup milk
1 1/2 cups fine dry breadcrumbs or 1 1/2 cups cracker crumbs
1/4 cup finely minced onion

  • Combine all ingredients and mix thoroughly.
  • Press lightly into a greased ring mold.
  • Bake 1 hour at 350F degrees.
  • Cool about 15 minutes and then invert onto plate to serve.

1-1/2 cups soft bread crumbs, toasted
2 eggs
1/4 cup chopped onion
1/4 cup minced fresh parsley
2 pounds bulk sage pork sausage
Scrambled eggs
Pimiento strips and additional parsley, optional

Steps:

  • In a large bowl, combine the bread crumbs, eggs, onion and parsley. Crumble sausage over mixture and mix well. Pat into a greased oven-proof 6-cup ring mold. , Bake at 350° for 20 minutes; drain. Bake 20-25 minutes longer or until meat is no longer pink; drain. Unmold onto a serving platter. Fill with scrambled eggs. Garnish with pimientos and parsley if desired.

1 pound hot sausage
1 lb. mild sausage
1 1/2 cups cracker crumbs
2 eggs, beaten
1/2 cup milk
1/2 cup finely chopped apple
1/4 cup maple syrup
1 tbsp. chopped fresh sage
16 eggs, scrambled

Steps:

  • 1. Brown the hot sausage and mild sausage in skillet, stirring until crumbly; drain. Mix with cracker crumbs, beaten eggs, milk, apple, maple syrup and sage in large bowl. 2 rolls breakfast sausage, mild
1/2 pound lean ground beef
1 cup chopped onions
1/2 cup chopped green bell pepper
1 cup sliced fresh mushrooms
1 teaspoon garlic salt
2 tablespoons dark brown sugar
2 cups cooked rice, medium grain (cooked in chicken broth)
2 cans refrigerated crescent rolls
2 cups shredded cheese, Mexican style with jalapenos
1 package Canadian bacon

Steps:

  • In a heavy skillet, add breakfast sausage, beef, onions, bell peppers, and mushrooms. Cook over medium heat on stove until the meat is no longer pink and the vegetables are tender. Add salt, brown sugar, and rice, and mix well. Remove from heat and add 1 cup shredded cheese and mix well.
  • Preheat oven to 375 degrees F.
  • On a round baking stone arrange crescent dough triangles in a circle with wide bases overlapping to form a circle in the center of the stone. The crescent roll points should be hanging over the edges. Place a scoop of rice and meat mixture evenly on wide edges of crescent roll. Sprinkle 1/2 cup shredded cheese evenly over meat and rice mixture. Bring points up over filling and tuck under center bases. The filling will not be completely covered with crescent rolls. Slice Canadian bacon in half and place slices over mixture between rolls. Bake for 13 to 15 minutes or until golden brown. Remove from oven and sprinkle remaining shredded cheese on top of dish.
  • Optional garnish: Cut top off medium bell pepper. Remove seeds and membrane. Fill with breakfast syrup. Place pepper in center of ring with arranged shredded lettuce around. Slice and drizzle syrup for a special added flavor!

5 eggs

1 (3 ounce) package cream cheese, softened
2 (8 ounce) cans refrigerated crescent dinner rolls
1/2 cup monterey jack and cheddar cheese blend, shredded
1 egg, beaten
1 teaspoon sesame seeds

Steps:

  • Heat oven to 375 degrees F; Spray large cookie sheet with cooking spray.
  • In 10-inch nonstick skillet, cook sausage and onions over medium-high heat 5-8 minutes or until thoroughly cooked; drain.
  • Stir in bell pepper; cook until tender.
  • Remove from pan.
  • In small bowl, beat 5 eggs, the salt and pepper.
  • Add egg mixture to skillet; cook over medium heat, stirring occasionally from outside edge to center.
  • Cook until eggs are set but still moist.
  • Stir in sausage mixture and cream cheese.
  • Unroll both cans of dough.
  • Place dough on cookie sheet, long sides overlapping, to form 14x13-inch rectangle; firmly press edges to seal.
  • Spoon egg mixture down center to within 1/2-inch of edges.
  • Sprinkle with cheese.
  • Starting at longest side, roll up; press edges to seal.
  • Shape into a circle; pinch ends to seal.
  • Cut six 2-inch slits around top of dough.
  • Brush dough with egg; sprinkle with sesame seed.
  • Bake 25-30 minutes or until deep golden brown.

I put together this recipe for my granddaughter for a Food Network taping! It has become one of my family favorites, and tradition for holiday mornings!! You can cook meats night before then assemble the ring in the morning. My coworkers' request this instead of a cake for their birthdays!!!! It's great for breakfast, showers, or brunch. I will use edible grass and center a ceramic egg filled with syrup for Easter Morning!!!!

1 roll of bulk Jimmy Dean sausage (any flavor)
2 7.5 oz cans of Pillsbury Buttermilk Biscuits
2 cups shredded Cheddar or Monterey Jack cheese

Steps:

  • Preheat oven to 350. Brown sausage in frying pan, drain. Open one can of biscuits and flatten each biscuit into larger circle. Place in bottom of greased bundt cake pan, overlapping each biscuit so that it makes a ring around bottom of pan. Top biscuits with 1 cup of shredded cheese, next place cooked sausage on top of cheese then top sausage with remaining 1 cup cheese. Open second can of biscuit dough and flatten out each biscuit, repeat placing dough around the top of bundt pan so it looks like a ring. Cook for 25 min or until golden brown. Let sit in pan for 5-10 min before inverting onto a plate. Slice and serve. This makes a gorgeous centerpiece for a breakfast buffet!
