Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground chuck (80/20 percent) or 1 1/2 lbs ground turkey (90/10 percent)
kosher salt & freshly ground black pepper
2 tablespoons canola oil
4 large eggs
4 slices American cheese (optional)
8 slices bacon, cooked until crisp
4 hamburger buns, split
chipotle ketchup (optional)
3 russet potatoes, peeled
1 quart vegetable oil
kosher salt

Steps:

  • MaKe the Shoestring Fries: Heat oil to 375 degrees F. Slice the potatoes lengthwise into 1/8-inch slices. Then cut each slice into 1/8-inch long strips. Add the strips in batches, separating them when they hit the oil. Fry until golden brown, remove and drain on paper towels and season with salt.
  • Make the Burgers: Divide the meat into four equal portions (6-ounces each). Form each portion into loosely into a 3/4 -inch burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.

  • Reduce the heat of the pan/griddle to medium heat. Crack the eggs onto the cooking surface you used for the burgers and season the tops with salt and pepper. Let the eggs cook until the white just sets up, about 45 seconds. Gently flip the eggs over (trying not to break the yellow) and cook for 10 seconds. THE GREAT BREAKFAST BURGER

The great breakfast burger image

Start the day with this flavour-packed breakfast sausage burger with bacon, cheese and tomato relish

Provided by Good Food team

Categories     Dinner, Lunch, Main course

Time 1h55m

Number Of Ingredients 10

1 medium onion , roughly chopped
2tbsp tomato ketchup
1 tbsp oyster sauce
1kg sausagemeat , or meat squeezed from 16 large sausages
1 egg yolk
25g pack flat-leaf parsley , leaves chopped
8 slices melting cheese (we used havarti)
8 grilled rashers streaky smoked bacon
8 ciabatta buns, halved
tomato relish

Steps:

  • Put the onion, ketchup and oyster sauce in a food processor, then blend to a coarse paste, scraping down the sides of the processor if you need to. Put the sausagemeat into a mixing bowl, beat in the onion mix, egg yolk and 25ml water (and I mean really beat; if you have a tabletop mixer, do it in that), then add the parsley. Separate the mix into 8, roll into large balls, then flatten into patties. Chill on a plate for 1 hr.
  • To cook the burgers, heat a griddle or large frying pan without adding any extra fat. Fry for 3 mins on one side until golden, turn down the heat for 5 mins, then flip and repeat on the other side.
  • While the burgers cook, fry the bacon and, if you are game, some eggs as well. Heat the grill, then lightly toast the insides of the ciabatta buns.
  • Place the cooked burgers on a baking sheet, put a slice of cheese on each, then pop under the grill to melt. Sit the burgers on their buns, then place the bacon on top. If you feel like them, slide fried eggs on top of the bacon. Serve with a napkin.

BISTRO BREAKFAST BURGER

Bistro Breakfast Burger image

Use a gentle hand when forming the patty; you want it to be tender and juicy, not dense. After stacking the burger patty on the bun with the cheese, return to the oven for 1 to 2 minutes to get a gooey melt, and then resume building your burger.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1/2 teaspoon chili powder
1/4 teaspoon hot sauce
1 1/2 pounds ground beef, 80/20
1 teaspoon sweet paprika
Kosher salt and freshly ground black pepper
4 slices thick-cut bacon, halved crosswise
4 large eggs
4 sesame seed hamburger buns
4 tablespoons unsalted butter, melted, for brushing
4 slices Havarti cheese

Steps:

  • Preheat the oven to 350 degrees F. Mix the ketchup, brown sugar, Worcestershire sauce, chili powder and hot sauce in a small bowl. Set aside.
  • Using a fork, gently mix the beef with the paprika, 1 teaspoon salt and 1/2 teaspoon black pepper. Form into four 5-inch patties. Cover and set aside.
  • Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Remove and drain on a paper-towel-lined plate. Pour off most of the bacon fat, leaving about 2 teaspoons in the skillet, reserving the extra bacon fat. Heat the skillet over medium-high heat. Add the burgers to the skillet, 2 at a time, and cook until nicely browned, 4 minutes. Flip and cook the other side until the burger is done, about 4 minutes for medium-rare. Repeat with the remaining burgers. Place the burgers on a rimmed baking sheet and place in the oven to keep warm while cooking the eggs.
  • Wipe out the skillet. Add 1 tablespoon of the reserved bacon fat to the skillet and heat over medium-high heat. Break the eggs into the skillet and cook until the whites are set, about 5 minutes. Season with salt and pepper.
  • Meanwhile, brush the buns with melted butter. Place them on a rimmed baking sheet and bake until lightly toasted, about 10 minutes.
  • Build the burger by placing a hamburger patty on the bottom bun, add a slice of cheese, 2 pieces of bacon and top with a fried egg. Spread the top bun with some of the spiced ketchup and place on top.

CLASSIC AMERICAN BREAKFAST BURGER

Classic American Breakfast Burger image

This burger was inspired by some of the "greatest hits" of a classic American breakfast. The patty is topped with sharp white cheddar and a fried egg, and everything is held together by a buttery bakery...

Categories     Burgers

Time 1h30m

Number Of Ingredients 24

12 oz applewood smoked bacon, cut into 1/2 inch pieces
3 large shallots, peeled and sliced
1 Tbsp chopped garlic
3/4 c balsamic vinegar
1/2 c pure maple syrup
2 Tbsp brown sugar, firmly packed
1 Tbsp chipotle flavored hot sauce (such as tabasco)
1/2 c grated sweet yellow onion
2 tsp minced fresh thyme
2 tsp minced fresh sage
2 tsp kosher salt
1 tsp black pepper
1/2 tsp cinnamon, ground
1/4 tsp freshly grated nutmeg
1/4 tsp cayenne pepper
1/4 tsp allspice, ground
2 lb ground chuck
vegetable oil, for brushing grill
6 slice aged white cheddar cheese
7 Tbsp unsalted butter, divided
6 brioche hamburger buns, split
6 large eggs, preferably organic
1/4 tsp each, salt and pepper
3 c loosely packed baby spinach

Steps:

  • 1. Preheat a gas grill to medium-high.
  • 2. Prepare the Smoky Bacon-Shallot Jam: Place the bacon in a large skillet set over the grill rack. Cook the bacon, stirring occasionally, until the fat has been rendered and the bacon is lightly crisped, about 10 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain.
  • 3. Carefully pour off all but one tablespoon of the bacon grease from the skillet. Add the shallots and the garlic to the skillet, and sauté for 3 minutes, stirring frequently. Add the balsamic vinegar, maple syrup, brown sugar, Tabasco and reserved bacon; stir to mix. Bring the mixture to a low boil, and then reduce the grill heat to low. Simmer the mixture until the liquid has reduced and thickened to a syrupy consistency, stirring occasionally, 25-30 minutes.
  • 4. Allow the mixture to cool for 10 minutes in the skillet, and then transfer it to the bowl of a food processor fitted with the steel blade. Pulse the mixture until the bacon is coarsely chopped (do not puree!) Transfer the jam to a bowl, cover, and set aside to cool completely.
  • 5. Return the grill heat to medium-high.
  • 6. Prepare the patties: Place the onion, thyme, sage, salt, pepper, cinnamon, nutmeg, cayenne, and allspice in a large bowl; stir to mix. Add the ground chuck to the bowl and mix all of the ingredients together, handling the meat as little as possible to avoid overworking it. Divide the mixture into 6 equal portions and form the portions into patties to fit the size of the buns.
  • 7. Grill the patties: Brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, 4-6 minutes on each side or until desired degree of doneness. During the last few minutes of grilling, place one slice of cheese on each patty. Transfer the burgers to aluminum foil-lined plate and loosely cover with foil to keep warm.
  • 8. Place one tablespoon of the butter on a large heat-proof skillet or griddle pan, and place on the grill. Spread the remaining butter on both cut sides of the split brioche buns. Place the buns, cut sides down, around the circumference of the grill (or on the upper grill grate, if available), to lightly toast. Crack the eggs onto the pan/griddle, and sprinkle with the pepper and salt. Let the eggs cook until the whites are set, about 1 minute. Carefully flip the eggs, trying not to break the yolks, and cook for 15 seconds longer.
  • 9. Assemble the burgers: Divide the spinach among the bottom halves of the buns and place the patties on top of the spinach. Spread a generous layer of the bacon jam on the top halves of the buns. Top the patties with a fried egg and the top buns. Serve immediately!

BREAKFAST BURGER

Breakfast Burger image

There are some mornings-and they usually come after a long night-when all I can think about is a breakfast sandwich piled high with eggs, bacon, and cheese. Add a side of hash browns and I might as well be in heaven. Given my love of a good breakfast sandwich, it was only a matter of time before I decided to move that sandwich out of breakfast-only terrain and into a burger. Breakfast, lunch, dinner . . . now I can get my fix any time. I prefer my egg cooked over easy because I love how the yolk runs out and saturates the burger after the first bite, but if that's not your thing, you should of course cook the eggs according to your preference.

Yield serves 4

Number Of Ingredients 9

1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper
1 1/2 tablespoons canola oil, or more, if needed
4 slices American cheese (optional)
4 large eggs
4 hamburger buns, split; toasted (see page 15), if desired
8 slices crisp cooked bacon
1/2 recipe Shoestring Fries (page 98)
Chipotle Ketchup (page 112; optional)

Steps:

  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
  • Cook the burgers, using the 2 tablespoons oil (see page 16) and topping each one with a slice of cheese and a basting cover during the last minute of cooking (see page 21). Remove the burgers to a plate and loosely tent with aluminum foil.
  • If you used a griddle or sauté pan to cook the burgers, reduce the heat under it to medium. If you used a grill, heat a tablespoon or two of oil in a medium sauté pan over medium heat. Crack the eggs into the pan and season with salt and pepper. Let the eggs cook until the whites just set up, about 45 seconds. Gently flip the eggs over (trying not to break the yolks) and cook for 10 seconds.
  • Place the burgers on the bun bottoms and top with the bacon and some of the shoestring fries. Drizzle the fries with chipotle ketchup and place the eggs on top of the fries. Top with the bun tops and serve immediately.

2 tablespoons maple syrup
2 teaspoons chopped fresh sage

8 slices bacon, crisped
Spicy Ketchup, recipe follows
1/4 cup ketchup
2 teaspoons lemon juice
1/2 teaspoon chili powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot sauce

Steps:

  • For the sausage: Mix the sausage, syrup, sage, salt, fennel seeds, garlic, onion and red pepper together in a large bowl.
  • For the burgers: Form the pork sausage into 4 patties, about 3 inches in diameter. Sprinkle both sides of each patty liberally with salt and pepper.
