BREADLESS STUFFING
After the holidays, I had an extra turkey breast in my freezer. Since starting the 'South Beach Diet,' I couldn't figure out how I could make a great stuffing for phase one. I think I have come close. This is a lot better than I even though it would be!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a glass baking dish with cooking spray.
- Heat the olive oil in a large skillet. Cook the mushrooms, garlic, celery, and onion in the olive oil 3 to 5 minutes. Add the water and bouillon; cook and stir until the bouillon is dissolved.
- Combine the garbanzo beans, egg, sage, salt, and pepper in a bowl. Mash together with your hands until thoroughly mixed; stir in the vegetable mixture; transfer to the prepared baking dish. Cover with aluminum foil.
- Bake in preheated oven 30 minutes; remove the foil and bake uncovered another 10 to 15 minutes.

Steps:
- Heat olive oil in pan over medium heat.
- Add diced onion, cook until soft (about 10 minutes).
- Add apples to pan, cook for 1 minute.(Stirring).
- Add cranberries and rosemary, cook for 1 minute.(Keep stirring!).
- Remove from heat, toss in cheese and mix.
- Serve immediately.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie pan.
- Heat oil in a saucepan over medium-high heat. Saute onions in the hot oil until softened and lightly browned, about 5 minutes. Add celery and cook until soft, about 5 minutes; stir in chicken broth, garlic, parsley, sage, rosemary, and thyme. Simmer broth mixture until it thickens slightly, about 10 minutes. Remove saucepan from heat and pour broth mixture into a bowl. Set it aside to cool, about 10 minutes.
- Stir eggs and feta cheese into broth mixture; pour into the prepared pan.
- Bake in the preheated oven until set, 25 to 35 minutes.
