BREADFRUIT PIE
Steps:
- Wash, peel and boil breadfruit.
- NOTE: Similarly to provision you test using a knife or ice pick.
- Mash and add evaporated milk, butter and 1/2 cup cheese. Mix well.
- Note: Texture here is all up to you. For a smoother pie, just mash until you don't have any more lumps.
- Place pot over medium flame. Cook minced beef then add tomatoes, onion,
- pimento pepper, celery, salt and fine leaf thyme.
- Mix well.
- Add tomato paste and green seasoning and continue cooking.
- When the beef is nearly finished add the golden ray margarine.
- TO ASSEMBLE THE PIE
- In a greased dish add one layer of breadfruit followed by a layer of beef. Complete with another layer of breadfruit. Top with cheese.
- NOTE: Before you spread the breadfruit divide it into two so you will have equal amounts for each layer. Breadfruit is very sticky so make sure to wet the spoon you're using to spread the breadfruit.
- Bake in a 350 degree F oven for 30 minutes or until the cheese bubbles.
- Cool for 10 minutes then serve.
SCALLOPED CHEESE BREADFRUIT
This is taken from a cookbook from Barbados. My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish.

Steps:
- Preheat your oven to 375 degrees F.
- Boil the breadfruit in lots of salted water until tender; this takes about 20 minutes.
- Heat the butter in a saucepan. Add the onions & cook until golden. Remove the onions and set aside.
- Add flour to same saucepan and cook,stirring for 1-2 minutes. Slowly add the milk, whisking until the mixture begins to thicken. Remove from the heat.
- Add the grated cheese, nutmeg, salt, & pepper.
- In a buttered casserole dish layer the breadfruit, onions, and cheese sauce, ending with the cheese sauce.
- Bake for 25 minutes.

Steps:
- Cut breadfruit in sections and boil in salted water until nearly tender but not mushy.
- Preheat oven to 350°F
- Combine Cheddar Cheese soup and milk. Grease baking dish.
- Slice breadfruit and onion thinly.
- Put layers of breadfruit and onion alternately in greased baking dish.
- Pour cheese sauce over breadfruit and onion.
- Dot with butter.
- Mix breadcrumbs and grated
- cheese together and sprinkle over the top. Bake for approximately 45 minutes.
- Serve hot.

- Peel and core the breadfruit, then slice ¼-inch thick. Bring to boil in water, then simmer for five minutes. Drain and discard water. Place breadfruit slices in a buttered casserole dish, then dot with butter and pour on mixture of cream, garlic and stock. Sprinkle with salt & pepper to taste and top with cheese. Cover and bake for 15 minutes in 375° oven, then uncover and bake fro an additional 15 minutes or until breadfruit is done and cheese is golden brown and slighlty crisp.
