4 8 oz (225 gram) boneless ribeye steaks, 1-inch thick ((or scotch fillet, sirloin, rump, strip or porterhouse steaks))
Salt and pepper, (to season)
2 tablespoons olive oil
1 onion (yellow, white or brown), (sliced)
2 large garlic cloves, (minced)
7 ounces (200 grams) brown mushrooms (sliced)
3 tablespoons unsalted butter
3 tablespoons plain flour
2 1/2 cups beef broth (or stock)
2 teaspoons Worcestershire sauce
Salt and pepper (to taste)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper to your taste.
  • Heat a lightly oiled skillet or pan (or barbecue) on high heat until just beginning to smoke. Cook steaks for 3 minutes each side or until cooked to your liking. Rest for 5 minutes.
  • Heat remaining oil in the skillet. Add onion and cook for 2-3 minutes until onions are translucent, then add the garlic and cook for a further 30 seconds, or until fragrant.
  • Add the sliced mushrooms into the skillet and cook for 3 minutes until golden and beginning to soften.
  • Reduce heat to medium and melt butter in the skillet. Add flour and cook while stirring for 1 minute, allowing the flour to brown slightly.
  • Slowly and gradually add in the beef broth (or stock), while stirring. Allow to simmer for 4-5 minutes, or until thickened. Stir in the Worcestershire sauce and season with salt and pepper to taste.
  • Add the steaks back into the gravy in the pan along with the juices on the plate OR serve steaks with the onion mushroom gravy on the side. Garnish with chopped thyme, parsley or rosemary if desired.

4 (6 oz.) top sirloin steaks, or other thin, boneless steak
2 tsp. olive oil
Salt
Pepper
1 cup beef stock
2 Tbsp. Worcestershire sauce
1 Tbsp. flour

Steps:

  • Pat the steaks dry, then season them generously with salt and pepper.
  • Heat the olive oil in a skillet over medium-high heat. Cook for 3-4 minutes on each side, or until deeply browned.
  • Transfer the steaks to a plate to rest.
  • In a measuring cup, whisk together the beef stock, Worcestershire sauce, and flour until smooth. Pour into the pan that you cooked the steaks in.
  • Bring the gravy to a simmer over medium heat, scraping up any browned bits from the bottom of the pan. Simmer for 3-5 minutes, or until the gravy is glossy and thick enough to coat the back of a spoon. Season to taste with salt and pepper.
  • Return the steaks to the pan and turn them to coat with gravy. Cook 1-2 minutes to rewarm, if desired.

1 cup all-purpose flour
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1 cup milk
3 eggs
2 pounds tenderized round steak or cube steak, cut into 1-inch strips
2 tablespoons butter
2 tablespoons vegetable or canola oil
2 tablespoons all-purpose flour, plus more if needed
3 to 4 cups milk
Salt and freshly ground black pepper

Steps:

  • For the steak fingers: Combine the flour, seasoned salt, pepper and cayenne in a dish. Whisk together the milk and eggs in a separate dish.
  • To bread the meat, first dredge in the flour mixture, then dip quickly in the egg mixture and then put back into the flour mixture to coat on both sides. Continue until all the meat is breaded.
  • Heat the butter and vegetable oil in a large skillet over medium to medium-high heat. Fry the steak strips 4 or 5 at a time, turning midway through. When golden brown, remove from the skillet to a paper towel-lined plate. Continue with the remaining meat. Cover loosely with foil to keep warm.
  • For the gravy: Pour off all the grease from the skillet, and then add 1/4 cup of the grease back in. Sprinkle on the flour. Whisk the mixture till it becomes a paste (add more flour if you need to) and cook the paste over medium-low heat until it's deep golden brown. Pour in about 3 cups of the milk, whisking constantly. Allow the gravy to cook and thicken, whisking regularly and adding more milk if it seems too thick right off the bat. Season the gravy with salt and pepper and pour into small dishes.
  • Serve the steak fingers with the gravy. Yum!

GRANNY'S STEAK AND GRAVY

3 pounds thick sirloin or round steak
Salt
Cayenne pepper
Black pepper
3 tablespoons vegetable oil
2 medium onions, chopped
1 bell pepper, chopped
1/2 cup water, divided
2 tablespoons cornstarch
Serving suggestion: Steamed rice

Steps:

  • Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

1/4 cup butter or 1/4 cup Butter Flavor Crisco

Steps:

  • Trim fat from steak and cut steak into smaller portions (should get about 5 or 6 small steaks) Salt and Pepper the steak as heavily as you prefer, and roll in the flour.
  • Preheat Butter at Med High heat.
  • Cook steak on one side until seared and brown, then flip steak and sear on other side for just about a minute to seal in the juices.
  • Turn heat down to low and add water.
  • Cover and cook at low heat for 1 to 1 1/2 hours.
  • put meat on serving plate and mix gravy that is in the pan together and serve on mashed potatoes.
  • Gravy should be thick enough but if desired add a little more flour to gravy and heat until gravy is as thick as desired.
  • Quick note: I recommend using a non stick fry pan so as one reviewer mentioned you don't have trouble with the flour sticking to the pan.

I was tired of boring, tasteless Salisbury steak recipes, so I created this one myself. Use good ground sirloin, and it'll tastes wonderful and you won't have any grease to drain from the patties once they've browned. Serve over mashed potatoes, egg noodles, or rice. Simply delightful!

1 pound ground sirloin
½ cup panko bread crumbs
1 egg, beaten
2 tablespoons milk
½ (1 ounce) package dry onion soup mix
1 teaspoon Worcestershire sauce
¼ teaspoon ground black pepper
3 tablespoons butter
2 cups fresh mushrooms, sliced
1 sweet onion, sliced
3 tablespoons all-purpose flour
½ (1 ounce) package dry onion soup mix
1 ½ cups beef stock
1 cup water
salt and ground black pepper to taste

Steps:

  • Mix ground sirloin, panko bread crumbs, egg, milk, and 1/2 packet onion soup mix, Worcestershire sauce, and black pepper together in a large bowl; shape into 5 patties.
  • Heat a skillet over medium heat. Cook patties in hot skillet until browned, 3 to 5 minutes per side.
  • Melt butter in a separate skillet over medium-high heat. Saute mushrooms and onion in melted butter until tender, 5 to 7 minutes. Stir flour and remaining dry onion soup mix into the mushroom mixture; cook and stir until flour is integrated fully, about 1 minute. Stream beef stock and water over the mushroom mixture while stirring continually; bring to a simmer, reduce heat to medium, and cook, stirring frequently, until the liquid thickens, about 5 minutes. Season with salt and pepper.
  • Lie the browned steaks into the gravy; simmer until steaks are firm and gray in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
