BANANA BREAD PUDDING

Banana Bread Pudding image

When I visited my grandmother in summer, I always looked forward to the comforting banana bread pudding she'd make. With its crusty golden top, custard-like inside and smooth vanilla sauce, this pudding is a real homespun dessert. Now I make it for my grandchildren. -Mary Detweiler, Middlefield, Ohio

From Galatoire's restaurant in New Orleans. If you do not have an oversized muffin pan, one-cup ramekins or baking dishes that have been well buttered may be used to cook the puddings.

Time 1h30m

Yield 12 serving(s)

Number Of Ingredients 10

11 large eggs
1 1/3 cups granulated sugar
1 quart while milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
French bread (baguette)
1 lb salted butter
1 lb light brown sugar
4 bananas
1/2 cup praline liqueur (or light or gold rum)

Steps:

  • Preheat the oven to 350˚ F.
  • In a large mixing bowl, combine the eggs, granulated sugar, milk, vanilla, and cinnamon and whisk until well blended. In a nonstick oversized muffin pan, place 2 slices of the bread into the bottom of each muffin cup. Pour the egg and milk mixture into each muffin cup. Allow the bread to absorb the mixture and repeat the process until the bread is saturated and the muffin cup is full (it might take 3 or 4 fillings to totally saturate the bread and fill the cup). Bake the pudding mixture for 35 minutes, or until the pudding has turned golden and set in the pan.
  • While the pudding is in the oven, melt the butter in a 2-quart saucepan over medium heat. Add the light brown sugar and whisk over the heat until smooth. Slice the bananas, stir them into the sauce, and add the praline liqueur. Reduce the heat to low to keep the sauce warm.
  • When the pudding is baked, remove from the oven and allow to sit for 15 minutes to cool. Invert the muffin pan to remove the puddings and expose the custard. Place each on the center of a plate and ladle the sauce onto the pudding. Serve immediately.

Yield Makes 6 servings

Number Of Ingredients 15

For bread puddings
6 large eggs
1/2 cup sugar
1/2 teaspoon salt
2 cups whole milk
1 tablespoon vanilla
2 teaspoons cinnamon
12 (3/4-inch-thick) slices from a baguette
For banana sauce
2 firm-ripe medium bananas
1 stick (1/2 cup) unsalted butter, cut into pieces
1/4 cup packed light brown sugar
1/4 cup light or amber rum
Special Equipment
a nonstick muffin pan with 6 large (1-cup) muffin cups

Steps:

  • Make bread puddings:
  • Whisk together eggs, sugar, and salt in a large bowl, then whisk in milk, vanilla, and cinnamon.
  • Place 2 slices of bread in each buttered muffin cup, then divide custard among cups. Let stand, gently pressing down on bread occasionally, until soft and some of custard is absorbed, about 30 minutes.
  • Preheat oven to 350°F.
  • Bake bread puddings in middle of oven until golden on top and a tester inserted in center comes out clean, 30 to 35 minutes. Transfer to a rack to cool slightly, about 5 minutes (puddings will sink slightly in center). Remove from pan, then cool on rack until warm, about 10 minutes more.

  • Cut bananas crosswise into 1/3-inch-thick slices. Melt butter in a 1-quart heavy saucepan over moderate heat, then add brown sugar and cook, whisking, until smooth and combined well, about 1 minute. Add rum and bananas, then simmer, stirring occasionally, 2 minutes.
  • Serve puddings warm with sauce spooned over them.
