I got this recipe from a good friend. These are tender rolls with a lovely peanut butter filling. They make a nice change from the more common cinnamon rolls. I will post for a "regular" size (machines handling 2 cups of flour recipes) & "large" (3 cups of flour). (Cooking time includes rising & will vary depending on your machine's cycle.)

Steps:

  • Put dough ingredients into bread machine in recommended order for your machine.
  • Program for Dough cycle.
  • Turn out dough onto a floured surface.
  • Roll into a 10 by 12 inch rectangle for large (10 by 10 for regular).
  • Spread butter over dough, followed by peanut butter.
  • Sprinkle with sugar and then chopped peanuts.
  • Roll dough up lengthwise and seal seam by pinching dough together.
  • Slice into 1 inch pieces, 12 for large& 8 for regular.
  • Place in a greased pan one inch apart.
  • Let rise till doubled, about one hour.
  • Bake at 375 degrees for 15 to 20 minutes.

I can make this in my toastmaster bread machine. I am assuming all bread machines are capable of making it. The great thing about this recipe is that you also get buttermilk which makes awesome dinner rolls and breads.

1 c heavy cream

Steps:

  • 1. 1. Make sure your breadmaker and pan are at room temperature. Pour in 1 cup (236 ml) cold heavy whipping cream or heavy cream (contains at least 36% butterfat). Place lid onto bread pan aligning the front mark on the lid with the front of the bread pan. Insert bread pan into breadmaker and close lid.
  • 2. Select butter program (#10). Press start. The machine will churn for 30 minutes. About halfway through the cycle, the mixture may resemble whipped cream. It will then begin to separate. Chunks of butter will be visible and the cream will continue to separate into buttermilk and sweet butter. The breadmaker will beep eight times when the cycle is complete.
  • 3. Pour off buttermilk and save for other uses (see Using Buttermilk). To rinse the butter, remove the lid and add 1 cup of cold water to the bread pan. Replace lid, securing tightly on top of pan. Drain water into sink. Repeat rinse procedure again. (This will rinse off any remaining buttermilk and assist in hardening the butter.) Remove butter from pan with a rubber spatula and spread it into a small bowl or butter mold (available at gourmet and kitchen specialty shops). Yield: approximately 1?2 c u p b u t t e r. Cover tightly and store in refrigerator or freezer ** TIPS FOR BETTER BUTTER** Heavy whipping cream or heavy cream will produce the largest amount of butter. Light whipping cream and whipping cream (30-36% butterfat) will churn into a smaller amount of butter and you may have to repeat part of the 30 minute Butter Program. Stop the program when butter chunks are formed. Half and Half or other lower-fat dairy products without the words "whipping" or "cream" in the name will not churn into butter. The average refrigerated life for salted or unsalted "sweet" butter is several weeks, keep butter tightly wrapped to preserve flavor. To make salted butter, simply add 1?2 teaspoon salt to the 1?2 cup of butter after it is removed from p a n . Butter may be preserved for up to nine months if wrapped in plastic wrap, sealed in aluminum foil or a resealable freezer bag and stored in the freezer at 0° F

This is a wonderful bread machine recipe. I sometimes double it and make it in the stand mixer too. Perfect for pasta dishes.

2 teaspoons yeast (1/2 package)
2 cups bread flour
2/3 teaspoon sugar
3/4 teaspoon salt
5 garlic cloves, minced
1/4 cup butter
2/3 cup water

Steps:

  • Add all except the yeast and the water to the machine or mixer.
  • Bloom the yeast in the water then add to the mix. Push start or knead in the mixer for about 10 minutes.
  • If using a stand mixer, let rest for an hour( in a covered bowl), then mix again for 5 minutes. Rest an additional hour.
  • Bake at 400 degrees till golden brown ( about 25 minutes for my oven).

BETTER BUTTER BREAD/YUMMY YEAST ROLL-BREAD MACHINE



Better Butter Bread/Yummy Yeast Roll-Bread Machine image

Try slicing this bread thick and slathering both sides with butter and garlic powder (and a sprinkle of salt if desired), and toast in 425 degree oven for 5-7 minutes for a delicious Texas Toast Garlic Bread. When baked as Yeast Rolls it has been judged as good or better than Golden Corral Yeast Rolls.

1/4 c water, warm
1 1/2 tsp active dry yeast (or 1 packet)
1/3 c sugar
1 c milk, warm
1 stick butter, room temperature; margarine not recommended - too oily, if using margarine cut back to 1/3 cup, room temperature
1 egg for sweet, 2 eggs for savory
4 1/2 c all purpose flour
1 1/2 tsp salt

Steps:

  • 1. (optional - for fluffier bread) stir yeast into water until it dissolves, stir in 1 tsp sugar, let stand until yeast activates and makes a layer of foam on top of water
  • 2. add ingredients, in order listed, to bread machine
  • 3. If baking in Bread Machine, set to 2 1/2 lb Basic Bread setting & set crust darkness to your preference. (I've found light/med darkness work best in my machine) If baking in a conventional oven or making yeast rolls, set Bread Machine to Bread Dough setting.
  • 4. near the end of the kneading cycle, check the doughball for proper consistency. The dough should form a solid ball slightly moist to the touch and stick slightly to the sides of bread machine pan but release cleanly when pulled away from side of pan.
  • 5. If dough ball is too tacky and sticks to sides of pan without releasing cleanly, add 1 tsp flour. If dough is pasty and not forming a solid ball, add 1 tbsp flour. If dough ball is dry to touch add 1 tsp water. If dough ball is dry to touch and bread machine motor is straining to knead it, add 1 tbsp water.
  • 6. If baking in bread machine, let machine finish and voila! you have a loaf of fluffy, buttery yeast bread. Enjoy!
  • 7. If baking in a conventional oven or making Yeast Rolls, remove dough ball from bread machine after dough cycle completes.
  • 8. For bread, roll dough ball slightly to elongate it and place in buttered bread pan. For rolls, pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter (20-24 rolls). Place in neat rows, not quite touching, in a well-buttered 13x9x2 inch pan.
  • 9. Cover bread or rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes.
  • 10. Brush tops of bread or rolls with melted butter or margarine, then bake in a 325 degree oven until nicely browned. (50-60 min bread; 15-20 min rolls)
