This salad is very easy to make and always requested by my family. People think they are eating something special because it is made with hearts of palm. Best if chilled overnight.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.

1 cup good mayonnaise
1 cup chopped scallions, white and green parts (6 to 7 scallions)
1 cup chopped fresh basil leaves
1/4 cup freshly squeezed lemon juice (2 lemons)
2 teaspoons chopped garlic (2 cloves)
2 teaspoons anchovy paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup sour cream
3 heads Bibb lettuce
2 to 3 tomatoes

Steps:

  • Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.)
  • Cut each head of lettuce into quarters, remove some of the cores, and arrange on 6 salad plates. Cut the tomatoes into wedges and add to the plates. Pour on the dressing and serve.

6 medium tomatoes, seeded and sliced
1 cup hearts of palm, sliced (or more)
1/2 cup black olives
1/2 cup feta, crumbled
1 cup fresh basil leaf (packed)
1 1/2 teaspoons extra virgin olive oil
2 teaspoons lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • In salad bowl, layer tomatoes, hearts of palm, olives and feta.
  • Using a mortar and pestle, mash the basil leaves and salt together. Add the pepper, olive oil and lime juice, mix well.

1 tablespoon butter
1 tablespoon olive oil
1/2 small onion, chopped
5 ounces arborio rice
1/4 cup dry white wine
3 cups vegetable stock
2 -3 hearts of palm, sliced
1 tablespoon parmesan cheese, freshly grated
1 tablespoon flat leaf parsley, chopped
1 tablespoon butter, cold
1/2 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Bring stock to a boil in a medium saucepan.
  • In a large pan, heat olive oil and butter over high heat. Add the onion and cook until it's transparent.
  • Pour in the rice and stir for 1 minute; add the wine and stir until it's absorbed.
  • Add the stock a 1/4 cup measure at a time, and stir constantly until it's absorbed. Repeat this step until the rice is al dente, or still a little bit hard.
  • One minute before it's ready, add the hearts of palm and mix well.
  • Remove from heat, add butter, parsley and cheese and mix well. Add salt and pepper to taste, if desired. Risotto should be a little creamy, not dry.
  • Serve immediately.
  • *note: the hearts of palm need to be soft, because they don't cook long at all. If using canned and they are salty, rinse them. If they aren't soft or fresh, zap them in the microwave for 45 seconds on 500.

100g green bean , trimmed and cut into 2.5cm lengths
1 lemon , halved
1 small red onion , thinly sliced into half moons
2 avocados , stoned, peeled and chopped
150g pack cherry tomato , halved
2 x 410g cans palm heart , sliced into 1cm slices, see tip, below
5 black olives , halved
1 tbsp white wine vinegar
juice 2 limes
3 tbsp extra virgin olive oil
1 tbsp clear honey
1 tbsp chopped coriander

Steps:

  • Blanch the green beans for 1-2 mins in boiling salted water, drain and rinse in cold water. Dry on a tea towel and put in a large salad bowl.
  • Squeeze some lemon over the onion and avocados and let sit for 1 min. Add the tomatoes, hearts of palm, olives, onion, and avocado to the beans.
  • Put the dressing ingredients in a small jar with a fitted lid. Add some seasoning and shake well. Just before serving, pour the dressing over and mix.
