Time 4h30m

Number Of Ingredients 9

2 lb russet potatoes
1/4 c minced onion
4 Tbsp unsalted butter
1/4 c all purpose flour
2 c milk
1 tsp garlic powder
salt and pepper, to taste
1 c shredded sharp cheddar
6 slice smoked provolone cheese

Steps:

  • 1. Scrub potatoes and peel, if desired (I left peels on). Slice 1/8-inch thick.
  • 2. Coat a 3-4 quart slow cooker liner with nonstick cooking spray.
  • 3. In a medium sauce pan, melt butter over medium heat. Whisk in flour until combined. Whisk in milk, garlic powder, salt and pepper. Stir until it starts to thicken. Remove from heat and stir in cheeses, until melted.
  • 4. Place half the potatoes in bottom of liner, sprinkle half the onions over. Pour half the cheese sauce over. Repeat with remaining potatoes, onion and sauce.
  • 5. Cover and cook on high 3-4 hours or on low 5-6 hours, or until potatoes are tender. Serve.
