1 jar (32 ounces) sauerkraut, rinsed and well drained
2 medium red potatoes, peeled, halved and cut into thin slices
1 medium tart apple, peeled and cut into thick slices
1 small onion, chopped
1/2 cup apple juice
1/4 cup water
2 tablespoons brown sugar
1 teaspoon chicken bouillon granules
1 teaspoon caraway seeds
1 garlic clove, minced
1 bay leaf
1 pound fully cooked bratwurst links
6 bacon strips, cooked and crumbled

Steps:

  • In a 5-qt. slow cooker, combine the first 11 ingredients. Top with bratwurst. Cover and cook on high for 4-5 hours or until potatoes are tender. Discard bay leaf. Sprinkle with bacon.

Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

2 tablespoons oil
2 pounds fresh bratwurst links
2 onions, chopped
2 garlic cloves, minced
3 cups chicken stock
1 tablespoon paprika
1 tablespoon caraway seed
4 cups sauerkraut, drained
2 tablespoons chopped fresh dill
1 baguette

Steps:

  • In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized. Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. Remove from heat and stir in fresh dill. Serve on baguette.

3 pounds uncooked bratwurst links
3 pounds small red potatoes, cut into wedges
1 pound baby carrots
1 large red onion, sliced and separated into rings
2 jars (4-1/2 ounces each) whole mushrooms, drained
1/4 cup butter, cubed
1 envelope onion soup mix
2 tablespoons soy sauce
1/2 teaspoon pepper

Steps:

  • For each of 2 foil packets, arrange a double thickness of heavy-duty foil (about 17x15 in.) on a flat surface. , Cut brats into thirds. Divide the brats, potatoes, carrots, onion and mushrooms evenly between the 2 double-layer foil rectangles. Dot with butter. Sprinkle with soup mix, soy sauce and pepper. Bring edges of foil together; crimp to seal, forming 2 large packets. 3 tablespoons butter
3 onions, sliced
1 garlic clove
1 (11 ounce) can sauerkraut, don't drain
3 tablespoons brown sugar
1/2 teaspoon celery seed
1 bay leaf
6 bratwursts
6 hot dog buns

Steps:

  • Saute onions in butter.
  • When the onions are caramelized add garlic, saute for 1 minute.
  • Add undrained sauerkraut, sugar, celery seed and bay leaf.
  • Cover and simmer 1/2 hour.

3 medium potatoes, peeled and cubed

2 cups chicken broth

3 tablespoons Dijon mustard
2 teaspoons caraway seeds

  • In a large skillet, sauté onions in margarine until tender.

1 pound sauerkraut (1 can), drained
1 onion, sliced thin
1 tablespoon butter
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon brown sugar
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper to taste
8 bratwurst sausages
12 small red-skinned potatoes

Steps:

  • Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
  • Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
  • Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
  • Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
  • While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
  • To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

4 bacon strips, diced
4 fresh bratwurst links, cut into 2-inch pieces
1 medium tart apple, chopped
1 medium onion, chopped
1/2 cup cider vinegar

1 tablespoon spicy brown mustard
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups frozen cubed hash brown potatoes, thawed
1 can (14 ounces) Bavarian-style sauerkraut, drained

Steps:

  • In a large skillet over medium heat, cook bacon until crisp. Remove with a slotted spoon to paper towels. In the drippings, cook and stir bratwurst for 10-12 minutes or until a thermometer reads 160°. Remove with a slotted spoon. Drain, reserving 2 tablespoons of drippings. 3/4 cup mayonnaise
3 tablespoons chili sauce
1 can (14 ounces) sauerkraut, rinsed and well drained
12 ounces shredded deli corned beef
2 cups shredded Swiss cheese
30 sliced rye bread
1/2 cup butter, softened
Thousand Island salad dressing, optional

Steps:

  • In a large bowl, combine the mayonnaise, chili sauce, sauerkraut, corned beef and Swiss cheese. Spread over 15 slices of bread, about 1/3 cup on each; top with remaining bread. Lightly butter the outside of sandwiches. Toast on a hot griddle for 4-5 minutes on each side or until golden brown. Serve with Thousand Island dressing if desired.
