1 fluid ounce creme de cacao
1 fluid ounce honey- and herb-flavored whiskey liqueur (such as Drambuie®)
½ gallon vanilla ice cream, softened, divided

Steps:

  • Mix brandy, triple sec, creme de cacao, and whiskey liqueur in a glass measuring cup.
  • Put about half the vanilla ice cream and half the brandy mixture in a blender; blend until smooth. Add remaining ice cream and brandy mixture; blend again until smooth. Store in freezer in the ice cream container.

1/4 cup sugar
2 tablespoons honey
1 tablespoon water
3/4 cup slivered almonds, toasted
3 cups vanilla ice cream, slightly softened
4 tablespoons brandy
1 tablespoon grated orange peel
1 cup chopped butter cookies
3 cups coffee ice cream, slightly softened
1 tablespoon freshly ground coffee beans
Honey-Brandy Oranges

Steps:

  • Butter large piece of foil. Stir sugar, honey, and 1 tablespoon water in heavy small saucepan over low heat until sugar dissolves. Increase heat to high; boil without stirring until syrup turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 4 minutes. Remove from heat. Immediately stir in almonds. Pour mixture onto prepared foil. Cool completely. Chop praline into 1/2-inch pieces.
  • Line 9x5x23/4-inch metal loaf pan with plastic. Stir vanilla ice cream, 2 tablespoons brandy, and orange peel in bowl. Fold in cookies. Spoon half of ice cream mixture into prepared pan. Cover and freeze pan and remaining vanilla ice cream mixture separately until almost firm.
  • Stir coffee ice cream, 2 tablespoons brandy, and ground coffee in another bowl. Fold in chopped praline. Spoon half of coffee ice cream mixture atop vanilla ice cream in loaf pan. Top with remaining vanilla ice cream mixture, then coffee ice cream mixture. Cover with plastic and freeze until firm, about 4 hours. (Can be made 2 days ahead. Keep frozen.)
  • Remove torte from loaf pan. Cut into 1-inch-thick slices and serve with oranges.

140g butter
100ml brandy
300ml milk
2 large egg yolks
175g light soft brown sugar
150ml double cream

Steps:

  • Heat the butter in a small pan until just starting to take on a nutty brown colour - remove from the heat straight away as it will continue to colour. Stir in the brandy, then leave to cool.
  • Heat the milk in a saucepan but don't let it boil. Whisk the egg yolks and sugar in a bowl until pale. Pour over the hot milk, whisking continuously, then return to the saucepan set over a low heat. Cook for 3-4 mins, stirring the whole time with a wooden spoon, until the custard thickens enough to coat the back of your spoon. Leave to cool.
  • Whisk the cream until it forms soft, billowy peaks. Fold in the brandy butter and the custard mixture. Churn in an ice-cream machine until set, then keep in the freezer for up to 2 months.

1 quart vanilla ice cream, softened
1/4 cup good-quality brandy
4 firm ripe pears (Bosc, Bartlett, D'anjou)
1/4 cup lemon juice
1/4 cup butter, melted
1/4 cup honey
1 teaspoon pure vanilla extract
1 tablespoon orange zest, grated
1 tablespoon lemon zest, grated
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
orange slice, and
lemon slice, for garnish

Steps:

  • For the brandy ice cream:.
  • Stir together the ice cream and the brandy until well blended. Freeze until serving time.
  • Preheat oven to 350 degrees.
  • For the pears:.
  • Halve, peel and core pears. Immediately sprinkle with lemon juice to prevent browning. In a large, rimmed baking pan, mix the remaining lemon juice with the butter, honey and vanilla. Stir in the orange and lemon zest, and the spices. With a small, sharp knife, score the rounded part of each pear half diagonally in one direction, then the other, to form a diamond pattern. Place pears cut side down in baking pan. Spoon honey mixture over pears.
  • Bake pears 40-45 minutes, basting them with pan juices every 10 minutes or so, until the are very soft when pierced. Place one pear half on each plate and place scoops of ice cream around them. Garnish with the lemon and orange slices.

2 cups sliced ripe strawberries
1/2 cup sugar
1 tablespoon lemon juice
Pinch salt
1 cup cream
1 cup whole strawberries, finely diced
1/4 cup butter
2 tablespoons sugar
2 tablespoons golden syrup
2 teaspoons brandy
1/4 cup flour

Steps:

  • For the ice cream: Puree the sliced berries, sugar, lemon juice and salt. Strain to remove seeds. Heat the heavy cream just to the boiling point and pour over the puree. Stir to combine, and chill overnight. Freeze the next day in an ice-cream machine, folding in the finely diced berries just at the end. Transfer to a container and freeze until firm.
  • For the brandy snaps: Preheat the oven to 350 degrees F. Lightly butter a baking sheet.
  • Melt the butter, sugar and syrup together in a saucepan. When it starts to bubble, remove from the heat and beat in the brandy and flour.
  • Using a teaspoon, place 6 spoonfuls, well apart from one another, on the baking sheet. Bake until flat and golden, 5 to 7 minutes. Let cool on the sheet just until they are firm enough to move, but still pliable (a matter of seconds). Shape over a rolling pin, or simply leave flat. Carry on with baking the second batch.
  • Serve a grand spoonful of ice cream with a crispy brandy snap!

BUTTER PECAN ICE CREAM WITH BRANDY

This recipe is out of a new and fabulous book I just picked up called "Ice Cream Happy Hour" It puts real booze in ice cream while keeping a nice elegant taste. This is a twist on the standard butter pecan ice cream you get at the ice cream parlor, only with brandy added to give it a punch.

1 cup milk
2 cups heavy cream
1/2 vanilla bean
4 egg yolks
1/2 cup brown sugar
2 teaspoons cornstarch
1 (1 tablespoon) packet gelatin
1/2 cup cold water
1/4 cup cold brandy (refrigerated)
2 cups candied pecans

Steps:

  • Scald the milk and cream with the vanilla bean; don't add the sugar yet.
  • While the milk mixture is heating, split the vanilla bean down the center lengthwise and scrape out the seeds. Whisk the seeds into the milk mixture, then add the empty pod to the pan.
  • Steep the milk mixture and vanilla. Once the milk mixture is scalding, remove the pan from the heat and cover it. After about 15 minutes, remove the vanilla bean pod.
  • Reheat the milk mixture back up to scalding. Whisk the egg yolks and temper. While the milk mixture heats to scalding, whisk together the egg yolks with the brown sugar and cornstarch in a medium bowl until they're light in color and slightly fluffy. Gently stream about one-third of the hot milk mixture into the eggs while whisking continuously. This is called tempering. It's important to whisk while streaming the hot milk. If you just pour in the hot milk and then whisk, you may get scrambled eggs.
  • Thicken the custard over low heat. Pour the egg and milk mixture into.
  • the rest of the milk mixture in the saucepan and stir continuously on low.
  • heat with a heatproof spatula or flat-ended wooden spoon. Make sure you scrape the bottom evenly while you continuously stir. The custard is thick enough when you can draw a line on the back of the spoon with your finger and the line retains its shape. It should thicken rather quickly because of the cornstarch.
  • Strain, cover, and chill the custard for at least 8 hours. Strain the custard through a fine-mesh strainer into a heatproof container. Cover with plastic wrap so that it's directly touching the entire surface of the custard and none of it is exposed to air. This prevents a skin from developing. Transfer the container to an ice bath and let it cool for about 30 minutes to stop the cooking process. Transfer the container to the refrigerator. Chill until the custard is completely cold, at least 8 hours.
  • Once the custard is completely cold....Dissolve the gelatin in the cold water. Pour the water into a small. saucepan or microwave-safe container and evenly sprinkle the gelatin on top. Allow to sit until the gelatin appears to have absorbed as much water as it can, about 2 minutes. This is called blooming. Gently warm over low heat and stir until the gelatin is completely dissolved into the liquid, about 3 minutes. If using a microwave, heat on medium power and check every 30 seconds until the gelatin is completely dissolved. The total time will depend on the microwave's voltage.
  • Spike the custard with the cold brandy and gelatin mixture. Pour the gelatin into a medium bowl and whisk in the cold alcohol until combined. Pour the cold custard into a large bowl. Stream the alcohol and gelatin mixture through a fine-mesh strainer into the custard and whisk until thoroughly blended.
  • Churn the ice cream. Pour the cold custard immediately into the ice cream maker and churn for at least 20 minutes, or as directed. Due to the alcohol content, you may wish to churn it longer to get the desired thickness.
  • Add the candied pecans. Scoop about one-third of the ice cream into a freezer-proof container and sprinkle about one-third of the candied pecans on top. Repeat the layers twice more with the remaining ice cream and pecans, then gently fold it all together. Be sure to work quickly-if the ice cream melts too much, it will just get icy once it's in the freezer.

We make this every year for Thanksgiving. It is so easy, yet so elegant and impressive. Plus, it is delicious! Cook time does not include time to freeze the ice cream.

1 quart vanilla ice cream, softened
1/4 cup brandy
4 firm-ripe pears
1/4 cup lemon juice
1/4 cup butter, melted
1/4 cup honey
1/2 vanilla bean (about 3-inches long)
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg

Steps:

  • Stir together ice cream and brandy until well blended. Cover and freeze until serving time.
  • Peel, halve and core pears. Immediately sprinkle with 2 tablespoons lemon juice to prevent browning.
  • In a 9 by 13 inch baking dish, mix together remaining lemon juice, butter, and honey.
  • Slit vanilla bean lengthwise and scrape seeds into the butter mixture. Stir in grated lemon and orange peel, cinnamon, nutmeg and allspice.
  • Score round portion of each pear half diagonally 1/8 inch deep in one direction and then in the opposite direction, creating a diamond pattern.
  • Place pears cut side down in baking dish and spoon sauce over them.
  • Bake in a 350 degree oven, basting often, until very tender when peirced with a fork, about 40 minutes.
  • Arrange pears on serving plates, rounded side up and serve with brandy/vanilla ice cream on the same plate.

1/2 cup creme de cacao
1/2 cup Kahlua or Godiva chocolate liqueur

Steps:

  • Put 4 to 5 scoops of ice cream in a blender with liqueurs and blend until smooth. You will need to do this in several batches. Once blended, combine batches so liqueur is evenly distributed. Pour into glasses and freeze until ready to serve. Just before serving, garnish with whipped cream and a cookie or two.
