1 (12 to 16-inch) sourdough baguette
2 garlic cloves, halved plus 1 tablespoon minced garlic
5 tablespoons extra-virgin olive oil
1/4 cup grated Parmigiano-Reggiano, plus more for garnish
2 cups diced Roma tomatoes
1/3 cup thinly sliced fresh basil leaves, plus more for garnish
2 tablespoons balsamic vinegar
1/2 teaspoon sea salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the baguette in half lengthwise, place on a sheet tray and bake in the oven until lightly brown. Rub with the garlic cloves. Drizzle with 2 ounces of the olive oil and sprinkle with the Parmigiano-Reggiano. Return to oven to melt cheese.
  • In a medium mixing bowl, add the tomatoes, minced garlic, basil, vinegar, remaining olive oil, salt and pepper. Mix thoroughly and let sit for 5 minutes at room temperature.
  • Remove baguette from oven and top with the tomato mixture. Garnish with basil and Parmigiano-Reggiano.

BRANDADE WITH ESCABECHE

2 teaspoons minced fresh rosemary
3 tablespoons red vinegar
Salt and freshly ground black pepper
Salt and freshly ground black pepper
2 small red onions
1 clove garlic
1 tablespoon olive oil
2 teaspoons cumin seeds
1 pound salt cod, cut into 1-inch pieces
1 pound potatoes, cut into 1-inch cubes
4 cups milk
4 cloves garlic
1/4 cup heavy cream
2 tablespoons olive oil
1 tablespoon extra-virgin olive oil
Chopped fresh parsley
Flax seed toast points (or other sourdough or sturdy bread)

Steps:

  • For the escabeche: Slice the onions in thin half-moons and set aside. Brown the garlic in the oil in a skillet over high heat. Then add the cumin seeds to scent the oil. Add the onions and rosemary and saute at a high heat. When the onions are sauteed, but before they turn soft, add the red vinegar and remove from the heat. Season with salt and pepper.
  • For the brandade: Add the salt cod to a pot, cover generously with cold water and bring to a boil. Drain the water, and then add the potatoes, milk and garlic. Bring to a boil and cook until the potatoes are soft. Drain the liquid and discard.
  • Add the salt cod-potato mixture to the bowl of a stand mixer fitted with a whisk attachment. Slowly add the heavy cream and olive oil. Whisk until the ingredients are evenly disbursed, about 3 minutes.
  • Preheat the broiler. Put the brandade into an oven-safe dish and broil until golden brown peaks appear on the top, about 8 minutes. Remove from the oven and place the escabeche on top. Drizzle with the olive oil and chopped parsley and serve with toast points.

SOURDOUGH HOT BROWN

2 tablespoons unsalted butter
3 tablespoons finely diced sweet onion
2 teaspoons unbleached all-purpose flour
2 1/2 cups low-sodium chicken stock
2 1/2 cups whole milk
3/4 cup grated sharp Cheddar
1/3 cup grated Parmesan
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1 teaspoon minced fresh garlic
8 slices thick-cut sourdough bread
Flake sea salt
12 ounces thinly sliced roasted turkey breast
16 slices applewood smoked bacon, crisped
1 large red heirloom tomato, sliced
1/2 cup shredded Parmesan
2 scallions, finely sliced on a bias

Steps:

  • Preheat the oven to 400 degrees F and a cast-iron griddle to medium-high heat.
  • For the Mornay sauce: In a medium skillet over medium-low heat, add the butter and sweat the onions until softened, 3 to 5 minutes. Add the flour and toast for an additional minute without adding color. Bring the skillet to medium-high heat. Add the chicken stock and bring to a boil. Stir to incorporate and simmer for 3 minutes. Add the milk and reduce the heat to medium-low. Simmer until the starch has cooked out and the sauce has thickened, an additional 3 minutes. Add the nutmeg to taste. Reduce the heat to low. Stir in the Cheddar and Parmesan. Remove from the heat and keep warm. Season with salt and pepper.
  • For the sandwich: Melt the butter and mix with the garlic. Brush one side of the slices of the sourdough with the garlic butter. Griddle the toast on both sides until golden brown and toasted. Remove from the heat. Transfer to a baking sheet, garlic-butter-side up, and season with the flake salt.
  • Top the toast slices with about 1 1/2 ounces of turkey and 2 slices of bacon. Shingle the tomato slices over the bacon and turkey. Spoon approximately 1 ounce of Mornay sauce over the top and sprinkle with Parmesan. Place in the oven and toast until the Parmesan bubbles, about 5 minutes (finish under the broiler if desired). Remove and garnish with the scallions. Serve open face, 2 per serving.

CRAB SALAD WITH ORANGE AND OREGANO ON GRILLED SOURDOUGH



Crab Salad with Orange and Oregano on Grilled Sourdough image

1 lemon, juiced
1 tablespoon red wine vinegar, a splash
2 tablespoons fresh oregano, stripped from a few sprigs, chopped
2 to 3 tablespoons chopped flat-leaf parsley, a handful of leaves
1/3 cup extra-virgin olive oil, plus more for grilling bread
Salt and pepper
2 (6-ounce) tubs fresh lump crab meat, available at fish counter in larger markets
1 navel orange
1/2 medium red onion, chopped
4 slices, 1/2-inch thick, country sourdough bread

Steps:

  • Preheat a stovetop grill pan over medium high heat.
  • In a small bowl, combine lemon juice, vinegar, oregano and parsley. Whisk in evoo in a slow stream. Season dressing with salt and pepper.
  • Transfer tubs of crab to a bowl and run fingers through the meat to check for pieces of shells. Cut the ends off 2 navel oranges. Stand oranges upright and remove peels in strips working around each orange with a sharp small knife. Thinly slice the orange, then coarsely chop. Add chopped oranges and red onion to the bowl of crab meat. Drizzle the dressing over the crab mixture and toss to evenly coat. Cover and chill salad until ready to serve.
  • Lightly brush the bread slices with oil and grill, turning once, until lightly toasted.
  • To serve, mound the chilled crab salad over the grilled bread and enjoy with a Frozen Peach Champagne Cocktail.

There are certain things that if I see on a menu, I will almost always order them, and brandade is one of those things. This amazing dish from the south of France can be made many different ways, but it's usually some sort of combination of salt cod, potato, garlic, and olive oil. This should always be baked and eaten piping hot, ideally with some homemade crostini.

1 pound salted cod fish
1 ½ cups whole milk
6 sprigs fresh thyme
2 bay leaves
1 pinch cayenne pepper
1 pound Yukon Gold potatoes, peeled and cut into 2-inch chunks
8 large cloves garlic, halved
1 teaspoon lemon zest
¼ cup extra-virgin olive oil, divided
½ lemon, juiced
1 pinch freshly ground black pepper
1 tablespoon creme fraiche

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking dish and set dish on a baking sheet.
  • Rinse salt cod under cold water, transfer to a sealable container and cover with several inches of cold water. Soak cod in the refrigerator, changing the water every few hours, for 24 to 36 hours. Remove cod from water and cut into evenly-sized pieces.
  • Stir cod, milk, thyme, bay leaves, and cayenne pepper together in a pot over medium-high heat. Cook until fish begins to flake; 7 to 15 minutes. Remove from heat and strain; reserve cooking liquid and transfer fish to a bowl.
  • Place potatoes and garlic in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Mash cod, a few splashes reserved cooking liquid, and lemon zest together in a bowl. Pour in remaining reserved cooking liquid and potatoes; mash until desired consistency is reached. Stir in 1/2 of the olive oil, lemon juice, and black pepper until smooth. Add remaining olive oil and blend until smooth. Season with salt. Pour mixture into prepared baking dish. Spread creme fraiche over the top and score the top with a spoon to create a crisscross surface.
  • Bake in the preheated oven until browned and bubbling, about 20 minutes
