1 1/2 lbs fresh orange roughy (can also use red snapper or haddock fillets) or 1 1/2 lbs frozen orange roughy, thawed (can also use red snapper or haddock fillets)
1 teaspoon garlic powder
1/4 cup butter, melted
1/4 cup lemon juice
1/4 cup soy sauce
paprika

Steps:

  • Lay fillets in a shallow dish; sprinkle garlic powder over.
  • In small bowl, mix together butter, lemon juice and soy sauce; pour over fish and turn.
  • Marinate for 10 minutes. Drain and discard marinade.
  • Arrange fillets on broiler pan. Broil 3-4 inches from heat for 10 minutes or until fish flakes easily with a fork, turning once.
  • Sprinkle with paprika and serve.

2 orange roughy fillets
2 tablespoons olive oil
Tabasco sauce
1/4 teaspoon oregano
1/4 teaspoon cayenne
1/4 teaspoon thyme
1/4 cup dry breadcrumbs

Steps:

  • Stir oil and a bit of Tabasco together set aside.
  • Mix together bread crumbs with herbs set aside.
  • Brush olive oil mixture on filets.
  • Roll in breadcrumbs mixture.

1 tablespoon Dijon mustard
1 tablespoon margarine, melted
1/4 teaspoon fresh coarse ground black pepper
4 orange roughy fillets (each fillet should weight 4 ounces each)

½ lemon
½ cup grated Parmesan cheese
¼ cup butter, softened
¼ cup prepared Dijon mustard mayonnaise blend
1 large clove garlic, pressed
¼ pinch salt

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.

This is not very fancy, but it sure does taste good! It's what I came up with after my kids refused to eat fish sticks and frozen breaded fish filets...I've tried it with fresh bass and perch, but my favorite is made with Orange Roughy (less fishy-tasting and economical, I think...) NOTE: 60 minutes of the prep time is 60 minutes of marinating time.

1 1/2 lbs orange roughy fillets (If using frozen, then thaw first)
1/4 cup butter, melted
1 cup crumbled cheese crackers (I use Cheese Nips and finely crush them in a big baggie)
1 teaspoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red cayenne pepper
1/4 cup lemon juice

Steps:

  • Make sure fillets are in even-sized serving pieces. Cover fillets with water and add lemon juice. Marinate 1 hour. Drain filets and pat dry with paper towls.
  • Mix seasonings and cheese cracker crumbs in a flat bowl.
  • Put melted oleo in another flat bowl.
  • Dip each filet in melted oleo and then into crumb mixture.
  • Line a cookie sheet with foil and spread crumbly fillets on top.
  • Bake in a pre-heated 400 degree oven for 20-25 minutes, depending on the thickness of the fillets.

2 tablespoons (1/4 stick) butter
3 large leeks (white and pale green parts only), halved lengthwise, sliced
2 teaspoons sugar
1/2 teaspoon dried thyme, crumbled
4 6- to 8-ounce orange roughy fillets
1/2 cup whipping cream
1/4 cup dry vermouth
Fresh chives or green onion tops cut into 1-inch lengths

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks and sprinkle with sugar and thyme. Season with salt and pepper. Sauté 5 minutes. Reduce heat and cover and cook until very soft, stirring occasionally, about 10 minutes. Season fish with salt and pepper. Arrange atop leeks. Add cream and vermouth. Cover and cook until fish is opaque, about 8 minutes. Transfer fish to plates and keep warm.
  • Boil sauce until slightly thickened, about 3 minutes. Season to taste with salt and pepper. Top fish with sauce and leeks. Garnish with chives.
