12 ounces sweet Italian sausage, cut into 3/4-inch pieces
1 ½ cups thinly sliced onion
1 ½ cups thinly sliced red bell pepper
1 ½ cups thinly sliced green bell pepper
1 ½ cups thinly sliced yellow bell pepper
2 (15 ounce) cans CONTADINA® Tomato Sauce
½ teaspoon dried oregano
¼ cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain.
  • Meanwhile, cook sausage and onion in large non-stick skillet until sausage is lightly browned. Drain if needed. Add peppers; cook 2 minutes, stirring frequently.
  • Add tomato sauce and oregano. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
  • Stir in pasta and toss with Parmesan cheese.

3/4 lb fresh hot Italian sausage
1 medium sweet pepper, cut into bite-size pieces
1/2 cup vegetable broth (beef or chicken broth works too)
1/4 teaspoon coarse black pepper

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, cut sausage into bite-size pieces.
  • In a large skillet cook sausage and peppers over med-high heat until sausage is brown.
  • Drain off fat.
  • Add broth & pepper to skillet.
  • Bring to a boil.
  • Reduce heat and simmer uncovered for 5 minutes.
  • Remove from heat.
  • Drain pasta and toss with sausage mixture.

I just threw this together one night with ingredients I had on hand. We loved the flavor and it's now a favorite after work meal.

1/2 large onion, chopped
1 red pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional or to taste)
2 garlic cloves, minced
salt and pepper
4 fresh basil leaves, torn
1/2 teaspoon dried oregano or 1 teaspoon fresh oregano
1 lb Italian turkey sausage link (about 6 links)
1 (14 1/2 ounce) can diced tomatoes
1/4 cup red wine vinegar
8 ounces bow tie pasta, cooked

Steps:

  • Saute onion, peppers and pepper flakes in olive oil until onions start to brown.
  • Add garlic, salt, pepper, basil and oregano. Set aside.
  • Prick sausage links with a fork.
  • Saute in skillet with a little olive oil over medium heat until brown.
  • Add wine vinegar and canned tomatoes (with liquid).
  • Add the sautéed vegetable mixture.
  • Cover and simmer for 20 minutes.
  • Meanwhile cook pasta al dente.
  • Add cooked pasta to sausage and pepper mixture.
  • Stir and serve.

1 (12 ounce) package bow tie pasta
2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled
½ teaspoon red pepper flakes
½ cup diced onion
3 cloves garlic, minced
1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

This is a good pasta recipe that can be whipped up quickly on those busy nights when the kids have activities. When I have more time, I use fresh chopped tomatoes. The sausage is easier to slice if you stick it in the freezer for about 20-30 minutes to firm it up a bit. Cook time includes pasta cooking time.

1 lb bow tie pasta
1 1/2 lbs sweet Italian sausage, cut into 1/2-inch slices
3 tablespoons olive oil
2 garlic cloves, minced
1/2 cup chopped onion
1/2 cup chopped green pepper
2 (14 1/2 ounce) cans diced tomatoes or 2 cups chopped plum tomatoes
1 tablespoon oregano
1/2 cup shredded parmesan cheese

Steps:

  • Cook bowtie pasta according to package directions; drain- do NOT rinse.
  • Meanwhile, in a large skillet over med-high heat, brown sausage; drain if necessary.
