BOURBON STREET RIB-EYE STEAK

After eating this style of steak in a restaurant a few times, I worked on making my own marinade. The results are tender and do not have an overbearing bourbon taste. This marinade is very different from the only other one I have seen on this site.

1 cup water
⅔ cup bourbon whiskey
½ cup soy sauce
¼ cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
4 (6 ounce) beef rib-eye steaks

Steps:

  • Whisk together the water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a bowl, and pour into a plastic zipper bag. Add the rib-eye steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the rib-eye steaks from the marinade, and shake off excess. Discard the remaining marinade. Grill the steaks on high, 1 to 2 minutes per side, to sear the meat. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side, if desired.

GRILLED STEAK WITH BOURBON SAUCE

A gourmet meal that will have your friends talking. The herbs and bourbon sauce give this steak a wonderful flavour. I barbequed my steak but the recipe tells you to cook in the oven. If you are using dried herbs the prep time is considerably less. I like to use fresh herbs to bring out the flavour. Serve this with garlic and paramasen mashed potatoes and a green salad. I found this gem in a Food and Drink Magazine the local liquor store gives out.

1/4 cup cold butter, cubed
1/4 cup chopped shallot
1 teaspoon chopped garlic
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
1/2 cup Bourbon (Whisky use a good one)
2 cups beef stock, homemade or store bought
2 teaspoons balsamic vinegar
salt & freshly ground black pepper
2 tablespoons olive oil (if searing in pan)
3 lbs beef t-bone steaks, 2 inches thick
salt & freshly ground black pepper

Steps:

  • Heat 1 tbsp of the butter on medium heat in pot, reserving remaining butter.
  • Stir in shallots, garlic, thyme, tarragon and rosemary.
  • Sauté for 1 to 2 minutes or until shallots soften.
  • Add bourbon and bring to boil Reduce to 2 tbsp approx.
  • 5 minutes Add stock and bring to boil Simmer approx 20 minutes or until reduced to 1/2 cup Swirl in 1 tsp balsamic vinegar, reserving the rest Season with salt and pepper Heat oil in large ovenproof skillet on medium-high heat.
  • Season steak with salt and pepper.
  • Add steaks and cook for about 2 minutes per side.
  • Place in oven and bake for 7 to 10 minutes for medium rare.
  • Test steak with instant read thermometer if your are unsure (125 F) Place steak on carving board and let rest for 5 minutes Reheat bourbon sauce and whisk in remaining butter and reserved balsamic vinegar Season well Slice steak down into 1/2 inch slices against the grain and place on 4 plates.
  • Drizzle with sauce.

3 cups bourbon whiskey
1 cup dark brown sugar

Steps:

  • Gently tenderize steaks with a meat mallet. With a sharp knife, lightly score the meat on one side diagonally. Place steaks in a casserole dish, scored side up, and pour bourbon over them. Rub the brown sugar evenly over each steak. Marinate in refrigerator for 1 to 3 hours.
  • Preheat grill to high heat, and lightly oil grate.
  • Place the steaks on the hot grill, with the sugar side down. Let cook until sugar has caramelized, 3 to 5 minutes, then flip steaks, and finish cooking to desired doneness.

Steps:

  • Heat butter in a 12-inch heavy skillet over high heat until foam subsides. Meanwhile, pat ham steak dry and sprinkle all over with 3/4 teaspoon pepper. Sauté, turning once, until browned in spots and heated through, 4 to 5 minutes total. Transfer ham to a platter.
  • Add bourbon to skillet and carefully ignite with a kitchen match. When flames subside, add cream, mustard, and coffee powder (if using), scraping up any brown bits. Simmer until slightly thickened, 1 to 2 minutes. Pour some of sauce over ham and serve remainder on the side.

2 pounds filet mignon
1 cup Kentucky bourbon
Salt
Freshly ground black pepper
2 tablespoons olive oil
1 tablespoon butter
1 large white onion, sliced
1 large red onion, sliced
1 baguette French bread
1/2 cup sour cream
3 tablespoons prepared horseradish
1 bunch flat leaf parsley

Steps:

  • Preheat the oven to 350 degrees F. Place the filet mignon in a bowl. Pour bourbon over steak and marinate for 1 hour. Remove the filet mignon from the bourbon and season with salt and pepper. Add the olive oil to a hot saute pan. Sear the filet mignon on all sides, about 1 minute per side. Place the meat in the oven and roast for 15 minutes or until medium rare. Remove the meat from the oven and allow to rest for 15 minutes. Slice the filet in half lengthwise. Slice each half into 18 thin slices so you have a total of 36 slices. In another saute pan over medium-low heat, melt the butter. Add the sliced white and red onions. Caramelize the onions until they are deep golden brown, about 25 minutes. Remove from the heat and cool. Slice the baguette into 36 1/4 to 1/2 inch thick slices. In a small bowl, combine the sour cream and the horseradish. Place a piece of filet mignon on each slice of bread. Top with some of the caramelized onions. Place a small amount of the horseradish sour cream on top of the onions. Garnish with parsley.

1/4 teaspoon cayenne
Salt and pepper
2 tablespoons canola oil
1 (14 ounce) NY strip steak
Orange Bourbon Glaze, recipe follows
2 tablespoons diced shallots
1/4 cup butter, divided
1 cup bourbon
2 seedless oranges, peeled and segmented
1/2 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups beef stock

Steps:

  • Preheat grill to high and oven to 350 degrees F.
  • In a medium bowl, combine Cajun seasoning, cayenne, salt, pepper and 2 tablespoons canola oil. Rub mixture on both sides of the steak. In a saute pan, sear steak for 7 minutes on both sides. Place steak in a plastic bag to marinate for 1 hour in refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 12 minutes (6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Using a serving spoon, add Orange Bourbon Glaze to steak.
  • In a medium saucepan over medium-high heat saute the shallots in 2 tablespoons of butter until caramelized. Whisk in the bourbon, oranges, brown sugar, salt and pepper. Bring to a simmer over medium-high heat. Reduce heat to medium-low and add beef stock. Simmer until mixture is a sauce-like consistency. Remove from heat. Whisk in the remaining 2 tablespoons of butter.

Save yourself 30 bucks from Applebee's. There's another similar recipe posted, but does not include the garlic butter or the mushroom and onion side. A message from Todd Wilbur: Menu Description: "This succulent 10 oz. Steak is jazzed up with Cajun spices and served with sauteed onions, mushrooms, garlic mashed potatoes and garlic toast." This secret to the taste of this signature steak entrée at America's largest casual chain is found in the blend of flavors in the spicy Cajun marinade. Plan to make this dish 12 to 24 hours in advance, so the steaks have time to soak up the goodness. This marinating time will also give the meat tenderizer a chance to do its thing, but don't go longer than 24 hours or the protein fibers may become so tender that they turn mushy. I used McCormick brand tenderizer, which uses bromelian, a pineapple extract, to tenderize the meat. Lawry's (Adolph's) meat tenderizer, uses papain from papayas, to tenderize the proteins, but this brand also brings other spices into the mix and will alter the flavor of your finished product. Both of these tenderizers include a lot of salt so we won't need to include salt as part of the marinade formula." One more thing, Bourbon Street is a name of a street in New Orleans, LA.   • Combine all marinade ingredients in a medium bowl.
  • Pound steaks with a kitchen mallet until about 3/4-inch thick.
  • Submerge steaks in marinade, cover and store in the refrigerator. This is effectively done in a sealable plastic bag. Marinade 12 to 24 hours.
  • When your steaks have completed marinating, preheat a barbecue grill to medium/high heat. Blot steaks with paper towels to remove excess marinade. Grill the steaks for 3 to 5 minutes per side or until cooked as desired.
  • For the garlic butter: Melt 3 tablespoons butter and combine it with 1/8 teaspoon garlic powder and a pinch of salt; set aside.

1/4 c soy sauce, reduced sodium
1/4 c bourbon
2 Tbsp dark brown sugar
1 lb sirloin steak, 3/4 inch thick
4 large portobello mushrooms
1/2 large sweet red bell pepper, cut into strips
1/2 large sweet yellow bell pepper, cut into strips
1/2 large sweet onion, sliced (vidalia or texas sweet)
1 Tbsp olive oil
1/2 tsp salt, divided
1/2 tsp black pepper, divided
3/4 c mozzarella cheese, shredded

Steps:

  • 1. Combine the soy sauce, bourbon and brown sugar. Pour 1/3 cup into a resealable plastic bag; add steak. Seal and chill 1 hour.
  • 2. Remove and discard the stems and gills from the mushrooms. Place in a shallow dish; brush both sides with the remaining marinade; cover and let stand for 1 hour.
  • 3. Combine the peppers, onion, oil and 1/4 tsp each salt and pepper. Spread on a grilling grid; place on the grill rack. Grill, covered, over medium heat for 5-8 minutes or until crisp-tender. Cover and keep warm.
  • 4. Sprinkle the steak with the remaining salt and pepper. Grill, covered, over medium heat for 5 minutes on each side, or until 145° for medium-rare, 160° for medium, or 170° for well done. Remember your steak will continue to cook a bit after removing from the heat.
  • 5. Grill the mushrooms, covered, over medium heat for 6-8 minutes, turning once. Spoon the pepper mixture equally into the mushrooms.
  • 6. Cut the steak into slices, and arrange over the the bell pepper mixture. Top with the cheese. Grill, covered for 3 minutes or until the cheese is melted.

BOURBON PEPPERCORN STEAK SAUCE

This recipe is based on parts, 1/2 part worsty, 1 part this and that and 2 parts whisky or bourbon, or rum, or cognac,... so it is very easy to increase the amount of servings and vary the flavor profile. If it sits overnight, the flavors really have time to blend and it's really good even if it's made while the steak cooks.

Here's another found recipe that I haven't tried but sounds great and I want to save. I love a good skirt steak and add the bourbon and spices and how can you go wrong. I'll be making this soon to see if it's as good as it sounds. Would be good with baked beans. Finally made this and LOVED it. I made two small changes - added a teaspoon of liquid smoke to increase that smokey flavor and a teaspoon of fresh, grated garlic as we love it. It was so easy and sooooo good. Try this and I don't think you'll be disappointed.

3 tablespoons coarsely ground black peppercorns
Four 10-ounce New York-cut sirloin steaks, also called shell steaks
Fine sea salt
2 tablespoons olive oil
1/4 cup finely chopped shallots
1/3 cup Kentucky bourbon
1 cup low-sodium store-bought beef broth
1/2 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • 1. Put the black peppercorns in a wide, flat dish. Press the steaks into the peppers to coat them on all sides, then season with salt. Set aside.
  • 2. Heat the oil in a large, heavy-bottomed sauté pan over high heat for 1 minute. Add the steaks, two at a time if necessary to avoid overcrowding, and cook for 3 minutes per side for medium-rare. Transfer each steak to a dinner plate and set aside.
  • 3. Add the shallots to the pan and cook for 2 minutes over medium heat. Remove the pan from the heat and add the bourbon, then carefully return the pan to the stove over low heat and cook until the bourbon is almost entirely evaporated, about 2 minutes. Pour in the broth, raise the heat to high, bring it to a boil, and continue to boil until reduced and thickened, 3 to 5 minutes. Swirl in the cream and the butter and warm gently.
  • 4. Pour some sauce over each steak and serve.

BOURBON PEPPER STEAK

2 tablespoons cracked black peppercorns
2 tablespoons crushed green peppercorns
2 tablespoons pink peppercorns
4 (8ounce) New York cut strip steaks, trimmed of all visible fat
Coarse salt to taste
1 tablespoon olive oil
2 tablespoons finely chopped shallots
1/3 cup good Kentucky bourbon
1 cup veal stock
1/4 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • Mix the various peppercorns in a wide flat dish. Coat the steaks with the cracked pepper and season with salt. Place the olive oil in a cast iron skillet and heat one minute before adding the steaks. If necessary cook the steaks in two batches. Cook over medium heat 3 minutes on each side for medium rare. Place the steaks on warm serving plates. Drain the excess fat from the pan and carefully add the bourbon, away from the heat. Reduce the heat to low and reduce the bourbon until the pan is nearly dry. Add the veal stock, bring to a boil, cook 3 to 5 minutes, and finish by swirling the heavy cream and butter into the sauce. Remove from the heat and divide the sauce among the steaks.;

1 -3 teaspoon Worcestershire sauce
1 -3 tablespoon teriyaki sauce
1 tablespoon olive oil
1 large ziploc bag
4 steaks, any cut

Steps:

  • ~mince onion and garlic and add to bowl.
  • ~cut a strip of lemon or lime zest, mince and add to bowl.
  • ~add salt, pepper, rosemary, garlic powder and olive oil to bowl, mix all together.
  • ~place steaks in Ziploc bag, flat.
  • ~rub 1/2 contents of bowl over steaks, flip bag over, and rub other 1/2 over the other side of steaks.
  • ~slice lemon or lime center-wise, and place a few rings on top of steaks, only on one side (unless you like slightly more sour steaks).
  • ~pour soya sauce over steaks, flip bag and pour some on other side.
  • ~add Teriyaki and Worcestershire sauce, and bourbon or whiskey last.
  • ~close bag almost all the way, and then squeeze out trapped air - careful to not let marinade out.
  • ~place in fridge, flat, for overnight or even 1-3 days for maximum tenderness, and ever so often squish bag and flip it over.

1/4 cup packed dark brown sugar
1/4 cup minced green onion
1/4 cup Bourbon
1/4 cup low sodium soy sauce
1/4 cup Dijon mustard
1/2 teaspoon fresh ground black pepper
1/4 teaspoon Worcestershire sauce
1 (2 lb) flank steaks, trimmed
cooking spray
1/2 teaspoon cornstarch
3 lbs small red potatoes
6 garlic cloves, peeled
1/2 cup reduced-fat sour cream
1/3 cup 2% low-fat milk
2 1/2 tablespoons butter
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup chopped fresh chives
8 fresh chives, cut into 1-inch pieces

Steps:

  • To prepare steak, combine first 7 ingredients in a large zip-top plastic bag; add steak. Seal and marinate in refrigerator 8 hours or overnight, turning bag occasionally. Remove steak from bag, reserving marinade.
  • Prepare grill.
  • Place steak on grill rack coated with cooking spray; grill 5 minutes on each side or until desired degree of doneness. Let stand 10 minutes. Cut diagonally across grain into thin slices.
  • Combine reserved marinade and cornstarch in a saucepan. Bring to a boil; cook 1 minute, stirring constantly.
  • To prepare potatoes, place potatoes and garlic in a large Dutch oven; cover with water. Bring to a boil. Reduce heat; simmer 30 minutes or until tender. Drain.
  • Return potatoes and garlic to pan, and place over medium heat. Add sour cream, milk, butter, salt, and 1/4 teaspoon pepper. Mash potato mixture to desired consistency with a potato masher. Stir in chopped chives. Mound 3/4 cup potatoes on each of 8 plates; arrange 3 ounces steak around each serving of potatoes. Drizzle 1 tablespoon sauce on each plate; sprinkle with chive pieces, if desired.

2 boneless beef strip steaks (1 lb.), 1/2 inch thick
1/2 tsp. ground black pepper
2 Tbsp. butter
1 onion, sliced
1 cup sliced fresh mushrooms

Steps:

  • Heat grill to medium heat.
  • Reserve 1/4 cup barbecue sauce for later use. Sprinkle both sides of steaks with pepper.
  • Grill steaks 14 min. or until done (160ºF), brushing with remaining barbecue sauce and turning after 7 min.
  • Meanwhile, melt butter in large skillet on medium heat. Add vegetables; cook 3 to 5 min. or until onions are crisp-tender, stirring frequently. Stir in reserved barbecue sauce; simmer on medium-low heat 5 min. or until vegetables are tender, stirring occasionally.
  • Cut steaks in half. Serve topped with vegetable mixture.

2 lbs filet mignon
1 cup kentucky Bourbon
salt
fresh ground black pepper
2 tablespoons olive oil
1 tablespoon butter
1 large white onion, sliced
1 large red onion, sliced
1 French baguette
1/2 cup sour cream
3 tablespoons prepared horseradish
1 bunch flat leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the filet mignon in a bowl.
  • Pour bourbon over steak and marinate for 1 hour.
  • Remove the filet mignon from the bourbon and season with salt and pepper.
  • Add the olive oil to a hot saute pan. Sear the filet mignon on all sides, about 1 minute per side.
  • Place the meat in the oven and roast for 15 minutes or until medium rare.
  • Remove the meat from the oven and allow to rest for 15 minutes. Slice the filet in half lengthwise.
  • Slice each half into 18 thin slices so you have a total of 36 slices.
  • In another saute pan over medium-low heat, melt the butter. Add the sliced white and red onions.
  • Caramelize the onions until they are deep golden brown, about 25 minutes. Remove from the heat and cool.
  • Slice the baguette into 36 1/4 to 1/2 inch thick slices. In a small bowl, combine the sour cream and the horseradish.
  • Place a piece of filet mignon on each slice of bread. Top with some of the caramelized onions.
  • Place a small amount of the horseradish sour cream on top of the onions.
  • Garnish with parsley.
