A favorite named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient; although this dish, sold as Cajun-style cuisine in malls all over America, is reported to be nothing of the kind (not genuine Creole or Cajun fare)! Note: If you double the recipe, make sure that the chicken is still in a single layer. Laissez les bons temps rouler!

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
½ cup packed brown sugar
⅜ cup bourbon
½ teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

Chicken Wings with Red Hot Honey Glaze and Blue Cheese-Celery Dipping Sauce image

1 cup hot sauce
1/2 cup honey
6 tablespoons unsalted butter
1 tablespoon red wine vinegar
Salt
Freshly ground black pepper
24 chicken wings, tips removed
1/2 cup mayonnaise
1/2 cup Greek yogurt
1 teaspoon Worcestershire sauce
1/4 cup finely diced celery
1/2 cup crumbled blue cheese (recommended: Cabrales)
2 tablespoons finely chopped fresh chives
Salt
Freshly ground black pepper

Steps:

  • For the wings:
  • Heat grill to medium-high.
  • Combine the hot sauce, honey and butter in a small saucepan and cook over medium heat until the butter is melted and the mixture comes together, about 5 minutes. Stir in the vinegar and season with salt and pepper. Pour half of the sauce in a bowl and keep the remaining sauce in the pan, warm over low heat.
  • Season the wings on both sides with the salt and pepper. Brush the wings with the reserved sauce in the bowl and place on the grill. Grill on each side for 5 minutes or until golden brown and cooked through. Remove wings from the grill and toss with the warm hot sauce. Transfer to a platter and serve with the blue cheese sauce on the side for dipping.
  • For the blue cheese-celery dipping sauce:
  • Whisk together all ingredients in a medium bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.

1 1/3 cups water
2/3 cup sugar
2 tablespoons cornstarch
4 teaspoons Worcestershire sauce
3 teaspoons soy sauce
2 teaspoons ketchup
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon ground sage
1/4 teaspoon ground black pepper
3 tablespoons vinegar
2 teaspoons lemon juice

Steps:

  • Whisk together water sugar and cornstarch in a saucepan until mixed well.
  • Add Worcestershire, soy sauce, ketchup; mix well.
  • Add salt, garlic powder, onion powder, cayenne pepper, black pepper, cumin and sage.
  • Bring mixture to a boil over medium heat.
  • Reduce heat and simmer for two minutes or until thick (Make sure its rather thick -will thin down when adding final ingredients).
  • Remove from heat and let cool.
  • Stir in vinegar and lemon juice.
  • Let mixture cool in fridge for about an hour or longer to let the spices blend (a little less is ok if pressed for time).

STICKY BOURBON BBQ WINGS WITH BLUE CHEESE DIP

The cool blue cheese & soured cream dip takes the edge off the heat in the sauce. Dip in the chicken wings or the celery and radishes - or do both!

1kg whole chicken wings
2 tbsp olive oil
4 celery sticks , each cut into 4 small sticks (keep some with their leaves)
bunch French breakfast radishes (with their leaves if you can get them)
150ml tomato ketchup
100ml cider vinegar
100ml bourbon
4 tbsp dark brown sugar
2 tbsp hot chilli sauce
1 tbsp Worcestershire sauce
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground paprika
1 tbsp butter
100g gorgonzola
150ml soured cream
50g mayonnaise
good squeeze lemon juice

Steps:

  • Heat oven to 220C/200C fan/ gas 7. Cut the chicken wings into winglets by slicing through each of the joints. Keep the two meaty pieces and discard the wing tips, or freeze for stock.
  • Put the winglets on a large baking sheet, drizzle with the olive oil, then season. Roast in the oven for 20 mins, then reduce the temperature to 180C/160C fan/ gas 4 and cook for a further 25 mins.
  • Meanwhile, make the barbecue sauce. Put all the ingredients, except the butter, in a pan and mix together with plenty of black pepper. Let it bubble away for 3-5 mins to thicken up a little, then add the butter and stir until it has melted and made the sauce nice and shiny. Season to taste.
  • Half an hour before the chicken wings are ready, take them out of the oven and brush over three-quarters of the barbecue sauce. When they're fully cooked, toss them in the rest of the sauce so that they become sticky.
  • In a small bowl, mash the blue cheese dressing ingredients together with some seasoning, until combined. The barbecue sauce and dip can be made a day ahead, covered and chilled. Serve alongside the wings with the celery sticks and radishes for dipping.

Blue Cheese Dipping Sauce:
2 Tblsp. (1/4 stick)Butter
1 cup chopped Onions
3 Garlic cloves, thinly sliced
1 cup Bourbon, divided
1 cup Ketchup
1/2 cup Hot Pepper sauce (such as Crystal)
1/4 cup tomato paste
3 Tblsp. (packed) golden brown sugar
30 Chicken drummettes (about 4 lbs)
8 oz. Blue Cheese (such as Maytag)
finely crumbled
1 16 oz. Sour Cream
1/3 cup chopped fresh Parsley

Steps:

  • Melt butter in heavy large saucepan over medium high heat. Add onion and garlic; saute until golden, about 5 minutes. Add 3/4 cup bourbon; boil until most of liquid absorbed, 6 to 8 minutes. Whisk in 1/4 cup bourbon, ketchup, hot sauce, tomato paste and brown sugar. Bring to boil. Reduce heat and simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Season marinade with salt and pepper. Remove from heat; cool to room temperature. Place chicken in 15x10x2 glass baking dish. Pour marinade over and turn to coat drummettes. Cover and refrigerate overnight. Preheat oven to 375 degrees. Line baking sheet with foil or parchment paper. Place cooling rack atop prepared baking sheet. Arrange drummetteson rack, spacing slightly apart. Spread anny remaining marinade from dish over drummettes. Sprinkle with salt and pepper. Bake until cooked through and brown in spots, about 45 minutes. Transfer to serving platter. Serve with blue cheese dipping sauce. Blue Cheese Dipping Sauce: Whisk blue cheese crumbs, sour cream and parsley in medium bowl until well blended. Transfer to serving bowl. Can be made one day ahead. Cover and refrigerate.
