Easy Lettuce Radish Salad with Lemon Vinaigrette is as simple as it gets! It has a crisp and crunchy texture and is lemony good. It's so fresh, versatile, quick and easy to make and can make a wonderful meal, combined with an entree of your choice.

1 large romaine lettuce (or 2 small head romaine)
4 small cucumbers (or 1 English cucumber) - thinly sliced
10-11 radishes (1 bunch) - trimmed and thinly sliced
1/2 cup fresh chives (1 bunch) - finely chopped
3 tablespoons extra virgin olive oil
1 tablespoon freshly squeezed lemon juice (from 1/2 large lemon)
1/2 teaspoon fine salt
1/8 teaspoon ground black pepper (or to taste)
zest from 1/2 lemon - optional

Steps:

  • In a small bowl, combine and stir together 3 tbsp extra virgin olive oil, 1 tbsp freshly squeezed lemon juice, 1/2 tsp salt and 1/8 tsp ground black pepper. Set aside.
  • Rinse and paper towel pat dry all vegetables.
  • In a medium salad bowl, combine 4 small thinly sliced cucumbers, 1 bunch thinly sliced radishes and 1/2 cup finely chopped fresh chives. (Using Benriner Mandoline makes it extra easy).
  • Chop 1 large romaine lettuce into bite-sized pieces and add it to the salad.
  • Drizzle with lemon vinaigrette and toss gently until salad is evenly coated. You can also drizzle without tossing the salad and serve.

1/4 pound thick-cut bacon, cut crosswise into 1/4-inch strips
1 tablespoon white wine vinegar
4 large eggs
Kosher salt and freshly ground black pepper
Buttermilk-Blue Cheese Dressing (recipe follows)
1 head of Boston lettuce, leaves separated
White Wine Vinaigrette (recipe follows)
3 radishes, thinly sliced
2 ounces Maytag blue cheese, crumbled
2 tablespoons finely chopped fresh chives
Buttermilk-Blue Cheese Dressing
1/4 cup buttermilk
1/4 cup sour cream
1 tablespoon fresh lemon juice
2 ounces Maytag blue cheese, crumbled (1/2 cup)
Kosher salt and freshly ground black pepper
(makes about 1/2 cup)
White wine vinaigrette
3 tablespoons white wine vinegar
1 1/2 teaspoons Dijon mustard
1 teaspoon honey
Kosher salt and freshly ground black pepper
1/3 cup canola oil
(makes about 1/2 cup)

Steps:

  • Cook the bacon in a medium sauté pan over medium heat, stirring occasionally, until golden brown and the fat has rendered, about 10 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Bring 1 quart cold water and the vinegar to a simmer in a deep sauté pan. Break the eggs, one at a time, into a ramekin and carefully slide each egg into the simmering water. Simmer until the whites are firm but the yolks are still runny, about 3 minutes. Transfer with a slotted spoon to a plate lined with paper towels and season with salt and pepper to taste.
  • Put a large dollop of the buttermilk-blue cheese dressing in the center of each of 4 large dinner plates.
  • Place the lettuce leaves in a large bowl, toss with half of the white wine vinaigrette, and season with salt and pepper. Arrange the leaves on top of the buttermilk-blue cheese dressing.
  • Divide the eggs, bacon, and radishes among the plates and drizzle with more of the white wine vinaigrette. Garnish with the blue cheese and chives.

  • Put the buttermilk, sour cream, and lemon juice in a blender and blend until combined. With the motor running, slowly add the blue cheese and blend until smooth. Season with salt and pepper. The dressing can be made 1 day in advance and stored in a container with a tight-fitting lid in the refrigerator.

  • Whisk together the vinegar, mustard, and honey in a small bowl. Season with salt and pepper. Slowly whisk in the oil until emulsified. The dressing can be made 1 day in advance and stored in a container with a tight-fitting lid in the refrigerator.

Radishes look and taste beautiful against a romaine backdrop, and the creamy dressing is especially complementary. Radishes are rich in folic acid, vitamin C and anthocyanins, phytonutrients that are believed to have antioxidant properties.

2 hearts of romaine (the lighter, more delicate inner part of a head of romaine lettuce)
1 cup thinly sliced radishes (about 1 bunch)
1 to 2 tablespoons chopped chives, or a mixture of chives and tarragon
2 tablespoons freshly squeezed lemon juice
1 small garlic clove, puréed
Salt to taste
1 tablespoon extra virgin olive oil
5 tablespoons buttermilk
Freshly ground pepper

Steps:

  • Combine the romaine, radishes and herbs in a large salad bowl.
  • Whisk together the lemon juice, garlic, salt, olive oil and buttermilk. Just before serving, toss with the salad mix. Add salt and freshly ground pepper to taste, toss again, and serve.

8 cups Baby Spinach
4 cups torn boston lettuce
1/2 cup thinly sliced red onions or 1/2 cup radish
1 cup thinly sliced mushroom
1/3 cup havarti cheese (optional) or 1/3 cup goat cheese (optional)
1/4 cup toasted sliced almonds (optional) or 1/4 cup chopped hazelnuts (optional)
1/4 cup oil
3 tablespoons lemon juice
2 tablespoons chopped fresh chives or 2 tablespoons green onions
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch granulated sugar

Steps:

  • In large bowl, toss spinach with lettuce. Top with onion and mushrooms. (Salad may be covered and refrigerated for up to 4 hours).

2 tablespoons fresh lemon juice
1/2 teaspoon sherry vinegar
1/2 teaspoon sugar
1 clove garlic, smashed and peeled
1 teaspoon finely grated lemon zest
1/4 teaspoon kosher salt
1/4 cup canola oil
Table salt and freshly ground black pepper to taste
3 heads butter lettuce, outer leaves discarded, leaves torn
12 radishes, trimmed and thinly sliced
1/4 cup mixed fresh herbs, such as parsley, tarragon, chervil, basil, and chives, minced
1 (3-ounce) piece Parmesan cheese

Steps:

  • In 1-cup liquid measuring cup, whisk together lemon juice, vinegar, sugar, and 2 tablespoons water. Using mortar and pestle or food processor, grind or crush garlic, lemon zest, and kosher salt into fine paste. Whisk paste into lemon juice mixture. Gradually whisk in oil. Whisk in table salt and pepper to taste.
  • In large bowl, toss together lettuce, radishes, minced herbs, and dressing. Divide mixture among 6 salad plates. Using vegetable peeler, shave curls of Parmesan atop each salad and serve.

1/4 cup walnuts, toasted lightly and chopped

  • In a large bowl whisk together the lemon juice, the oil, salt and pepper to taste until the dressing is emulsified, add the watercress, the lettuce, the radishes, and the walnuts, and toss the salad well.
