Why buy canned cranberry sauce when you can easily make your own from fresh cranberries, sugar, water, and a little bit of fresh orange? Cointreau®, or another orange-flavored liqueur, gives this sauce an extra flavor boost. It's perfect with ham, chicken, or turkey, whether it's a holiday or not.

2 cups whole fresh cranberries
½ cup white sugar
½ cup water
½ large orange, zested and juiced
⅓ cup orange-flavored liqueur (such as Cointreau®)
⅛ teaspoon salt, or to taste

Steps:

  • Combine cranberries, sugar, water, orange zest, orange juice, orange-flavored liqueur, and salt in a saucepan over medium heat. Stir constantly and bring to a boil. Reduce heat to a simmer and cook, stirring frequently, for about 20 minutes.
  • Remove from heat and allow to cool. Sauce with thicken as it cools, to a soft-preserves stage. Refrigerate until ready to serve.

1 tbsp olive oil
a large knob of butter
250g chestnut mushroom , halved
4 tbsp port or red wine
2 rounded tbsp cranberry sauce
150ml hot water
2 clementines , satsumas or mandarins , juice only
1 tsp bouillon powder or ½ chicken stock cube, crumbled
a splash of soy sauce
about leftover cooked ham , cut into chunky slices

Steps:

  • To fry the mushrooms, heat the oil and butter in a frying pan over a high heat until the butter is foaming. Add the mushrooms and fry for 4-5 minutes until they're golden.
  • To make the sauce, pour in the port or wine to deglaze the pan, then lower the heat and stir in the cranberry sauce until dissolved. Pour in the hot water and fruit juice and sprinkle in the bouillon powder or stock cube. Splash in a spoonful or so of soy sauce and stir well. Turn up the heat and boil the sauce rapidly for a few minutes until it reduces slightly.
  • Slide in the ham and heat through for a minute or two. Taste for seasoning and serve.

one 12-ounce bag dried cranberries
3/4 cup candied ginger
1 (750 ml) bottle red wine (preferably one with a strong, bold flavor like shiraz or pinotage.)
2 cinnamon sticks
3/4 teaspoon ground nutmeg
2 teaspoons ground cardamom
1 tablespoon whole cloves, stuck into a slice of orange peel
1/2 cup orange liqueur (cointreau, grand marnier, etc.)
1/4 cup brandy (apple brandy, if you've got it)
2 tablespoons orange zest (about 1/2 of a large orange)

Steps:

  • Thinly slice the candied ginger.
  • Grate (zest) the peel of 1/2 of a large orange.
  • Pour half of the bottle of wine into a saucepan, add all other ingredients.
  • Simmer over very low heat, stirring occasionally and adding more wine as liquid level gets low.
  • When the bottle of wine is empty and the liquid has mostly evaporated, remove from heat and serve warm or cold.

2 cups Sugar
1/2 cup Water
3 Whole cloves
1 stick Cinnamon
4 cups Cranberries (1 bag)
1/2 Orange (finely chopped, including rind and pulp)
1/4 cup Bourbon (or Cognac)

Steps:

  • In a large heavy saucepan, combine sugar and water and bring to a boil, then continue boiling for 3 minutes.
  • Toss in cloves, cinnamon, cranberries and finely chopped orange.
  • Cook over low heat until berries start popping.
  • Stir occasionally, then remove from heat.
  • Stir in bourbon and pour into bowl.
  • Cover and chill overnight.
