SPICY CHICKEN AND ORZO SKILLET



Spicy Chicken and Orzo Skillet image

Ground cumin, Italian seasoning and red pepper flakes fabulously flavor every bite of this zesty chicken and pasta supper.

1 tablespoon olive or vegetable oil
4 boneless skinless chicken breasts, cut into thin bite-size strips
1 clove garlic, finely chopped
1 cup ready-to-eat baby-cut carrots, quartered lengthwise
1 small onion, cut into thin wedges
3/4 cup uncooked rosamarina or orzo pasta (5 1/2 oz)
1 teaspoon ground cumin
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1/2 cup water
1 can (15 oz) Progresso™ chickpeas or garbanzo beans, drained, rinsed
1 3/4 cups Progresso™ chicken broth (from 32 oz carton)
2 cups fresh spinach leaves, cut into thin strips

Steps:

  • In 12-inch skillet, heat oil over medium-high heat until hot. Add chicken and garlic; cook and stir 3 minutes. Add carrots and onion; cover and cook 2 to 3 minutes or until vegetables are crisp-tender, stirring once.
  • Stir in all remaining ingredients except spinach. Heat to boiling. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until most of liquid is absorbed and orzo is tender.
  • Stir in spinach; cover and cook 2 to 3 minutes longer or until spinach is wilted.

Spicy Indian Orzo image

2 tablespoons vegetable oil
1 pound lean ground lamb
2 tablespoons minced garlic
2 tablespoons minced peeled fresh ginger
1 jalapeño chili with seeds, chopped
1 1/4 teaspoons ground cardamom
1 1/2 teaspoon curry powder
8 ounces orzo pasta
2 cups canned beef broth
1 cup chopped seeded ripe tomato
1/2 cup chopped fresh cilantro

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add lamb and sauté until cooked through, breaking up with back of spoon, about 5
  • minutes. Using slotted spoon, transfer lamb to bowl.
  • Reduce heat to medium. Add garlic, ginger and chili to same skillet and sauté 2 minutes. Add cardamom, curry powder and orzo and stir to 1 minute. Add broth and bring mixture to boil. Reduce heat to medium-low. Cover and cook until orzo is tender and most of broth is absorbed, stirring occasionally to prevent sticking on bottom of skillet, about 15 minutes. Return lamb to skillet and mix in. Season to taste with salt and pepper.
  • Mound pilaf on large platter. Garnish with tomato and cilantro and serve.

2 tablespoons minced peeled fresh ginger
1 jalapeño chili with seeds, chopped
1 1/4 teaspoons ground cardamom
1 1/2 teaspoon curry powder
8 ounces orzo pasta
2 cups canned beef broth or water
1-2 cups water
28 oz can chopped tomatoes
1 cup chopped fresh cilantro

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add meat and sauté until cooked through, breaking up with back of spoon, about 5 minutes. Drain fat. Reduce heat to medium. Add garlic, ginger and chili to same skillet and sauté 2 minutes. Add cardamom, curry powder and orzo and stir for 1 minute. Add broth, canned tomatoes, and about 1 cup water and bring mixture to boil. Reduce heat to medium-low. Cover and cook until orzo is tender and most of broth is absorbed, stirring occasionally and maybe adding more water to prevent sticking on bottom of skillet, about 15 minutes. Season to taste with salt and pepper. Stir in cilantro and serve.

CREAMY ORZO



Creamy Orzo image

3/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 pound orzo (rice-shaped pasta)
2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1 (14.5-ounce) can diced tomatoes, juices drained
1 1/4 cups whipping cream
1 cup frozen peas, thawed

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes. Add the tomatoes and cook until they are tender, about 8 minutes. Stir in the cream and peas. Add the orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan to the pasta mixture and toss to coat. Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with salt and pepper, and serve.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 small onion, chopped
2 cloves garlic, chopped
2 cans (14 ounces) chicken or vegetable broth or stock
2 cups orzo pasta (enriched rice may be substituted)
1/2 cup grated Parmigiano or Romano
Salt and freshly ground black pepper

Steps:

  • Preheat a 8 inch pot with a tight fitting cover over moderate heat. Add oil, onion and garlic and saute for 2 or 3 minutes. Add broth to the pan and bring to a boil. Stir in orzo and return broth to a boil. Cover pot and reduce heat to simmer. Cook 15 minutes, stirring occasionally, or until liquid is absorbed and pasta tender. Remove lid and stir in cheese. Season with salt and pepper to your taste. You favorite fresh herbs may also be stirred into the orzo or rice to strengthen the flavor even more.
