This is a company-worthy dish and one of our long-time favorites! We especially love the flavor of this dish and the way the zucchini stays firm and green during baking. It makes a nice presentation, too. People will think you slaved over this, but it is so easy, that it is embarrassing. Great dish for potlucks. Excellent alternative to the Green Bean Casserole. This recipe serves 4, but ingredients can be easily increased to serve a crowd. Enjoy!

- 2 ½ cups sliced zucchini, unpeeled
- 1 cup onion diced and sauteed
- ½ cup fontina cheese, grated
- ½ cup parmesan cheese grated
- ¼ cup fresh bread crumbs made from
- ½ glutino english muffin toasted very brown
- 2 eggs beaten
- salt and pepper, sprinkle to taste
- 1 tablespoon olive or grapeseed oil
- 2 tablespoons butter, melted
- kitchen spray and parchment paper

Steps:

  • PREP FIRST! Preheat oven to 350 degrees
  • Line an 8-inch baking pan with parchment paper and spray with kitchen spray. Melt the 2 tablespoons of butter, and set aside.
  • Toast the ½ English Muffin nice and brown, then grind it to make fresh bread crumbs. These are awesome crumbs, or use a bread you like. The Bullet makes short work of making bread crumbs.
  • Grate the Fontina and Parmesan cheese, and mix together in a small dish.
  • Saute the onion in 1 tablespoon of olive oil until lightly brown.
  • PUT IT ALL TOGETHER: Wash and slice the zucchini and place a single layer (half of the zucchini) in the prepared pan. Add half of the sauteed onions and half of the cheese.
  • Place the last layer of zucchini in the pan. Add the rest of the sauteed onions and the remaining cheese. Sprinkle to taste with salt and pepper, and pour the beaten eggs evenly over all.
  • Top with the fresh bread crumbs and drizzle with the melted butter.
  • Bake in the preheated oven 45 minutes until nicely brown and slightly puffed. Tent with foil for 5 minutes, cut into squares, then serve. Enjoy!

8 medium zucchini
Good olive oil
2 large yellow onions cut in half and sliced 1/2 inch thick
Kosher salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

Steps:

  • Remove the ends of the zucchini and, if they are large, cut in half lengthwise. Slice the zucchini diagonally in 1/2-inch slices. Heat 2 tablespoons of olive oil in a large (12-inch) saute pan and add the onions. Cook for 10 minutes on medium-low heat, until they start to brown. Add half the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and cook, tossing occasionally, for 10 to 15 minutes, until just cooked through. Sprinkle with Parmesan and cook for 30 seconds more. Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.
  • Note: If you cook too much zucchini in one pan, you end up steaming rather than sauteing it. I prefer to cook it in 2 batches.

We love zucchini, and we eat it all year round. I was looking for a healthier way to cook zucchini that would appeal to the hubby. One day, I thought I would give it a try by cooking it in the Air Fryer, and it was a great success. So what is there not to like? It is relatively low fat with a simple seasoned Parmesan cheese...

2 zucchinis, 6 inches long and 2 inches in diameter
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon coarse ground black pepper
2 tablespoons parmesan cheese from the shaker
1 tablespoon olive oil

Steps:

  • 1. Cook's Tip: You will need an Air Fryer and one ziploc bag to mix the spices in. It is better to use the bag because you can "knead' the seasoning into the slices, then into the oil, and it coats them more evenly than if you try to do it in a bowl. Make sure your zucchini is patted dry!
  • 2. Prepare the zucchini. Use two firm, fresh zucchinis, uniform in size and about 6 inches long and two inches in diameter. Wash the zucchini, and trim the ends. Do not peel the zucchini. Pat dry with paper towels.
  • 3. Cut each zucchini into three pieces, like this.
  • 4. Stand the zucchinis on end like this.
  • 5. Slice each piece as in the photo. (as uniform as possible) Make 4 slices from the larger part of the zucchini and 3 slices from the slimmer part of the zucchini. Pat all the pieces dry with paper towels. Again, dry zucchini means the coating will stick to the slices when it is cooking in the air fryer.
  • 6. Here is how they look.
  • 7. Place the seasonings, garlic salt, paprika, coarse ground black pepper, and 2 tablespoons of shaker Parmesan cheese in a ziplock bag and close it, leaving a little air in it. Now, "knead" the bag and the zucchini gently, until the zucchini is fully coated with the seasoning.
  • 8. Add one tablespoon of olive oil to the bag and gently "knead" until all the zucchini is covered with the coating of oil, seasonings and Parmesan Cheese.
  • 9. You are now ready to cook the zucchini in the Air Fryer. Add the zucchini to the basket of the Air Fryer. No need to spray with kitchen spray. Set the temperature to 400 degrees, and set the time to 16 minutes. Check your zucchini at 12 minutes to make sure it doesn't over brown and continue cooking until done to your taste.
  • 10. Your zucchini will turn out perfectly, a little soft in the middle and a little firmer toward the skin. That is the way it should be. You don't want to overcook it. Here is how it looks! Enjoy!
