Bolillos next to the Tortilla is a staple to Mexico. Nearly every villiage has a Bakery and every bakery makes Bolillos, Fabulous for breakfast with a little butter and fresh fruit. Bolillos go stale quickly and are at their best right from the oven . Great for any meal where you want a crisp roll

Number Of Ingredients 8

1 (7 1/4 g) package active dry yeast or 2 1/4 teaspoons active dry yeast
1 1/3 cups warm water
1 tablespoon honey
1 tablespoon lard or 1 tablespoon shortening, melted and cooled
1 1/2 teaspoons salt
3 1/4-4 cups flour
1/4 cup cold water
1 teaspoon cornstarch

Steps:

  • Sprinkle yeast over the warm water in a large mixing bowl; stir and let stand 5 minutes.
  • When the yeast is working a bit stir the honey, lard and salt into the yeast mixture.
  • Add 2 1/2 cups flour.
  • Mix at low speed and then beat at medium speed until the dough is very elastic, about 5 minutes.
  • Gradually stir in as much of the remaining flour as needed to make a soft dough.
  • Knead on floured surface until dough is smooth in texture and very elastic, 15-20 minutes (use a dough hook on your mixer and knead for about 10-15 minutes).
  • Place dough in a greased bowl, turn the dough so all surfaces have a sheen of oil.
  • Cover and let rise in a warm place until it has doubled in size, about 1 hour (I turn on the light in the oven and place the dough in there to rise, do NOT heat the oven!).
  • Punch the dough down and knead briefly on a floured surface.
  • Divide dough into 10 pieces and roll into balls.
  • Work with the palms of your hands and start at the center of each ball to roll out into ovals.
  • Each piece should be about 5 1/2" long and 2" in the middle, tapering to each end.
  • Place rolls on a greased baking sheet, cover and let rise until almost doubled, about 25 minutes.
  • Meanwhile heat oven to 375F degrees.
  • Mix cornstarch and cold water, heat stirring constantly to boiling, boil until thickened and clear about 2 minutes.
  • Brush each roll with the cornstarch mixture.
  • Slash each roll down the middle stopping about 1/2" from each end and cutting about 1/2" deep.
  • Bake until the rolls are brown and sound hollow when tapped, about 30-35 minutes. Remove from baking sheets and cool on racks.
  • Serve warm & fresh from the oven.

BOLEO/ BOLILLOS (AUTHENTIC MEXICAN/FRENCH BREAD)



Boleo/ Bolillos (Authentic Mexican/French Bread) image

No mater how you spell it, Boleo/Bolillos' are sold through out Mexico, in bakeries and supermarkets. They are basically a small french roll/baguette that was believed to have been introduced into the country by The Boleo Mining Company, a French company which operated in Santa Rosalia, Mexico in the 1800's. The mine is now closed, but the original bakery still fluorishes. 2 teaspoons active dry yeast
2 tablespoons sugar (see note above)
1 1/2 cups warm water (105-115 degrees)
4 -4 1/2 cups unbleached all-purpose flour
2 teaspoons salt
1 cup ice cold water (in spray bottle)
1/4 cup cornmeal (or parchment paper)

Steps:

  • In a large bowl sprinkle yeast and sugar over warm water and let stand until foamy, about 5 minutes.
  • With a wooden spoon stir in 2 cups flour until combined.
  • Stir in salt and 2 cups of the remaining flour until mixture forms a stiff dough.
  • On a lightly floured surface knead dough with lightly floured hands for 8 minutes, or until smooth and elastic (or use KA mixer).adding more flour if needed to keep dough from sticking.
  • Transfer to a lightly oiled deep bowl, turning to coast with oil.
  • Cover bowl with plastic wrap and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch down dough and form into 8-10 hoagie shaped rolls (or the dough can be shaped into 2 slender loaves about 10 inches long; or one large loaf.).
  • Place rolls on an lipless baking sheet or pizza paddle lightly dusted with corn meal (or parchment paper), cover with lightly floured towel and let rise, until doubled in size, about 30 minutes (longer needed if making large loaves).
  • Preheat oven to 425 degrees.
  • In preheating oven, place heavy-duty lipless cookie sheet or bread baking stone.
  • Make a slash down the center of each roll (or three diagonal slashes on the loaves) with a sharp knife.
  • Slide bread from pizza paddle onto hot stone, Lightly spraying each roll/loaf with cold water.
  • Carefully toss 1/2 cup water on oven floor (if using gas oven, place a heavy-duty oven-safe skillet or roasting pan on the the oven floor) and close door.
  • Spritz dough 2 times during the first 3 minutes of baking.
  • Bake until golden brown, about 12-30 minutes (depending on size of rolls/loaves).
  • Allow bread to cool on wire rack.

AUTHENTIC BOLILLOS (MEXICAN BREAD ROLLS FOR TORTAS)

These are the real thing- they make a wonderful sandwich roll. Try them as a torta (a mexican grilled sandwich). The time for preparation includes the time for the dough to rise.

2 cups warm water (about 105 degrees)
1 teaspoon salt
1 teaspoon sugar
2 1/4 teaspoons instant yeast (like SAF brand)
4 -6 cups unbleached white flour
1 egg white, whisked

Steps:

  • Combine the water, salt, sugar, yeast and 2 cups of the flour to your Kitchenaid mixing bowl.
  • Set mixer speed to 4 and mix well. Add in the flour about a half a cup at a time, mix for a minute or so and add more flour until the dough comes together and doesn't stick to the bowl.
  • The dough should form a ball on the dough hook. It may become sticky after a few minutes of kneading so keep the flour handy to add more if necessary.
  • Knead for 8-10 minutes. The final dough should be firm and elastic and a little sticky to the touch.
  • Form the dough into a ball and place the dough in a greased bowl.
  • Cover the dough with a towel or cloth and leave in a warm place for about an hour.
  • Remove dough from bowl onto a smooth counter that has a little flour on top to keep the dough from sticking to the counter.
  • Divide dough into 10 equal balls. For oval shaped rolls, roll the balls between your palms for about 5 seconds to make a cylindrical shape, tapering slightly at the ends.
  • Cover and let rise again for about 30 minutes.
  • Preheat oven to 375 degrees and brush each dough ball with egg whites.
  • Using a bread knife, make a cut down the length of the roll about 1/4 inch deep. Bake for about 30 minutes, let cool and enjoy.
  • They may also be wrapped well and frozen for later use.

1 package (1/4 ounce or 7 g) active dry yeast
1 1/3 cups ) warm water (105 to 115°F
1 tablespoon honey
1 tablespoon ) lard or vegetable shortening,melted and cooled
1 1/2 teaspoons salt
3 1/4 to 4 cups bread flour*
3 Tbsp. Easy Roll Dough Improver (buy online with King Artur Flour--optional)
1/4 cup cold water
1 teaspoon cornstarch

Steps:

  • Equipment needed/recommended: The Dough Improver is a product that I buy from King Arthur Flour. I find that it really helps to improve the texture of my bread rolls, but this is not necessary for this recipe. I also recommend a higher gluten flour and I use King Arthur Unbleached Flour Parchment paper is helpful Baking sheets Cooling rack pastry brush I use a Kitchen Aid Stand-Mixer with a dough hook. You can do this with a bread machine, except for shaping the rolls, or mix and knead this by hand. Sprinkle yeast over the warm water in large mixer bowl, add the honey; stir to mix. Let stand 5 minutes. Add the melted and cooled and salt into yeast mixture; add 2 1/2 cups flour. Mix at low speed; then beat at medium speed until very elastic, about 5 minutes. Gradually stir in as much of the remaining flour needed to make soft dough, 1/2 to 1 cup. NOTE: I added a tablespoon at a time, and used about 8 more tablespoons. If you are using your hands, add just enough flour to prevent sticking, until dough is smooth and elastic. Place the dough in a greased bowl; turn dough over to grease the top. Let rise, covered, in a warm place until doubled-about an hour. Likewise, I turn on my oven toWARMfor 3 minutes, then turn it off. Punch down dough (actually, I gently press it down); knead briefly on floured surface. Let rest 10 minutes. Divide dough into 6-8 equal pieces; roll each piece into ball on floured sur­face with palm of hand. Starting at center and work­ing toward opposite ends, roll each ball on floured surface with the palms of hands into oval tapered at both ends-about 5-6"long. Place, evenly spaced, on 2 parchment paper covered baking sheets (or greased); let rise, loosely covered, until almost doubled, about 25 minutes. Meanwhile, heat oven to 375°F. Mix cold water and cornstarch in small sauce­pan. Heat over high heat, stirring constantly, to boiling; boil until thickened and clear, about 2 minutes. Brush risen rolls with warm cornstarch mixture. Slash each roll lengthwise with razor blade or sharp, thin knife to 1/2 inch from each end, cutting about 1/2 inch deep. Bake until rolls are golden brown and sound hollow when tapped, 30 to 35 min­utes. Remove from baking sheets; cool on wire racks. Depending on the size, this recipe makes between 6-8 rolls

Number Of Ingredients 10

1 cup warm water
1 tablespoon dry yeast
1/2 teaspoon sugar
1 cup lukewarm milk
3 1/4 cups bread flour
3 1/4 cups plus 1 tablespoon all-purpose flour
2 tablespoons salt
1 1/2 teaspoons baking powder
vegetable oil
2 tablespoons unsalted butter, room temperature

Steps:

  • Combine water, yeast and sugar in large bowl of electric mixer fitted with paddle attachment. Mix until sugar and yeast dissolve. Add milk, 3/4 cup bread flour and 3/4 cup all-purpose flour and mix until smooth. Set aside at room temperature for 30 minutes.
  • Mix remaining 2 1/2 cups bread flour and 2 1/2 cups all purpose flour in medium bowl. Remove 1 cup flour mixture and transfer to small bowl. Add 1 tablespoon salt and baking powder to flour in small bowl and stir with fork to blend. Add this flour mixture to sponge and mix to blend. Continue mixing, gradually adding enough of remaining flour mixture until dough leaves side of bowl. Change attachment on mixer to dough hook. Knead with mixer until dough is moderately firm and dry, adding more of flour mixture as necessary. Knead 10 to 15 minutes longer. Lightly oil large bowl. Add dough; turn to coat. Cover with damp towel. Let stand in warm draft-free area until doubled in volume, about 1 hour.
  • Punch down dough. Transfer to lightly floured work surface. Knead briefly. Divide dough into 9 equal portions. Roll each into ball shape. Cover with towel and let rest 10 minutes.
  • Combine butter and remaining 1 tablespoon flour in small bowl. Pull each dough ball into 6-inch long log. Using sharp knife, cut shallow slit down center of each log. Spread some of butter mixture inside each. Roll logs briefly on counter to enclose butter mixture. Arrange on large parchment lined baking sheet. Cover with towel. Let stand in warm draft-free area 30 minutes. Rising is complete when finger pressed in dough leaves a mark.
  • Preheat oven to 325 degrees F. Combine remaining 1 tablespoon salt and 1 cup water in spray bottle. Generously spray rolls all over. Bake 5 minutes. Reduce oven temperature to 325 degrees F. Bake rolls until golden brown and sound hollow when tapped on bottom, about 10 minutes. Transfer to racks and cool completely.

1 1/4 c water (80 degrees f/27 degrees c)
1 Tbsp vegetable oil (I use a light olive oil)
2 tsp sugar
3 1/2 c all purpose flour (a little more if dough seems to sticky)
1 tsp salt
1 pkg quick rising active dry yeast
cornmeal, optional

Steps:

  • 1. Grease 2 baking sheets or you can use parchment paper in place of greasing the sheets.
  • 2. Select the dough cycle and loaf size for 2 lbs.
  • 3. Add ingredient (except cornmeal) to your pan in order listed. Start the machine and let it run through dough cycle.
  • 4. Once dough cycle completes; divide dough into 8 equal pieces. Flatten into a 6-inch cirle. Fold the top each toward you cover about 2/3 of the circle. Flap other side over (envelope style) and pinch seam together to seal. Form into a football shape, tapering the ends.
  • 5. Dip each roll (seam side only) in the cornmeal. Place seam side down on baking sheets. Cover lightly and let rise until double, about 45 minutes to an hour or until an impression remains in dough when lightly pressed with your finger. NOTE: I put these in my oven with the oven light on to rise. About 5 minutes before I bake, I remove from oven and preheat oven for baking. The warmth from the light in the oven helps with rising the dough.
  • 6. Preheat over to 375 degrees. With a sharp thin blade knife, make a lengthwise cut (about 1/2-inch deep) on top of each roll. Bake 20 to 25 minutes until they are lightly browned and sound hollow when tapped.
  • 7. Cool on rack. Best served on day they are baked, or they can be frozen up to 3 months in freezer bags.

This is a traditional Mexican bread that is so versatile. It can be used for sandwiches of all varieties, as a bread to accompany meals, or eaten while hot with lots of honey cinnamon butter. There are many recipes out there for this bread, but I like this one for the bread machine best. I hope you will agree.

2 c warm water (105º to 110º)
1 pkg rapid rise yeast (7 grams)
4 c bread flour
1 tsp salt
1 tsp granulated sugar
1 large egg white, whisked

Steps:

  • 1. Place all ingredients except egg whites in bread machine pan in the order listed. Make sure liquid is completely covered by the dry ingredients.
  • 2. Select Basic Dough and begin cycle
  • 3. Machine will ding when dough is ready
  • 4. Remove dough from bread machine and place in a lightly greased glass bowl. Cover bowl and let rise in a warm dry place until approximately double in volume (about an hour)
  • 5. Turn dough out onto lightly floured clean flat surface and gently knead for 5-10 minutes until dough is smooth and elastic
  • 6. Divide dough into 10 equal balls. Roll the balls between your palms for about 5 seconds to make a cylindrical shape. Place each roll on a parchment lined baking sheet. NOTE: LEAVE SPACE BETWEEN EACH ROLL TO ALLOW FOR RISING.
  • 7. Allow to rise for about 30 minutes. While waiting, preheat oven to 375º
  • 8. Brush each roll with whisked egg white, and cut a slit horizontally along the top of each roll about 1/4" deep.
  • 9. Place in preheated oven and bake for about 30 minutes until golden brown. Remove to wire rack for cooling.

4 medium bolillo rolls (recipe follows)
1 cup(s) refried beans
2 cup(s) of shredded cheddar or monterey jack cheese
1 cup(s) of homemade salsa (recipe posted)
5 slice(s) crispy fried bacon crumbled, optional
- ~~homemade bolillos~~
2 1/2 cup(s) of all purpose flour
1 cup(s) of warm water
1 teaspoon(s) dry yeast
1 teaspoon(s) salt
1 teaspoon(s) sugar
1/4 cup(s) of canola oil
1/2 cup(s) cornmeal

Steps:

  • Preheat the oven to 350 degrees. Split the bolillo rolls in half, lengthwise. Top each half with one tablespoon of salsa, 1/8 cup of refried beans and 1/4 cup cheese. Bake for 10 minutes or until the cheese is melted. Serve with extra salsa. You can also sprinkle crispy crumbled bacon on top of the cheese and bake. This is how I prepare my molletes, but the fun thing about them is that you can make them anyway you like. Adding any kind of topping you like with the cheese. Serves four. Enjoy.
  • Homemade Bolillos: Mix together one cup flour, yeast and warm water. Add one more cup of flour, sugar, salt, and oil and stir until ingredients are combined but dough is still wet and shaggy. Let dough rest for 15 minutes.
  • Sprinkle 1/2 cup flour on a clean surface and knead dough until it shapes into a ball, about 10 minutes. Place into a greased bowl, cover and let rise until doubled in size, about an hour. After the dough has risen, divide dough into 8 equal pieces. Take each piece and flatten it into a circle. take one side, and fold it in half into the center. Take the opposite side and do the same. Roll folded dough with your hands until it's spindle shaped, wider in the middle and tapered at the ends. Place shaped rolls on a greased or parchment-paper lined cookie sheet thats sprinkled with a bit of cornmeal. Cover and let rise until doubled in size about an hour. 20 minutes before baking, heat oven to 425 degrees, five minutes before baking, place an oven safe pan filled with water on the bottom of the oven. Mix 1/2 cup of warm water with 1/4 teaspoon of salt and brush on each roll. Then take a sharp knife, razor or lame, make a slash lengthwise through each roll on the top not all the way through.
  • Place rolls on bottom rack of the oven (be carful when opening oven as steam might come out) and cook for 15 minutes or until the bolillos are light golden brown in color and make a hollow sound when you thump them. These keep well for a couple of days, though if they get too soft. Just reheat in the oven to firm them up. They also freeze well. Enjoy

1 package active dry yeast
1 tablespoon sugar
1 teaspoon salt
1 1/2 cups warm water
1 egg white
1 tablespoon water or milk

Steps:

  • 1. In a large bowl combine 1 1/2 cups of flour,yeast, sugar, and salt, add warm water. Beat with an electric mixer on low to medium speed 30 seconds, scraping sides of bowl. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the flour as you can. 2.Turn out dough onto a lightly floured surface. Knead in enough flour to make a stiff dough that is smooth and elastic (6 to 8 minutes). Shape into a ball. Place in a lightly greased bowl, turning once to coat the surface. Cover and let rise, in a warm space, for one hour. 3. Punch down after 1 hour.Turn out onto lightly floured surface. Divide the dough into 6 equal parts, shape into oval shapes, pulling and twisting slightly. Transfer to baking sheet lined with parchment paper. Use a sharp knife to make a cut about 1/4 inch deep along the center of each roll. In a small bowl, combine the egg white and water. Brush the tops and sides of the rolls. Cover with wax paper or a clean kitchen towel and let rise for 30 to 45 minutes. 4. Preheat oven to 375ºF. Here is another great tips I learned for baking breads. Place a baking dish on the bottom rack of oven while it is preheating. Right before baking the bread, fill hot baking dish with 1 cup of room temperature water. This will create steam and also result in a crisp exterior on the bread. Bake the rolls for 15 minutes. Brush again with egg white mixture. Bake for another 10 to 13 minutes or until golden brown. Remove from baking sheet and cool on wire racks. Rolls can be frozen for up to 3 months in a freezer bag.
