2 lbs red potatoes, scrubbed (about 6 medium or 18 small)
1/4 cup red wine vinegar
salt & fresh ground pepper
3 hard-boiled eggs, peeled and cut into 1 to 2 inch dice
1 stalk celery, minced (about 1/2 cup)
2 tablespoons minced red onions
1/4 cup sweet gherkin, minced
1/2 cup mayonnaise
2 teaspoons Dijon mustard
2 tablespoons minced fresh parsley leaves

Steps:

  • Cover potatoes with 1 inch of water in stockpot or Dutch oven.
  • Bring to simmer over medium-high heat.
  • Reduce heat to medium and simmer, stirring once or twice to ensure even cooking, until potatoes are tender (a thin-bladed paring knife can be slipped into and out of center of potatoes with no resistance), 25 to 30 minutes for medium potatoes or 15 to 20 minutes for new potatoes.
  • Drain; cool potatoes slightly and peel if you like.
  • Cut potatoes into 3/4-inch cubes (use serrated knife if they have skins) while still warm, rinsing knife occasionally in warm water to remove starch.
  • Place warm potato cubes in large bowl.
  • Add vinegar, 1-2 teaspoon salt, and 1/4 teaspoon pepper and toss gently.
  • Cover bowl with plastic wrap and refrigerate until cool, about 20 minutes.
  • When potatoes are cool, toss with remaining ingredients and season with salt and pepper to taste.
  • Serve.
  • Imediately or cover and refrigerate.
  • cooking time does not include refrgeration time.

When I served this salad to relatives visiting from the Midwest, I was surprised to find it was something they'd never tried before. It's a real favorite in our area.

2 pounds sweet potatoes
1-1/2 cups mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon salt
4 hard-boiled large eggs, chopped
1-1/2 cups finely chopped celery
8 green onions, sliced

Steps:

  • Place sweet potatoes in a large saucepan and cover with water. Cover and boil gently until the potatoes can easily be pierced with the tip of a sharp knife, about 30-45 minutes. Drain. When potatoes are cool, peel and dice. In a large bowl, combine mayonnaise, mustard and salt. Stir in eggs, celery and onions. Add potatoes; stir gently to mix. Cover and refrigerate for 2-4 hours.

2 slice bacon (chopped)
1 onion (chopped)
2 Tbsp butter
1/4 c flour
1/2 tsp rosemary, dried
1 tsp dill, dried
salt and pepper
5 cooked potatoes
1 c cooked carrots, diced
1 c cooked parsnips, diced
8 c chicken broth
1 cup cooked diced ham
1/2 c cream or milk
1/2 c shredded chedder cheese (for garnish)

Steps:

  • 1. render bacon on large pot and add onion and cook till onion is almost carmelized, add butter and flour and cook til golden in color
  • 2. add spices
  • 3. add Chicken stock, potatoes, carrots and parsnips. mash or use emersion blender to break down veggies
  • 4. cook to a boil and then add cooked ham cook 5 min to heat though
  • 5. remove from heat and stir in cream.
  • 6. serve and top with 1 to 2 Tbls. cheese
  • 7. serve with chedder biscut...yummy

1 medium potato, peeled and chopped to a medium dice
2 eggs
1/2 teaspoon coriander
1/4 teaspoon ground ginger
2 teaspoons curry powder
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1/2 teaspoon dried cilantro or 1 teaspoon fresh cilantro

Steps:

  • Bring a pot of water to boil, add the eggs and boil for 10 minutes.
  • After ten minutes add the salt to the water and add the potatoes with the eggs and boil for another five minutes.
  • In a small frying pan add the spices (coriander, ginger, curry, pepper), and toast them over low heat for about two minutes, or until the spices become aromatic.
  • Drain the potatoes and eggs, and add the butter to the pan with the spices, stir the spices into the melting butter, and add the potatoes and coat.
  • Peel and chop the eggs into bite sized pieces, and add to the pan and toss again.
  • If the spices and butter become to dry to toss the potatoes and eggs with, add 1/4 cup of water or milk to thin it out.
  • Add the cilantro and salt to taste, and cook for about a minute longer until all flavors are combined.

8 to 10 Idaho potatoes
4 to 5 boiled eggs
1/2 pound bacon cooked and crumbled
2 celery ribs
2 tablespoons diced pimentos
3/4 teaspoons steak dust (recommended: Bob Tallman's cowboy blend of garlic, black pepper, sea salt, onion, and sugar)
1/4 teaspoon panhandle pepper (recommended: Bob Tallman's cowboy orange seasoning - gourmet black pepper, garlic, onion, and orange oil)

1 potato
2 organic, free-range eggs
2 tablespoons finely chopped fresh parsley
2 cloves fresh garlic, finely minced
Sea salt
Smoked paprika, as needed
Freshly ground black pepper

Steps:

  • Fill up a large pot halfway with peanut oil and place over medium heat. Bring a small pot of water to a rolling boil. Cut the potato into long strips like French fries.
  • Gently add the eggs to the boiling water and cook for 6 minutes. Drain and run the eggs under cold running water to stop the cooking process.
  • When bubbles start to form in the peanut oil, drop in the potato strips and cook until golden brown. Lift the potatoes out of the oil and drain on a tray lined with paper towels. Toss them in a large bowl with the parsley and garlic with a pair of tongs. Add some sea salt and smoked paprika and continue to toss.
  • Place the eggs in egg cups (with the large ends in) and arrange the fries on a small plate on the side. Tap the tops of the eggs and peel away the shells. Cut away the tops of the egg whites. Sprinkle with sea salt and pepper. Dip the fries into the yolks!

Comfort food at its best! This is a perfect side dish for any meat you may want to serve - ribs, steak, chops, chicken ... anything. These potatoes remind me a lot of a loaded baked potato - only better! I could make a meal of these potatoes alone and be perfectly satisfied.

6 medium whole potatoes, peeled
2 c shredded cheddar cheese
1/2 c butter (1 stick)
1/2 c sour cream
1/3 c spring onions, chopped
1 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)

Steps:

  • 1. First, boil the peeled whole potatoes until 'almost' done. If I'm using red potatoes I don't peel them but that's certainly your prerogative. (Any potato you choose should work just fine in this dish). Drain and cool then cut into small chunks. Set aside.
  • 2. Over low heat combine the cheese and butter and cook until 'almost' melted, stirring occasionally.
  • 3. Remove from heat and add in the sour cream, spring onions, salt and pepper. Gently fold in the potatoes. Preheat oven to 400 degrees. Spray a 9 x 9 casserole dish with cooking spray.
  • 4. Transfer to the greased casserole dish and bake on 400 for approximately 20 to 25 minutes or until heated through. Serve warm.

NORTH CROATIAN BOILED POTATO



North Croatian Boiled Potato image

This is northern version of similar Dalmatian potato. The difference is that it is advisable to take baby spring potato, the one with very thin skin. The best way to do it is to soak potato in cold water, wash it and than grate the potato skin with sharp knife. This side dish is popular in Zagreb region and it is served with various meats and "cuspajz" (spring vegetable stews). It can be done with old potato but it is much better if you have spring one.

Steps:

  • Gently peal potato skin, and if possible just "shave" it.
  • Cook for about 25-30 minutes (until toothpick can easily go through). Drain potato.
  • In another pot put butter and finely minced parsley leaves. When butter starts to foam, add potato and fry it on butter 1-2 minutes. Serve hot.
