My mom always makes this for Thanksgiving and all of my siblings have carried on the tradition. The secret is in the topping.

1 (6 ounce) package cherry-flavored gelatin (such as JELL-O®)
2 cups hot water
1 (8 ounce) can crushed pineapple, juice drained and reserved
3 bananas, sliced
1 ½ cups cold water
1 cup miniature marshmallows, or as needed
¾ cup white sugar
2 tablespoons all-purpose flour
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
  • Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

This recipe is so delicious and is derived from another recipe but I tweaked it and made it my own. My family loves it and I hope you do too. The good thing about this recipe is the ability to change a few ingredients to have a different recipe but it still be fabulous. Example: Pineapple Jello, Pineapple Pie Filling, Toasted...

1 box 6 oz - cherry jello
2 c boiling water
1 can(s) cherry pie filling
2 Tbsp milk
15 marshmallows
1 pkg 3 oz - cream cheese
1 c whipped cream, sweetened
sliced almonds

Steps:

  • 1. Combine cherry jello and boiling water and stir until jello is dissolved.
  • 2. While still hot, add cherry pie filling, stirring until thouroughly mixed. Pour into 9 x 9 pan and refrigerate for 2 hours.
  • 3. When Jello is set, heat marshmallows in milk until all the marshmallows are melted. Remove from heat and immediately add the cream cheese, mixing thoroughly. Add whipped cream and mix together. Spread on top of cherry mixture and sprinkle with sliced almonds.
  • 4. Note: For more topping add more milk, marshmallows and cream cheese.

This was my grandmother Freda's 'famous' cherry salad. It was a huge hit at family gatherings. My mom mixes the lemon Jello, lemon juice, cream cheese and mayo in the blender. But here's the original recipe. Enjoy!

1 (3 ounce) package strawberry flavored Jell-O® mix
1 cup boiling water
1 (21 ounce) can cherry pie filling
1 (3 ounce) package lemon flavored Jell-O® mix
¾ cup boiling water
¼ cup lemon juice
1 (3 ounce) package cream cheese
⅓ cup mayonnaise
1 (8 ounce) can crushed pineapple, undrained
2 cups miniature marshmallows
½ cup whipped cream
½ cup chopped walnuts

Steps:

  • Dissolve the strawberry gelatin in 1 cup of boiling water. Stir in the cherry pie filling, then spread the mixture into a 7x11 inch pan, and refrigerate until nearly set, about 45 minutes.
  • Dissolve the lemon gelatin in 3/4 cup boiling water; stir in the lemon juice, and set aside. Mash the cream cheese in a separate bowl until soft, then stir in the mayonnaise. Pour the lemon gelatin into the cream cheese mixture and stir until smooth. Next, stir in the undrained pineapple. Finally, fold in the marshmallows and whipped cream. Spread the pineapple mixture over the chilled cherry layer, and sprinkle with chopped walnuts. Chill in the refrigerator until fully set, about 2 hours.
