Grilled Sweet Potato Fries with Honey-Mustard-Mint Dipping Sauce image

1/4 cup Dijon mustard
1/4 cup whole-grain mustard
1/4 cup honey
2 tablespoons chopped fresh mint
Kosher salt and freshly ground black pepper
3 large sweet potatoes
Canola oil, for brushing

Steps:

  • Whisk together the Dijon mustard, whole-grain mustard, honey and mint in a bowl, and season with salt and pepper. Let sit at room temperature while you prepare the fries.
  • Put the sweet potatoes in a large pot, cover with water and add 1 tablespoon salt. Bring to a boil and cook until a paring knife inserted into the center of the potatoes meets with some resistance, 10 to 15 minutes depending on size. When cool enough to handle, cut each sweet potato into 6 wedges.
  • Heat a gas or charcoal grill to medium-high. Brush the potato wedges with oil and season with salt and pepper. Grill until slightly charred and cooked through, 2 to 3 minutes per side. Remove to a platter and serve with the dipping sauce.

6 large sweet potatoes
salt
5 tablespoons olive oil
6 garlic cloves, finely chopped
2 teaspoons thyme leaves, finely chopped
1/4 teaspoon red chili pepper flakes
2 tablespoons flat leaf parsley, finely chopped

Steps:

  • Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 15 minutes. Drain and let cool slightly.
  • Heat the grill to high.
  • While the potatoes are cooling, heat 2 tablespoons of the oil in a small saute pan on the grates of the grill. Add the garlic, thyme and chili flakes and cook until the garlic is just soft, about 45 seconds. Remove from the heat.
  • Slice each potato in half lengthwise then slice each half into 3 or 4 wedges, depending on the size. Brush the wedges with the remaining 3 tablespoons of oil and season with salt. Grill until lightly golden brown and just cooked through, about 6 minutes. Remove to a platter and immediately toss with the garlic mixture and chopped parsley.

3 sweet potatoes, unpeeled
Kosher salt
2 teaspoons finely grated lime zest
Pinch of cayenne pepper
1/4 cup canola oil
Freshly ground pepper
1/4 cup finely chopped fresh cilantro

Steps:

  • Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
  • Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
  • Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

2 lbs sweet potatoes, cut into skinny fries (or 2-inch long wedges)
1 cup good quality mayonnaise, divided
1/4 cup barbecue sauce (your favorite)

Steps:

  • Preheat oven to 425*F.
  • Spray cookie sheets(or baking pans) with nonstick cooking spray(you may line with foil for quicker cleanup if you wish). Set aside.
  • Mix potatos with 1/2 cup mayonnaise in a large bowl, toss to coat. Arrange in a single layer on cookie sheets.
  • Bake 20 minutes. Rotate pans and bake an additional 15 minutes or until poatoes are golden.
  • Combine remaining 1/2 cup mayonnaise with 1/4 cup barbeque sauce in a small bowl.

1 tablespoon Bobby Flay Poultry Rub
Kosher salt and black pepper
1/4 cup maple syrup
2 to 3 tablespoons Dijon mustard

  • Brush the potato wedges with oil and season with rub, salt and pepper. Grill, turning once, until nicely marked.

1 1/2 teaspoons salt, plus more for seasoning water
2 large sweet potatoes, washed
2 tablespoons olive oil
3 tablespoons brown sugar
1 teaspoon cayenne pepper, plus more if desired
1 1/2 teaspoons freshly grated black pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Preheat a grill to medium-high heat and oil the grates.
  • In a large pot, add the sweet potatoes and cover with cold salted water. Bring them to a boil over medium heat. Lower the heat and simmer until you can pierce each potato with a paring knife and there is little to no resistance, approximately 25 to 30 minutes. Do not overcook.
  • Transfer the sweet potatoes to a large bowl of cold water to halt their cooking process. Once the potatoes are cool, drain well. Peel the potatoes and cut them lengthwise into thick wedges, about 6 wedges per potato. Put the potatoes into a large bowl and coat them with olive oil. Add the brown sugar, cayenne, salt, pepper, cinnamon and cloves and toss to evenly coat. Put the wedges on the preheated grill. Cook until they are heated through and caramelized, approximately 3 to 4 minutes per side. Serve them as they are, or with a side of mint and cumin aioli, if desired.
