BOB EVANS SAUSAGE MEATLOAF
I found this one on a complimentary recipe card at a Bob Evans restaurant. It's a little different and the kids enjoyed it.

Steps:
- Preheat oven to 350 degrees.
- In medium bowl, add sausage, cheese, oatmeal, 1/4 cup ketchup, onion and egg.
- Mix thoroughly until well combined.
- Shape into a loaf and place in a greased 9"X4" loaf pan.
- Spread remaining 1/4 cup ketchup on top.
- Bake 60-70 minutes, or until done.

Steps:
- In a large cast iron skillet add a little olive oil or cooking oil. Heat to med-high. In a large sauce pan add beef stock. bring to a boil. Add uncooked pasta. Bring back to a low boil and cook pasta. ( I add a little salt and pepper, and some butte.) Cook for 8-10 minutes Wile pasta is cooking. In the skillet cook bacon till almost cooked.Remove from the pan and let drain.
- Remove all but a tablespoon of dripping's. Add ground beef and cook till no longer pink. Remove and save.. Remove any fluids. Add a tablespoon of bacon drippings cook sausage till no longer pink. Remove from pan. Add to cooked ground beef and mix. add a teaspoon of butter and cook onions for 5-8 minutes. mix with the meat Set aside for now.
- Remove cooked pasta from sauce pan and reserve the stock. Now add the 2 cans of cream of mushroom soup and stir. add a few splashes of hot sauce. Add pasta, beef and sausage mixture to the sauce pan and mix... Pre-heat oven to 375. In a 12x12 baking dish dish. Pour pasta mixture into the baking dish. Sprinkle bread crumbs over the top. Cover with foil. Bake in the oven for 25-30 minutes.. Remove foil. Spread chees over the top and bake for 10-15 minutes.. Remove from oven and let cool for 5 minutes. Serve warm..
BOB'S STUFFED BANANA PEPPERS
This is an awesome recipe for banana peppers stuffed with an Italian sausage mixture and baked in a delicious tomato sauce. We get requests to make them for the guys my husband works with all the time.

Steps:
- Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
- Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
- Meanwhile, in a large mixing bowl, combine egg, 1 teaspoon salt, 1/4 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in hot sausage, mild sausage, bread crumbs and 1 cup of the tomato sauce mixture.
- Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
- Bake uncovered in preheated oven for 1 hour.

SAUSAGE AND BEEF CASSEROLE
I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

Steps:
- Heat skillet to medium heat.
- Brown sausage well, When finished put the sausage into a large casserole dish.
- Brown the stew beef and add to the sausage.
- Sauté onion and garlic till tender.
- Add green peppers cook additional minute.
- Add into meat.
- Stir-fry potatoes a little and add to meat.
- Add beans, bouillon and seasonings.
- Stir well.
- Cover and bake 350 1 hour and 15 minutes or until potatoes are tender.

This is a hardy casserole, our friend Joe, loves making this. He changes up the sausage from time to time but always uses something with a kick to it.

Steps:
- Cook first 6 ingredients in large heavy saucepan over medium-high heat until sausage and beef are brown, crumbling with fork, about 5 minutes.
- Add tomatoes, 2 tablespoons juice (from tomatoes), tomato paste and pepper flakes; simmer 5 minutes, breaking up tomatoes with back of spoon.
- Add kidney beans and heat through.
- Season with salt and pepper.
- Add mostaccioli, Parmesan and parsley and toss to combine.
- Spray 9-by-13-inch baking pan with nonstick spray.
- Transfer mixture to prepared pan.
- Sprinkle with cheese.
- Bake until cheese melts, about 30 minutes.
