Delicious quick bread for bread machines. Blueberries, walnuts and just a little grated lemon peel for that extra zing!

⅓ cup margarine, softened
½ cup milk
2 eggs
2 ½ cups all-purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup frozen blueberries, thawed, drained
½ cup chopped walnuts
½ teaspoon grated lemon zest

Steps:

  • In a large bowl, beat together the margarine, milk, eggs and sugar. Stir in the flour, baking powder, baking soda and salt. Carefully fold in the blueberries and walnuts. Fold in lemon zest.
  • Spray bread machine pan with cooking spray. Pour mixture into bread machine pan and put pan into bread machine. Select Quick Bread/Cake cycle, and press Start. Check in 1 minute to see if mixture is well blended. Cook until cake cycle stops. Cool completely in bread machine pan before removing.

Banana - Applesauce - Blueberry and Walnut Fat-Free Quick Bread image

I was looking for something more healthy for a quick breakfast or snack. This is a great moist quick bread that comes together quickly and husband thinks is good too. It's good plain or with a "touch" of peanut butter (a favorite of my husband) across the top. I divide this into two 8 x 4 loaf pans instead of one 9 x 5 pan. It bakes quicker, stays moist, and goes a bit farther without my husband thinking he's not getting enough too.

3 over-ripe bananas
2 tablespoons lemon juice
1/2 cup unsweetened applesauce (I've used up to a total of 1 cup of applesauce if the mixture seems too stiff or dry)
1/2 cup packed brown sugar
2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/8-1/4 teaspoon cardamom
1 cup fresh blueberries
1/2 chopped walnuts

Steps:

  • Pre-heat oven to 350.
  • Spray two 8 x 4 loaf pans with non-stick spray.
  • In large bowl, blend together bananas, lemon juice, applesauce and brown sugar. I use a hand-held blender, which purres everything quickly and evenly.
  • In another large bowl, wisk together dry ingredients.
  • Add to dry mixture blueberries and nuts and toss until flour coated. This helps to prevent the berries and nuts from settling to the bottom during baking.
  • Add flour-berry/nut mixture to the moist-banana mixture. Mix together by hand folding contents until all is moistened being careful not to overmix.
  • Divide final mixture into the two loaf pans, spreading contents evenly. Place in oven center for about 35 to 40 minutes, until tooth pick comes out clean and the tops are lightly golden brown. I've found the tooth pick test happens first but wait about 5 or so more minutes for the tops to brown.
  • Remove from oven and cool. Even better when served the next day. I cut the loaves into 1 inch thick slices, serving 2 per person.
  • I've also substitued coarsely chopped sweet cherries (1 cup) and cinnamon (1 tsp) for the blueberries and cardamom. Very, Very good too, for all those cherry lovers out there!

This recipe began as a scout project back in the 1970's as a cranberry nut bread, but I prefer blue berries. Black walnuts have a distinct strong flavor, so don't use any more than recipe calls for.

1 c shelled walnuts,chopped
2 c all-purpose flour(whole wheat)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c splendar (sugar)
2 Tbsp lemon zest, grated
3/4 c buttermilk
2 eggs
1 tsp pure vanilla extract (or lemon extract
2 Tbsp unsalted melted butter
2 Tbsp canola oil
1 c fresh,or frozen blueberries(drain juce out.)

Steps:

  • 1. Preheat oven to 350*f.
  • 2. Spread a single layer of walnuts. onto a baking sheet.Toast walnuts in preheated oven,for 10-12 minutes(until lightly brown(let it cool)
  • 3. Using a whisk, mix the flour,baking powder,baking soda,and salt in a large bowl.
  • 4. Using a whisk ,mix sugar lemon zest ,and buttermilk,eggs vanilla,melted butter,and oil in a medium bowl.
  • 5. POUR liquid ingredients into a pit created in the center of the dry ingredients,and lightly conbine.Take care not to over mix.Introduce chopped walnuts ,and blueberries by folding, into mixture.
  • 6. FLOUR and greasean 8"x4" loaf pan.Spread mixture ,intoprepared loaf pan.
  • 7. BAKE for 55 minutes to 1 hour(using a toothpick in center of the loaf that it comes clear.When finished baking, let cool for 20 minutes on rack,remove from pan and cool room temperature.
  • 8. GLAZE. 3 tablespoons sugar, grandulated (splenda) 2Tablespoons lemon jice.
  • 9. TO create glaze ,add sugar an lemon juice, to a small sausepan.BOIL over high heat,then reduce heat, and stir until sugar has diiolved.

1 cup walnuts, chopped
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup granulated sugar
2 tablespoons lemon zest
¾ cup buttermilk
2 large eggs eggs
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter, melted
2 tablespoons canola oil
1 cup fresh or frozen blueberries
3 tablespoons granulated sugar
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • In a dry skillet, toast walnuts over medium-high heat for 1 to 2 minutes.
  • In a large bowl, combine all-purpose flour, baking powder, baking soda and salt. Whisk to combine.
  • In a medium bowl, combine sugar, lemon zest, buttermilk, eggs, vanilla, melted butter and oil. Whisk just to combine.
  • Make a well in center of dry ingredients. Add liquid ingredients and mix gently just to combine; do not over-mix. Gently fold in walnuts and blueberries.
  • Pour batter into a greased and floured 8 x 4-inch loaf pan. Bake in preheated oven for 55 to 60 minutes or until tester inserted in center comes out clean. Cool on rack for 20 minutes; remove from pan, cool to room temperature.
  • To make the glaze, combine sugar and lemon juice in a small saucepan. Bring to boil over high heat, then reduce heat and continue stirring until sugar dissolves.
  • Brush glaze over bread while still warm.
