Incredible Oat Bran Muffins, Plain, Blueberry or Banana image

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

Number Of Ingredients 8

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

2 large eggs
1/2 cup sugar
3 overripe bananas, smashed (about 1 cup)
1/2 cup plain yogurt
1 tablespoon vegetable oil
1 tablespoon vanilla
1 tsp honey
1 1/4 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup old fashioned oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
dash of nutmeg
3/4 cup dried blueberries
3/4 cup walnuts, chopped

Steps:

  • 1) Preheat oven to 400°. Grease and flour muffin tins. 2) Mix egg and sugar until light and thick, about 5 minutes. 3) Add mashed banana, yogurt, oil, vanilla, and honey. Mix well. 4) In a separate bowl, combine the flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix thoroughly. 5) Fold in dry ingredients to the wet mixture. Continue to fold carefully until mixture is homogeneous. 6) Fold in dried blueberries and 3/4 of the chopped walnuts. 7) Distribute batter evenly, and top each muffin with remaining walnut crumbles. 8) Place in oven for about 20 minutes, until tester comes out clean. 9) Using knife, remove muffins from tin and let cool for 10 minutes. 10) Serve warm or at room temperature.

My blueberry muffin recipe, that is gone before I turn around if left on the counter. My husband adores it, and can easily eat 4-5, bless his heart! I experimented with this for low fat in 1994, and have made it since.

Number Of Ingredients 11

1 cup all-purpose flour
1 cup oats
1/2 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup wheat germ
1/4 teaspoon salt
2 egg whites
2 cups bananas, mashed (or 5-6)
1/4 cup melted soft margarine
1 cup wild blueberries, fresh or frozen

Steps:

  • Spray 12 large muffin cups with Pam or use paper cups.
  • Combine first 7 dry ingredients in mixing bowl.
  • Mix well.
  • Beat egg whites, banana and melted margarine together until smooth.
  • Add banana mixture to dry ingredients.
  • Stir just until moistened.
  • Fold in blueberries.
  • Fill muffin cups almost full.
  • Bake at 375 degrees F for 20-25 minutes.
