MAUREEN ABOOD'S LAVENDER AND ORANGE BLOSSOM COOKIES
These buttery, shortbread-like cookies, called graybeh, have a particularly crunchy texture that comes from clarified butter. If you've never clarified butter, this recipe is a good place to start, and the process is extremely simple (though you do have to plan it several hours ahead). If you're not a lavender fan, feel free to leave it out. And for a more familiar flavor, substitute vanilla extract for the orange blossom water. These cookies keep well, so you can make them up to a week in advance.

Steps:
- Heat oven to 325 degrees with a rack in the center of the oven. Line two sheet pans (not dark metal) with parchment paper.
- In an electric mixer, beat the butter on high for about 6 minutes, until light and fluffy. Add 3/4 cup (92 grams) confectioners' sugar, lavender and salt and beat another 2 minutes. Scrape down the sides of the bowl, and with the mixer on low speed, add orange blossom water and mix to combine.
- Add flour to butter 1/2 cup (about 65 grams) at a time, until dough is crumbly and slightly dry but still able to hold together when squeezed, adding additional flour if necessary.
- Divide dough into quarters and press each into a long narrow log about 1 inch high and 1 inch wide. With a sharp knife, cut into log diagonally to make diamond-shaped cookies 1 to 2 inches long. Use a spatula to transfer cookies to sheet pans, spaced about 2 inches apart. Bake for 15 to 20 minutes, rotating pan halfway through. Cookies should be golden brown at the edges.
- Sift remaining confectioners' sugar over baked cookies while still warm. Store in an airtight container for up to 1 week.

Steps:
- Sugar Cookies: In a medium bowl, whisk together flour, salt, and baking powder. In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and granulated sugar on medium-high speed until light and fluffy. Add vanilla, egg, and brandy and continue beating until well combined. Reduce speed to low and add flour mixture, beating until just combined. Shape dough into a disk, wrap in plastic, and refrigerate until firm, at least 45 minutes and up to overnight.
- Preheat oven to 350 degrees. Line two baking sheets with parchment. On a lightly floured surface, roll out dough to 1/4 inch thick. Use a 2 5/8-inch square cutter to cut out squares. Reroll scraps once (you should have about 16 cookies). Transfer to prepared sheets, spaced about 1 inch apart. Refrigerate at least 1 hour. Bake until set and golden around edges, 15 to 20 minutes. Transfer sheets to wire racks and let cool completely.
- Royal Icing: In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites on medium speed until frothy. Reduce speed to low and add confectioners' sugar, 1/4 cup at a time, increasing speed to medium-high between each addition, until mixture has consistency of shampoo. Add lemon juice. Tint with pink food color until desired shade is reached. Transfer mixture to a shallow bowl. If not using immediately, icing can be stored at room temperature, with plastic wrap pressed directly on surface, up to 2 days, or in refrigerator, well wrapped in plastic, up to 3 days. Bring to room temperature before using.
- Working with one cookie at a time, dip cookie top-side down in icing to completely coat surface, allowing excess glaze to drip back into bowl. Invert cookie and clean edges with your finger, if desired. Transfer to a wire rack or baking sheet and let stand at room temperature until completely dry, at least 12 hours and up to overnight. Reserve remaining icing for decorations, at room temperature, with plastic wrap pressed directly on surface, or in refrigerator, well wrapped in plastic. Bring to room temperature before using.
- Stir additional confectioners' sugar into icing until it has consistency of toothpaste. Divide mixture into 3 portions and tint with pink food color until 3 desired shades are reached. Transfer each color to a piping bag fitted with a small plain round or star tip (such as Ateco #2, #3, or #13).
- Place luster dust in a small bowl. Stir in vodka, a little at a time, until mixture has consistency of thick watercolor paint. Using a small food-safe paintbrush, paint a tree branch design on surface of each cookie. Using the 3 shades of pink icing, pipe small blossoms on branches. Let stand at room temperature until completely dry, about 4 hours. Cookies can be stored in an airtight container at room temperature up to 3 days.

WILTON COOKIE BLOSSOM SUGAR COOKIES
These are an easy sugar cookie to make because they require no refrigeration of the dough before rolling it out. Updated 11/2009 - after reading some of the reviews that said the dough was crumbly, I updated the ingredients to state that the unsalted butter should be softened to room temperature. I am hoping that solves the crumbly dough problem. I've never experienced that and I am thinking that is because I soften the butter before mixing. Hope that helps everyone.

ORANGE BLOSSOM COOKIES
This looks very much like a recipe I have made for years but lost a few years ago. They were a family favorite. Have not made them but am posting for safe keeping until I get a new stove that does not burn my cookies LOL I have been zmailed that this is a very sticky dough and hard to roll even after an overnight chill. I did a half batch and chilled for maybe 15 minutes in the freezer a then rolled on a well floured board with no problem. Could be brands of flour I am not sure. So if you decide to make these you may need to add extra flour. Plus do not roll to thin .

POINSETTIA BLOSSOM COOKIES
I combined a couple of recipes to come up with this one after being inspired by cookies I saw on the cover of a magazine. The dough tends to be a bit sticky, so make sure your knife is sharp when cutting the petals; you may need to spray it with non-stick cooking spray as well. We like these cookies made with black cherry or cherry Jell-O. The additional food coloring makes the color a bit more vivid. Use red paste food coloring for a really bright presentation. These cookies would also be cute for Easter, by using lemon, lime or orange-flavored Jell-O.

Cover bowl with plastic wrap and refrigerate about 2 hours or until dough is firm. Shape dough into 1 1/4-inch balls and roll in red-colored sugar. Place balls about 2 inches apart on greased baking sheets. Using a sharp knife, make cuts in top of each ball, not quite all the way through, to make 6 pie-shaped wedges. Spread wedges apart very slightly to form flower petals; cookies will separate and flatten as they bake. Bake 8-10 minutes or until set. If using candies, immediately press one candy in center of each cookie. Let cookies cool on baking sheet a minute and then remove to wire rack to cool completely. Steps:
- 1. While watching a show sit down and unwrap those sweet kisses and place in a bowl for cookie making time. Set oven to 375.
- 2. Get out a large bowl and beat together shortening and peanut butter.
- 3. Add both your sugars and mix till fluffy.
- 4. Add your egg, vanilla and milk and mix again. Now it's time to gradually(about 3/4 cup at a time) add your baking soda, salt and flour to the mixture. Blend well.
- 5. Now you are ready to roll. Scoop out dough and shape into 1 inch balls and then roll in the granulated sugar and place on cookie sheet.
- 6. Bake 8 to 10 minutes....I take mine out as soon as I see a few cracks on the side of the cookies which is 8 to 9 minutes. Immediately remove from oven and place your kisses down in the center firmly but gently and quickly. Once you add the kiss the cookies crack on the sides a little but that's what they are supposed to do. Remove from pan on to a cooling rack. ---- I do not grease cookie pans anymore but ALWAYS USE parchment paper.
- 7. Ready to eat.
