1/4 seedless cucumber cut into sticks, for garnish

Steps:

  • Combine tequila, lime juice, tomato juice, hot sauce and some pepper, to taste, and olive juice in a cocktail shaker and shake to combine. Pour over ice and garnish with olives, beans and cucumbers.

Steps:

  • Mix the tequila, pickle brine, lime juice, Worcestershire, hot sauce, celery seed, celery salt, horseradish and garlic powder together in a measuring cup or bowl. Add the cocktail onions to the mix and let soak at least 30 minutes and up to overnight.
  • Transfer the infused onions to a bowl with a slotted spoon. Stir together the infused tequila and tomato vegetable juice in a large pitcher. Stuff the olives with the feta cheese.
  • Thread 12-inch skewers with all your favorite fixings: stuffed olives, pickled okra or green beans, grape tomatoes, bacon and cocktail onions. Serve the tequila mixture over ice with a skewer of fixings and the celery.

1 Fresno chile, seeded and coarsely chopped, some reserved and finely chopped
1 jalapeno or serrano chile, seeded and coarsely chopped, some reserved and finely chopped
1/2 small red onion, coarsely chopped, plus 2 tablespoons finely chopped
1/4 seedless cucumber, coarsely chopped, plus 2 tablespoons finely chopped
Small handful fresh cilantro leaves, plus 1 tablespoon finely chopped
Salt
1 cup ice
4 shots (3/4 cup) tequila, such as Patron Silver
2 tablespoons freshly grated horseradish
1 tablespoon hot sauce, such as Tabasco
1 tablespoon Worcestershire sauce
1 slice white bread, crust removed
1 clove garlic, crushed
One 32-ounce can San Marzano tomatoes
Fat drizzle EVOO
Juice of 2 limes

Steps:

  • In a small bowl, combine the finely chopped celery tops, reserved Fresno chiles, reserved jalapenos, finely chopped onions, finely chopped cucumbers, finely chopped cilantro and some salt. Set the salsa garnish aside for a later use.
  • In high-power blender or food processor add the ice, tequila, horseradish, hot sauce, Worcestershire, bread, garlic, tomatoes, EVOO, lime juice, the remaining celery, Fresno chiles, jalapenos, onions, cucumbers and cilantro.
  • Pulse-chop to get it going then process until almost smooth. Taste and adjust the seasoning and texture. Pour the gazpacho into the shot glasses and garnish with the reserved salsa topping to serve.

6 ounces snap-e-tom tomato and green chile mix
2 green olives
5 dashes Tabasco sauce

Steps:

  • Slowly pour beer into a large glass (20 oz) so it doesn't get too big of a head.
  • Shake up the can of Snap-E-Tom.
  • Slowly pour the can of Snap-E-Tom into the glass
  • Add Tabasco sauce to taste
  • Stab the olives with a toothpick and use it to create a gentle whirlpool in the glass to mix ingredients.
  • Slide the two olives away from each other and hang on the side of the glass with one olive in the beer and one on the edge of the glass.
  • Enjoy.

3 lbs. yellow tomatoes, peeled and cut into large pieces
1 or 2 green jalapeno peppers, stem removed and cut into large pieces
1 lemon, cut into wedges
1 oz. fennel spice rub
6 fennel fronds
gray sea salt

Steps:

  • In a stainless steel mixing bowl, toss the tomatoes with a little gray salt followed by the jalapeno pepper. Juice the mixture through a juice extractor (such as a Juiceman) then pour the mixture into a pitcher. Refrigerate. This can be done up to six hours before serving.
  • Rub the top rims of the glasses with a lemon wedge, and dip the rims in a saucer filled with the fennel spice. The spice will cling to the rim of the glass and flavor the drink as you sip. Fill the glasses with ice. Pour the tomato juice into each glass about an inch from the top. Garnish each with a fennel frond.

3 pounds tomatoes (heirloom if possible), cored and roughly cut
2 to 3 jalapeno chilis, stems removed and roughly cut
1 bulb fennel, white part roughly cut
Salt and freshly ground black pepper
3 tablespoons Worcestershire sauce
1 tablespoon extra-virgin olive oil
1 lemon, halved
1/2 cup favorite spice rub
6 to 8 whole red jalapenos
Jalapeno Ice Cubes, recipe follows
Lemon vodka
3 jalapeno peppers
1 quart fresh, cold water
1/2 lemon
4 fresh basil leaves
Salt
Black pepper

Steps:

  • Place tomatoes, jalapenos, and fennel in a bowl. Season liberally with pepper, salt and the Worchestershire sauce. Coat with olive oil, tossing lightly. Put a few of the tomatoes in the blender and liquefy - this will make it easier to puree the rest of the solids. Add the fennel/tomato/jalapeno mixture to a blender and puree until liquefied. Store in refrigerator up to 6 hours until chilled.
  • Hint: If you can find them, heirloom tomatoes can really boost the flavor of this drink. Heirloom tomatoes are typically varieties that were grown over 50 years ago, before tomatoes were bred for ease of picking and distribution. Heirlooms tend to be a little more acidic than modern commercial tomatoes, and often the fresh tomato flavor is more pronounced.
  • Assembling the cocktail: Rub a cut lemon around the rim of a chilled martini glass. Dip the glass, upside down, in salt or your favorite spice rub. Slice the tip of a red jalapeno pepper vertically and slip over the rim. Place 1 or 2 of the jalapeno ice cubes in each glass, pour chilled bloody maria mixture on top, and top each glass with 1 ounce of lemon vodka. Stir carefully and serve.
  • Hint: If you don't have lemon vodka, use regular vodka and squeeze a little lemon juice in each glass.
  • Remove the tops and stems of the jalapenos and slice. Place the water in a blender and add the jalapenos, seeds and all. Add the lemon to the blender, peel and all. Add the basil, a pinch of salt, and some ground black pepper, to taste. Puree in the blender until everything is incorporated. Strain through a sieve and pour into ice cube trays and freeze overnight until solid.

12 ounces tomato juice

6 dashes Worcestershire sauce
1 pinch celery salt

Tabasco to taste
Mini Sliders, recipe follows, for garnish
1 cup cherry tomatoes, halved
1 teaspoon fresh grated horseradish
1/2 teaspoon finely minced shallot
1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 ounces coarsely ground 20 percent fat ground beef
Clarified butter or canola oil
Four 2-inch-wide brioche slider buns, split
1 tablespoon Dijon mustard
4 paper-thin slices preserved lemon, seeds removed
4 cornichons
4 wooden skewers

Steps:

  • In a cocktail shaker, stir together the tequila, harissa paste, tomato juice, lime juice, Worcestershire sauce, celery salt, horseradish, onion and Tabasco. Divide among 4 ice-filled highball glasses. Garnish with Mini Sliders.
  • Preheat the oven to 400 degrees F.
  • Toss the cherry tomatoes with the horseradish, shallot and olive oil. Season with salt and pepper. Place the tomatoes in a baking dish and roast until they are just wilted, about 5 minutes. Allow to cool to room temperature.
  • Divide the ground beef into 4 even patties slightly wider than the buns (the beef will shrink during cooking); do not overwork the meat, handle it just enough to form the patties. Season the patties liberally with salt and pepper on both sides.
  • Heat a griddle or cast-iron pan over medium-high heat. Place a small amount of clarified butter or canola oil into the pan or griddle, and sear the burgers on both sides until charred. Transfer burgers to the oven and cook until they reach your desired temperature, about 4 minutes for medium rare.
  • Allow the burgers to rest for 5 minutes. In the same pan, toast the buns until golden brown. Brush one side of the buns with mustard, and place the patties on the buns. Top with slices of preserved lemon, followed by the tomatoes. Cover with the bun tops and skewer one cornichon on a wooden skewer and use it to secure the slider. Serve warm.
