My family has enjoyed these bars as a potluck dessert, brown-bag treat and anytime snack many times throughout the years. Butterscotch or peanut butter chips can be used in place of the chocolate chips.

1/4 cup butter-flavored shortening
1-1/2 cups packed brown sugar
2 large eggs, room temperature
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in nuts and chocolate chips. , Spread into a greased 11x7-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. Cut into bars.

1 teaspoon vanilla

Steps:

  • Melt butter; gently stir in the remaining ingredients, EXCEPT chocolate chips, just until mixed. Do not beat!
  • Pat into greased 13x9 inch pan. Sprinkle with chocolate chips.

Steps:

  • Heat oven to 350°F. In large bowl, beat granulated sugar, 1/2 cup brown sugar, 1/2 cup butter, 1 teaspoon vanilla and the eggs with electric mixer on medium speed, or mix with spoon, until light and fluffy. Stir in flour, baking powder and salt. In ungreased 13x9-inch pan, spread batter evenly.
  • Bake 20 to 23 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely, about 45 minutes.
  • In 2-quart saucepan, melt 1/3 cup butter over low heat. Stir in 2/3 cup brown sugar; cook over low heat 2 minutes, stirring constantly. Stir in milk; cook until mixture comes to a rolling boil. Remove from heat. Gradually stir in powdered sugar and vanilla, mixing well with spoon after each addition, until smooth and spreadable. If necessary, add more milk, a few drops at a time. Spread frosting over brownies. Immediately sprinkle with pecans. For brownies, cut into 6 rows by 6 rows.

1 cup vegetable oil
1 lb brown sugar (2 1/4 c packed)

2 cups chopped walnuts

Steps:

  • Spray a jelly roll pan with no-stick spray (10x15).
  • Preheat oven to 350°.
  • Stir together dry ingredients (first 3); set aside.
  • In large bowl combine brown sugar and oil till combined well; beat in eggs one at a time.
  • Add vanilla and blend well.
  • Add flour mixture, chips and nuts; mix completely.

1/4 cup butter (1/2 stick) or 1/4 cup margarine (1/2 stick)

  • PREHEAT oven to 350°F.

1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees. Grease a 9" X 12" baking pan.
  • Melt butter with brown sugar in saucepan over medium heat, stirring constantly. Let cool slightly. Pour into mixer bowl.
  • Add eggs, vanilla and water. Mix well.
  • Sift together flour, baking powder, baking soda and salt. Beat into butter mixture.
  • Stir in chocolate chips.
  • Optional: Add walnuts and one blonde wig.
  • Bake at 350 degrees for 20 to 25 minutes.

Another terrific brownie recipe I picked up a few years back. If you use the non-fat cream cheese and sour cream these have the added bonus of being fairly low in fat.

1 (8 ounce) package fat free cream cheese, at room temperature
1/2 cup granulated sugar
2 large egg whites
1/4 cup nonfat sour cream
1 1/4 cups all-purpose flour
1 tablespoon all-purpose flour
3 teaspoons vanilla, divided
1 teaspoon baking powder
1/4 cup walnuts, chopped
1/3 cup pure maple syrup
1/3 cup butter, at room temperature
1/3 cup brown sugar, firmly packed
1 large egg

Steps:

  • In a small bowl, combine cream cheese, granulated sugar, egg whites, sour cream, 1 tablespoon of the flour, and 1 teaspoon of the vanilla.
  • Beat until smooth; set aside.
  • In another small bowl, stir together the remaining 1 1/4 cups flour, baking powder and walnuts; set aside.
  • In a large bowl, combine syrup, brown sugar, butter, egg, and the remaining 2 teaspoons vanilla.
  • Beat until smooth.
  • Add flour mixture; beat until dry ingredients are evenly moistened.
  • Pour two-thirds of the brownie batter into a lightly oiled 8-inch baking pan.
  • Spread to make level.
  • Pour cheese mixture from step 1 evenly over batter.
  • Drop remaining batter by spoonfuls over cheese mixture; swirl with a knife to blend batter slightly with cheese mixture.
  • Bake in a 350°F oven until a wooden pick inserted in center comes out clean (about 25 minutes; pierce brownie, not cheese mixture).
  • Let cool in a pan on a rack, then cut into 2-inch squares.
