1 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup sour cream
1 cup 4% cottage cheese
4 large eggs, room temperature, lightly beaten
Strawberry or blueberry syrup
Sliced fresh strawberries, optional

Steps:

  • In a large bowl, combine the flour, sugar and salt. Stir in the sour cream, cottage cheese and eggs until blended. , Pour batter by 1/4 cupfuls onto a greased hot griddle in batches; turn when bubbles form on top. Cook until the second side is golden brown. Serve with syrup and, if desired, strawberries.

1 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup reduced-fat sour cream
1 cup low fat cottage cheese
4 eggs, lightly beaten
strawberry flavored syrup or blueberry-flavored syrup
fresh strawberries, sliced (optional)

Steps:

  • In a large bowl, combine the flour, sugar and salt. Stir in the sour cream, cottage cheese and eggs until blended.
  • Pour batter by 1/4 cupful onto a greased hot griddle in batches; turn when bubbles form on top. Cook until the second side is golden brown. Serve with syrup and strawberries if desired.

3/4 cup low fat cottage cheese
3/4 cup fat free sour cream or plain yogurt
1/2 tsp. vanilla extract
1/4 tsp. baking soda
3/4 tsp. baking powder
3/4 cup all-purpose flour
1 pinch salt
2 egg whites
2 tsp sugar
cooking spray
1/2 cup maple syrup
1 cup berries

Steps:

  • 1. In a medium bowl, mix the cottage cheese, sour cream, and vanilla. 2. In a small bowl, mix the dry ingredients (except the sugar), then gently stir into the cheese mixture. 3. Using a standing mixer fitted with a whisk or a handheld mixer, mix the egg whites and sugar together until soft peaks form. They will have doubled in volume; do not overmix or they will become dry. 4. With a spatula, mix in one third of the whites to lighten the cheese mixture, and then gently fold in the rest of the whites. 5. Spray a large griddle or nonstick pan with cooking spray and heat the pan over medium-high heat. Using a 1/4 cup measure or large spoon, drop dollops of batter onto the hot pan and smooth to form silver dollar pancakes. Cook for 2 to 3 minutes until lightly golden brown and turn, cooking an additional 1 to 2 minutes until cooked through. Keep warm as you cook the remaining batter. 6. For the syrup: combine the maple syrup and the blueberries in a small saucepan and cook over low heat until the mixture is warm, stirring occasionally, about 2 to 3 minutes.

1/2 cup whole milk ricotta cheese
1 Tbs. granulated sugar
1/4 tsp. vanilla extract
1 1/4 cups ebelskiver pancake mix
2 eggs, separated
1 cup milk
2 Tbs. unsalted butter, melted, plus more for cooking
1/2 cup strawberry rhubarb jam
Confectioners' sugar for dusting

Steps:

  • In a small bowl, stir together the ricotta, granulated sugar and vanilla until well incorporated. Refrigerate until ready to use. Using the pancake mix, eggs, milk and the 2 Tbs. butter, prepare the batter according to the package instructions. Brush each well of a filled-pancake pan with melted butter and heat over medium heat until the butter begins to bubble. Pour 1 Tbs. batter into each well. Place 1 tsp. ricotta mixture in the center of each pancake and top with 1 Tbs. batter. Cook until the bottoms are golden brown, 3 to 4 minutes. Using ebelskiver turning tools or 2 wooden skewers, turn the pancakes over and cook until golden brown, about 3 minutes more. Transfer the pancakes to a large plate. Repeat with the remaining batter and filling. Put the jam in a microwavable bowl and microwave at 15-second intervals until warm. Dust the tops of the pancakes with confectioners' sugar and drizzle with the warm jam. Serve immediately. Makes about 21.
