Steps:

  • Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.
  • Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

3 tablespoons olive oil
2 large red bell peppers, seeded and cut into 1/2-inch strips
2 large yellow bell peppers, seeded and cut into 1/2-inch strips
2 cloves garlic, finely minced
Salt to taste
Ground black pepper to taste
1 tablespoon ​ red wine vinegar
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
Optional: toasted​ Italian bread

Steps:

  • Gather the ingredients.
  • In a large skillet, heat the olive oil over high heat.
  • Add the pepper strips, and sauté for 4 to 5 minutes or until the peppers begin to soften.
  • Turn down the heat to low and add the garlic , salt, and pepper. Sauté for 2 more minutes, being careful the garlic doesn't brown as it will turn bitter.
  • Turn off the heat and add the vinegar, basil, and parsley. Toss to combine.
  • Transfer to a bowl and allow to cool to room temperature.
  • Toss again before serving. Taste and adjust the seasoning if needed. Serve with toasted bread if desired.

2 tablespoons olive oil, divided
1 clove garlic, chopped
1 green chile, seeded and sliced
1 red bell pepper, seeded and julienned
1 orange bell pepper, seeded and julienned
1 yellow bell pepper, seeded and julienned
1/4 red onion, sliced
Zest and juice of 1 lemon
Kosher salt

Steps:

  • In a saute pan, heat 1 tablespoon olive oil, and then sweat the garlic, and green chili over medium heat. Add the red, orange, and yellow peppers, and saute for 1 minute.
  • Add the red onion, and lemon zest to the pan, and continue cooking until the peppers are slightly tender.
  • Remove the pan from the heat, season with salt, to taste, and add the lemon juice. Drizzle with the remaining 1 tablespoon olive oil, and serve.

1 1/2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt

Steps:

  • Thinly slice the peppers. Toss them in bowl with 1/2 tablespoon olive oil and the oregano, kosher salt and several grinds of black pepper.
  • In a large skillet, heat the remaining 1 tablespoon olive oil over medium high heat. Cook the peppers until tender and lightly charred, about 10 to 12 minutes for crisp tender or about 15 minutes for tender, stirring occasionally. Add additional salt to taste (we usually add a few more pinches).

This is my favorite way to have yellow squash. I have to fight my husband for it because he loves it, too. I am estimating all the amounts. I usually just toss mine together with whatever amounts of squash and red pepper I have. I love the bright red and yellow colors dancing in the pan! Sometimes I sprinkle a little balsamic vinegar at the end and let it caramelize on the squash....not as beautiful a color but quite tasty.

3 -4 yellow squash, sliced into 1/4-inch rounds
1 onion, chopped
1/2 red bell pepper, sliced thin
1 -2 tablespoon olive oil

Steps:

  • Heat a skillet to medium high and add olive oil.

1 onion, chopped
4 teaspoons ancho chili powder or other chili powder
2 14 1/2-ounce cans fire-roasted tomatoes in juice
1 1-pound package frozen black-eyed peas
2 1/2 cups canned vegetable broth
1 1/2 cups shredded Mexican four-cheese mix

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add bell peppers and onion; sauté until soft, about 5 minutes. Stir in chili powder; sauté 1 minute. Stir in tomatoes with juices, black-eyed peas, and broth. Bring to simmer. Reduce heat to medium-low; partially cover and simmer until peas are tender, about 35 minutes. Season stew to taste with salt and pepper. (Can be made 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before serving.)
  • Divide stew among 6 bowls. Top each with 1/4 cup cheese and serve.

STUFFED BELL PEPPERS FROM COOKING LIGHT

This is our favorite recipe for stuffed peppers. I like to use red or yellow peppers. The kids don't eat the peppers, but they do love the filling. This recipe doesn't make quite enough, so I always double it. The leftovers reheat wonderfully. You can also make the filling and freeze it for a later date. When you pull it out of the freezer and thaw, you'll only have to prepare the peppers, stuff them and bake.

1 (3 1/2 ounce) bag boil-in-the-bag rice
4 medium bell peppers
3/4 lb ground sirloin
1 cup chopped onion
1/2 cup chopped fresh parsley (I've left this out and also used dried without a problem)
1 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon ground allspice
2 cups bottled tomato and basil pasta sauce, divided
1/2 cup grated fresh parmesan cheese
1/2 cup dry red wine

Steps:

  • Preheat oven to 450.
  • Cook rice according to package directions. Set aside.
  • While rice cooks, cut tops off peppers, discard seeds. Place peppers, cut sides down, in an 8 inch square baking dish and microwave on high for 2 minutes, or until peppers are crisp-tender. Do not overcook.
  • In a large skillet, cook beef, onion, parsley, paprika, salt and allspice. Remove from heat.
  • Ad rice, 1/2 cup pasta sauce, and cheese to beef mixture, stir to combine.
  • While beef cooks, combine 1 1/2 cups pasta sauce and wine in a small saucepan; bring to a boil.
  • Spoon about 3/4 cup beef mixture into each pepper. Place peppers in a 2 quart baking dish coated with cooking spray, add wine mixture to pan (save some sauce to drizzle over the tops of the peppers). Cover with foil.
  • Bake at 450 for 20 minutes. Uncover; bake an additional 5 minutes or until ightly browned.

1 red bell pepper, cut julienne

Steps:

  • Cut off broccoli florets; cut large florets in half lengthwise.
  • Peel stems and slice 1/4-inch thick.
  • Steam broccoli until just crisp-tender, about 4 minutes for florets and 7 minutes for stems.
  • Rinse under cold water, drain and pat dry.
  • Melt butter in large skillet over medium heat.
