This delicious spinach salad is paired with blackberries, apple, honey roasted walnuts, and a blackberry vinaigrette--it's perfect for a dinner party when blackberries are in season.

3 tablespoons honey
3 cups raw walnut halves
½ tablespoon white sugar
½ teaspoon salt
½ cup extra-virgin olive oil
6 tablespoons seedless blackberry jam
4 tablespoons good quality balsamic vinegar
4 tablespoons orange juice
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon dried basil
salt and freshly cracked black pepper to taste
8 cups fresh spinach
1 sweet apple, chopped
1 Granny Smith apple, chopped
1 cucumber, sliced and quartered
2 red bell peppers, chopped
4 green onions, chopped
1 cup crumbled feta cheese
12 ounces fresh blackberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Place 3 tablespoons honey in a microwave-safe bowl. Microwave on Medium until honey liquefies, about 30 to 45 seconds. Add walnuts and stir to coat. Spread in one layer onto the prepared baking sheet and bake in the preheated oven until nuts have darkened slightly, 8 to 10 minutes. Remove from oven, sprinkle with 1/2 tablespoon sugar and 1/2 teaspoon salt, and stir to coat. Allow to cool.
  • Combine olive oil, blackberry jam, balsamic vinegar, orange juice, Dijon mustard, 2 teaspoons honey, basil, salt, and pepper in a lidded jar. Shake until vinaigrette is well combined and chill in the refrigerator until serving.
  • Combine spinach, sweet apple, Granny Smith apple, cucumber, bell peppers, green onions, feta, and cooled walnuts in a large bowl. Toss to combine. Carefully mix in blackberries. Drizzle with vinaigrette and toss.

1/4 cup red wine vinegar
6 fresh basil leaves
1 garlic clove, sliced

1 cup pecan halves
6 cups torn mixed greens
2 cups fresh blackberries
1 ripe avocado, peeled, pitted and cubed
3 tablespoons crumbled goat cheese
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 small garlic clove, minced
1/2 teaspoon dijon-style mustard
1/4 teaspoon sea salt (or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)

Steps:

  • Melt butter in a small skillet over medium heat. Saute pecans until lightly browned. Set aside until cool.

2T olive oil
9c mixed greens
1/3c pecans or walnuts, toasted
Goat cheese, amount to taste
1/2c blackberries
Lemon Vinaigrette
1/2c olive oil
Zest from 1 lemon
1/4c lemon juice
1/2t tarragon
1-2T honey
1t dijon mustard
1/2t salt
1/8 pepper

Steps:

  • Toss beets in olive oil. cover and bake at 425 degrees for 40 min. or until tender. Once cooled, peel and slice into 1/4 in. thick slices. Toast nuts . Combine ingredients for vinaigrette and shake well. Combine greens with beets, goat cheese. Toss with vinaigrette and top with nuts.

Made with Recipe #152603, this is a very nice refreshing vinaigrette that goes well with a spring mix salad. I'm not sure how long this will keep, endlessly I suppose, but we've always eaten it before it ever had a chance to go bad! The mustard acts as an emulsifier and the vinaigrette will barely separate during refrigeration.

1/2 cup blackberry vinegar
1 tablespoon Dijon mustard
1 1/2 tablespoons Splenda sugar substitute
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon dried thyme
3/4 cup canola oil

Steps:

  • Place all ingredients except the oil into a blender. Blend on high for one minute until mixed well, then turn blender off and taste. Adjust with more Splenda if you want a little sweeter vinaigrette.
  • Turn blender back on and with blender running, slowly add oil. Pour into jar with tight-fitting lid and store in the refrigerator.

2 teaspoon(s) minced shallots
1/4 teaspoon(s) minced garlic
1 tablespoon(s) honey
1/2 teaspoon(s) dijon mustard
4 tablespoon(s) balsamic vinegar
1/2 cup(s) olive oil

Steps:

  • Combine blackberries, shallots, garlic, honey, mustard and vinegar in a blender and process for 20 seconds.
  • Stop and scrape down sides before continuing.
  • Slowly drizzle oil into blender while running.
  • Strain dressing through fine mesh strainer.
  • Chill. Makes about 1 cup.
