1 (3 ounce) box blackberry Jell-O
1 (8 ounce) can blueberries
1 (8 ounce) can crushed pineapple
1 (8 ounce) package cream cheese
1 ounce sour cream
1 cup chopped pecans

Steps:

  • Pour juice off pineapples and let stand in refrigerator.
  • Mix Jello and let stand 1 hour in refrigerator.
  • Mix all the other ingredients together and add to Jello.
  • Then let stand in refrigerator all night.
  • It's ready to eat the next morning.

2 cups crushed pretzels
3/4 cup melted butter
1/2 teaspoon cinnamon
3 tablespoons sugar
8 ounces cream cheese, softened
8 ounces Cool Whip, thawed
1/4 cup sugar
1/2 teaspoon vanilla
1 tablespoon grated fresh lemon rind
6 ounces berry gelatin
2 cups boiling water
2 (10 ounce) packages frozen berries (strawberries, blackberries, whatever sounds good to you!)

Steps:

  • Mix together the crushed pretzels, melted butter, cinnamon, and the sugar.
  • Press into a 9"x13" pan and bake at 400 degrees for 8 minutes.
  • Mix together the softened cream cheese, Cool Whip, sugar, vanilla, and grated lemon rind.
  • Spread on the cooled crust in pan.
  • Dissolve the jello in the boiling water and mix in the frozen berries.
  • Carefully pour into pan and refrigerate until set.
  • Enjoy!

I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

2 cups cranberry juice cocktail (or cran-raspberry is good)
1 (6 ounce) package red Jell-O (black cherry or raspberry is what I love)
1 1/2 cups club soda
1/4 cup creme de cassis (I've never used but someday....) (optional)
1 teaspoon fresh lemon juice
3 cups raspberries or 3 cups sliced strawberries

Steps:

  • Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
  • Stir in club soda, liqueur, and lemon juice.
  • Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.
