2 tablespoons vegetable oil
4 cloves garlic, chopped
½ pound ground beef
½ small head cabbage, shredded
1 red bell pepper, cut into strips
2 tablespoons soy sauce
1 teaspoon cornstarch
½ cup cold water
1 teaspoon ground black pepper, or to taste
1 pinch salt, to taste

Steps:

  • Heat a wok or large skillet over medium-high heat, and add oil. Saute garlic for about 5 seconds, then add ground beef. Stir-fry until beef is evenly brown, 5 to 7 minutes; drain excess fat.
  • Stir in cabbage and pepper, and cook until vegetables are tender and beef is fully cooked. Stir in soy sauce. Mix together cornstarch and water, and stir in. Season with pepper; add salt to taste. Cook, stirring, until sauce has thickened.

2 teaspoons light brown sugar
1 teaspoon cornstarch

Steps:

  • Add peppercorns, garlic, brown sugar, cornstarch and 1 teaspoon salt to a medium bowl and stir to combine. Add sliced steak and toss to coat.
  • Heat the oil in a large cast-iron skillet over medium-high. Add steak and cook, stirring frequently, until some of the edges are lightly browned, 3 to 4 minutes. Add soy sauce and toss beef to coat, about 1 minute. Using a slotted spoon, transfer beef to a bowl or plate.
  • Add cabbage to skillet, spread in an even layer and let cook, undisturbed, for 1 minute so that some pieces caramelize in the pan. Toss and cook cabbage, stirring occasionally, until crisp-tender, 4 to 6 minutes. Stir in vinegar and season with salt.

Steps:

  • Toast spices with salt in a dry 10-inch heavy skillet over medium-low heat, stirring occasionally, until mustard seeds begin to pop, 3 to 5 minutes. Cool completely, then grind in grinder.
  • Preheat oven to 350°F with rack in middle.
  • Pat beef dry, then rub spice mixture all over it (including ends). Heat oil in same skillet over high heat until it shimmers. Brown beef on all sides, about 10 minutes total.

One 8- to 10-pound beef top round roast
Kosher salt
1/2 cup coarsely ground black pepper
3 heads garlic, ends removed, turned on their sides and sliced into two halves through the middle to expose each clove of garlic
Olive oil, for drizzling
1 cup hearty red wine
1/2 cup Dijon mustard
3 cups enriched beef stock
Juice from 1/2 lemon

Steps:

  • For the meat: Preheat the oven to 500 degrees F.
  • Sprinkle the roast beef generously on all sides with salt and coat with the pepper. Put the roast on a rack in a roasting pan. Arrange the garlic halves in a single layer of foil with some foil to spare. Drizzle with olive oil and sprinkle with salt. Wrap the foil over the garlic into a little package and place in the oven. Roast 45 minutes, then set aside.
  • Meanwhile, place the roasting pan in the center of the oven and cook, undisturbed, for 20 minutes. Lower the temperature to 350 degrees F, and continue to cook until a thermometer inserted in the center of the meat registers between 135 and 140 degrees F for medium-rare, about 2 hours Remove the roast beef and place it on a cutting board to rest for 20 minutes. (The roast temperature will continue to increase as it rests; the end slices will be more well done.)
  • For the gravy: Pour off excess grease from the roasting pan, then add the wine and bring to a boil over a burner. Reduce the liquid by half and whisk in the mustard. Add the stock and simmer until the sauce thickens slightly, 8 to 10 minutes. Add the lemon juice. Season to taste.
  • Squeeze 4 of the garlic halves like lemons over the blender to release the flesh from the skins, allowing the flesh to fall into the blender. Ladle some of the gravy into the blender and blend until smooth. Whisk the garlic back into the gravy. Squeeze the remaining garlic halves directly into the gravy and use the back of a spoon to smash them into the gravy. Taste for seasoning.
  • Serve the roast whole on the platter to carve at the table with the gravy on the side, or arrange slices of beef on a platter and coat with a layer of the gravy.

6 beef short ribs (8 to 10 oz. each)
1 tablespoon kosher salt
8 cloves garlic, peeled and crushed
1 tablespoon tomato paste
2 tablespoons whole black peppercorns, freshly crushed

3 sage leaves
3 small sprigs fresh rosemary
2 bay leaves
2 cups red wine, preferably Chianti
salt to taste, to adjust sauce

Steps:

  • Place meat in a large mixing bowl. Sprinkle all sides generously with 1 tablespoon kosher salt.
  • Place chopped garlic and a pinch of salt in a mortar and mash with pestle until pastelike. Add tomato paste; mash until blended. Transfer mixture into bowl with beef and rub onto all sides of meat. Add crushed peppercorns and ground pepper. Distribute evenly over all sides of beef. Transfer to a deep skillet or Dutch oven bone side down. Tuck sage leaves, rosemary, and dry bay leaves between pieces of meat. Carefully add wine along the side of the pan to avoid washing over the top of the meat.
  • Place pan over high heat and bring to a simmer; reduce heat to low. Cover tightly. Cook until meat is fork tender, turning pieces every 30 minutes or so, about 3 1/2 hours. Transfer pieces of meat to a warm bowl.
  • Increase heat to high and bring braising liquid to a boil. Simmer until liquid is reduced by about half or until slightly thickened, 8 to 10 minutes. Remove bones from meat.
  • When sauce is thickened, transfer meat back to skillet. Reduce heat to medium-low and spoon sauce over meat. Cook until until heated through, about 5 minutes.

One 3 1/2 pound beef tenderloin, trimmed
2 tablespoons olive oil
1 tablespoon Emeril's Original Essence
1/4 cup Dijon mustard
1/2 pound fresh horseradish, peeled and grated (about 1 1/2 cups)
1 1/2 teaspoons finely ground black pepper
2 tablespoons chopped garlic
1 tablespoon coarse salt
Emeril's Worcestershire Sauce
Port Wine Reduction

Steps:

  • Preheat the oven to 400 degrees F.
  • Rub the tenderloin with the oil and Emeril's Original Essence. Heat a saute pan large enough to hold the tenderloin over high heat until the pan is very hot, about 2 minutes. Sear the meat until evenly browned on all sides, about 2 minutes per side. Remove from the heat.
  • Line a shallow baking pan fitted with a wire rack with aluminum foil. Place the tenderloin on the rack. Rub the top and sides of the meat with the mustard.
  • Combine the horseradish, black pepper, garlic, and salt in a small mixing bowl. Using your hands, press the horseradish mixture over the mustard on the top and sides of the tenderloin. You may have to roll the tenderloin several times to make it all stick. Set it on the prepared rack.
  • Roast the tenderloin for about 30 minutes for rare (120 to 125 degrees F on an instant meat thermometer) and about 35 minutes for medium-rare (130 to 140 degrees F on an instant meat thermometer).
  • Remove from the oven and rest for 15 minutes before slicing.
  • Drizzle the beef with the Worcestershire sauce and Port Wine reduction.

2 1/2 pounds beef stew meat, cut into 2-inch cubes
Kosher salt
All-purpose flour, for dredging
2 to 3 tablespoons EVOO
2 cups beef stock
5 or 6 cloves garlic, crushed
1 large bay leaf
2 cups dry red wine
2 tablespoons tomato paste
1 1/2 tablespoons coarsely ground pepper
4 starchy potatoes, peeled and cubed
8 ounces Taleggio, cow's milk Robiola or other ripe soft-rind cheese
1 cup milk or half-and-half
A few fresh sage leaves, torn
Coarsely chopped fresh flat-leaf parsley, for garnish

Steps:

  • Bring the beef to room temperature. Pat dry and sprinkle with salt. Dredge the beef lightly in flour, shaking off the excess.
  • Heat about 1 tablespoon EVOO in a Dutch oven over medium-high heat. Brown half the beef and transfer to a plate. Add another 1 tablespoon EVOO to the pot and brown the remaining beef. Return all the beef to the pot and add the stock and enough water to cover the beef. Stir in the garlic and bay leaf and bring to boil. Reduce the heat to medium-low, partially cover the pot and simmer for 2 hours. Stir in the red wine, tomato paste and pepper and cook until the beef is tender enough to fall apart and the sauce is thick, 2 to 3 hours more.
  • When the beef is almost finished cooking, cook the potatoes in a pot of boiling water until tender, 12 to 15 minutes. Drain and return to the hot pot. Cut the Taleggio into cubes and mash into the potatoes with enough milk to reach the desired consistency. Stir in the sage and season with salt and pepper.
  • Divide the beef and sauce among bowls and sprinkle with parsley.
  • Cook's Note: The beef stew can be covered and refrigerated for a make-ahead meal. Reheat gently, adding water as needed to thin the sauce.

9 oz beef sirloin, fat removed and meat cut into 1/4-inch slices
1 tbsp of cornstarch
2 tbsps of peanut oil
1-inch piece of fresh ginger, peeled and grated
11 oz mixture of sliced snow peas, broccoli, sugar snap peas, baby bok choy, red cabbage, ribbons of carrot, and baby scallions
Dash of light soy sauce or to taste
1 tbsp of dark soy sauce
1 tbsp of light soy sauce
1 tbsp of Shaohsing rice wine or dry sherry
2 pinches of ground black pepper

Steps:

  • For the marinade: Mix together the ingredients for the marinade in a large bowl, then add the beef and stir to coat. Cover the bowl with plastic wrap and set aside for 20 minutes to marinate, then remove from the marinade (reserving it) and dust with the cornstarch.
  • For the stir-fry: Heat a wok over high heat, and when it starts to smoke, add half the peanut oil. Add the ginger and stir-fry for a second or so, then add the vegetable mixture and toss together in the wok. Add a drop of water to create a little steam for cooking the vegetables. Cook for 1 minute and transfer to a plate. Place the wok back over the heat and add the remaining peanut oil, followed by the beef. Let the meat settle for a few seconds, then stir in the wok for 1-2 minutes. Add the stir-fried vegetables and toss together with the beef. Season with additional light soy sauce, then transfer to a serving plate and eat immediately.

2 teaspoons chopped fresh thyme leaves
1/4 teaspoon pepper
3 tablespoons brandy
4 teaspoons cornstarch

Steps:

  • With sharp knife, trim off excess fat and sliver skin from beef tenderloin. Fold narrow end of beef under to approximate thickness of remaining tenderloin. Tie folded end with butcher's twine or heavy cotton string; continue to tie every 2 to 3 inches to hold shape. Pat beef dry with paper towels.
  • Brush beef with oil; sprinkle with salt. Rub 1/4 cup pepper evenly over beef. Wrap beef with plastic wrap; let stand 30 minutes at room temperature.
  • Heat gas grill for indirect cooking. If grill has temperature gauge, try to maintain temperature between 325°F to 350°F.
  • Place beef on heated side of grill; cook 2 to 3 minutes on all sides or until browned.
  • Move beef to unheated side of grill. Insert meat thermometer into center of narrower end of beef. Cover grill; cook over indirect heat 30 to 40 minutes or until thermometer reads 135°F for medium-rare. If thickest part of beef has not reached 130°F to 135°F, it may be necessary to cut beef in half and leave thickest part on grill for 8 to 10 minutes longer.
  • Remove beef from grill; place on carving platter. Cover with foil; let stand 15 to 20 minutes. Temperature will rise about 10°F during stand time.
  • Meanwhile, in 12-inch heavy skillet, melt 2 tablespoons butter over medium heat. Add shallots; sauté until soft, about 3 minutes. Stir in broth, thyme and 1/4 teaspoon pepper.
  • In small bowl, mix brandy and cornstarch until smooth. Stir into shallot mixture. Increase heat to medium-high; heat to boiling, stirring constantly, about 1 minute. To serve, remove twine and cut beef into 1/2-inch slices. Serve with sauce.

1 cup merlot wine
2 packages (17 ounces) beef tips with gravy (recommended: Hormel)
2 teaspoons steak seasoning
2 teaspoons cracked black peppercorns
1 box (8 ounces) frozen artichoke hearts, thawed
1 box (8 ounces) frozen petite peas with pearl onions, thawed
Basil Mashed Potatoes, recipe follows
1 container (24 ounces) home-style mashed potatoes (recommended: Country Crock)
1 tablespoon prepared pesto
1/4 cup fresh basil leaves, finely chopped

Steps:

  • In a medium saucepan over medium-high heat, bring the wine to a boil. Reduce the liquid by half, about 8 to 10 minutes. Add the beef tips, steak seasoning, and peppercorns Bring to simmer and cook for 5 minutes. Stir in the artichokes and peas and cook until heated through, about 4 more minutes. Serve hot. with Basil Mashed Potatoes.;
  • Remove the plastic from the mashed potatoes. Microwave uncovered on high setting for 3 minutes. Remove from the microwave and stir. Return to microwave and cook for an additional 2 to 3 minutes. Stir in the pesto and chopped fresh basil. Serve hot.

2 Double 8 Cattle Company Fullblood Wagyu Teres Major (Chuck Tender) Filets (cut into 3/4 inch cubes)
4 tablespoons Oyster Sauce
8 Garlic Cloves (minced)
1/4 cup Rice Wine
3 tablespoons Turbinado Sugar
1/4 cup Golden Mountain Soy Seasoning Sauce
2 teaspoons Black Peppercorns (coarsely ground)
3 tablespoons Corn Starch
3 tablespoons Water
2 tablespoons Grapeseed Oil
1 tablespoons Sesame Oil
1 Large Red Onion (julienned)
1 teaspoon Kosher Salt
1 Whole Lime (juiced)
1 head Butter Lettuce (washed)

Steps:

  • PREPARING THE MARINADE:Cut up your two steaks into 3/4 inch beef cubes. Place all of your Wagyu beef cubes in a large bowl (#1). In a small bowl (#2), whisk together the oyster sauce, minced garlic, rice wine, Turbinado sugar, Golden Mountain soy seasoning sauce, and coarsely ground black peppercorns. This is your oyster sauce and soy sauce mixture.In another small bowl (#3), mix the corn starch and water until combined. Then, add in a 1/2 cup of the oyster sauce and soy sauce mixture (from #2) to bowl #3. Mix well. This is your marinade. NOTE: Reserve the remaining sauce in bowl #2 for later use. Cover the bowl, and place it in the refrigerator. Pour the contents of bowl #3 over the Wagyu beef cubes in bowl #1. Mix the beef cubes with the marinade.Cover the large bowl, and refrigerate for 12-24 hours, allowing the beef cubes to marinate. Occasionally pull the bowl out of refrigerator, and mix up the Wagyu beef during the marinating process.
  • PREPARING THE FULLBLOOD WAGYU BEEF AND ONIONS:Pull the Wagyu beef from the refrigerator one hour before cooking, allowing it to sit at room temperature. Heat a large wok on high heat, and add in the grapeseed oil and sesame oil. Once the oils are slightly smoking, add in the marinated Wagyu beef cubes. Cook while shaking often. Sear the Wagyu beef cubes on all sides. This usually takes about 4 minutes. Add in the julienned red onion and the remaining sauce from bowl #2. Cook for 2 more minutes or until the onions are softening. Turn off the heat.
  • FINAL STEPS:Place the washed butter lettuce and tomato wedges on a large platter. Mix together the lime juice and kosher salt. Pour the mixture over the lettuce evenly. Spread the Wagyu beef cubes and onions on top of the lettuce. Serve, and enjoy!

2 (8 ounce) center cut beef tenderloin steaks (can use sirloin steaks, but of course, it's not the same)
4 tablespoons cracked black pepper
1 tablespoon kosher salt
1 tablespoon olive oil
1 tablespoon soft butter
FOR THE CREAM SAUCE
6 ounces cremini mushrooms (the Italian brown ones)
1 shallot, peeled and minced
1 clove garlic, peeled and minced
1/2 teaspoon kosher salt
1 teaspoon ground black pepper
1 tablespoon basil, chopped
1 cup heavy cream
2 tablespoons soft butter, unsalted

Steps:

  • 1. While heating the oil and 1 T of butter in a large sauté pan over medium high heat, season the tenderloins with cracked black pepper and salt. 2. Place the tenderloins in the hot pan and sauté for 4 minutes, then turn and sauté for 3 minutes. 3. Cover with foil and set aside. 4. Slice mushrooms and set aside. 5. Heat 2 T soft butter in a large saucepan over medium high heat. 6. When hot, add shallots and mushrooms and sauté for 2 minutes. 7. Add the minced garlic and sauté until it becomes soft. 8. Add the heavy cream and steak juice from set-aside plate and reduce by one-third. 9. Season with salt and pepper. 10. Finally, add the basil and keep warm. 11. Have little hope of keeping your arteries open while enjoying this awesome dish.

1 lb green beans, ends snapped off and strings removed
3/4 lb flank steak, trimmed
2 tablespoons dark soy sauce or 2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon chinese rice wine or 1 tablespoon dry sherry
1 teaspoon sugar
2 teaspoons fresh coarse ground black pepper
3 tablespoons canola oil
1/4 cup water
2 slices unpeeled fresh ginger
1 medium onion, sliced

Steps:

  • 1 Snap green beans into halves or thirds to make pieces about 21/2 inches long.
  • 2. Slice steak with the grain into 2-inch-wide strips. Then slice the strips across the grain into 1/8-inch-thick . slices.
  • 3. Whisk together soy sauce, cornstarch, wine, sugar and black pepper in a medium bowl. Add beef and mix well.
  • 4. Heat 1 tablespoon oil in a wok or stir-fry pan over high heat until oil is hot but not smoking. Test by dipping a spatula in the beef mixture and then into the oil; it should sizzle. Add green beans and stir about 1 minute. Add water and reduce heat to medium. Cover and cook until tender-crisp, 6 to 9 minutes. Transfer beans and liquid to a shallow dish.
  • 5. Add remaining oil to pan and increase heat to high. Add ginger and stir until oil is hot and ginger sizzles. Add onion and stir constantly 1 minute. Stir beef mixture and add to pan. Cook, stirring, until beef is no longer pink, about 2 minutes.
  • 6. Return beans and liquid to pan and stir until mixed well and heated thoroughly, about 30 seconds. Discard ginger. Serves 4.
