This is a great salad for a buffet, with interesting textures and southwest flavors combined in one delicious salad. Leftovers store well refrigerated for several days.

1 cup uncooked couscous
1 ¼ cups chicken broth
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
½ teaspoon ground cumin
8 green onions, chopped
1 red bell pepper, seeded and chopped
¼ cup chopped fresh cilantro
1 cup frozen corn kernels, thawed
2 (15 ounce) cans black beans, drained
salt and pepper to taste

Steps:

  • Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
  • In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
  • Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

This is one of my favorite salads, and is a great way to use leftover chicken! The flavor combination of all the veggies and pop of vinegar makes this couscous salad really stand out. Refrigerating is optional. Bon appetit!

2 ½ cups water
3 tablespoons olive oil, divided
2 cups pearl (Israeli) couscous
¼ cup balsamic vinegar
1 teaspoon white sugar
salt and ground black pepper to taste
1 (16 ounce) can black beans, rinsed and drained
1 (16 ounce) can whole kernel corn, drained
1 ½ cups cooked and cubed rotisserie chicken
½ red bell pepper, chopped

Steps:

  • Bring water and 1 tablespoon olive oil to a boil in a medium pot over high heat. Add couscous; quickly lower heat and let simmer until water is absorbed, 7 to 8 minutes.
  • Whisk balsamic vinegar, 2 tablespoons olive oil, sugar, salt, and pepper together in a small bowl until dressing is evenly combined.
  • Fluff couscous with a fork and place in a large, shallow bowl. Add black beans, corn, chicken, and red bell pepper. Fold salad together and pour in the dressing in 3 batches, mixing well after each addition. Refrigerate until chilled, about 30 minutes.

This is a variation of a recipe I've been making for years. I've added the black beans to make it a nice vegetarian dish.

Number Of Ingredients 12

2 cups vegetable broth (or chicken)
1 (10 ounce) box couscous
1/3 cup extra virgin olive oil
1/3 cup chopped fresh cilantro
5 tablespoons fresh lime juice
2 teaspoons minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup fresh corn kernel, roasted (or use frozen, or canned)
2 tomatoes, diced
1 (15 ounce) can black beans, drained and rinsed
1/3 cup thinly sliced green onion

Steps:

  • In 2 quart saucepan, bring broth to boil.
  • Stir in couscous; cover. Remove from heat and let stand 5 minutes. Fluff with a fork.
  • Place couscous in a large bowl.
  • Combine olive oil, cilantro, lime juice, garlic, salt and pepper.
  • Gently fold into couscous.
  • Add remaining ingredients and fold gently. Adjust salt and pepper to taste.
  • Refrigerate, covered, for at least one hour, or overnight.

Herb Garden Couscous and Black Bean Salad image

1 cup couscous
One 15- to 16-ounce can black beans, drained and rinsed
1 large celery stalk, diced
1 medium red or orange bell pepper, diced
1 cup grape tomatoes
1/4 cup chopped green olives
1/2 cup chopped fresh parsley
2 tablespoons chopped fresh dill
Several fresh mint leaves, sliced
2 scallions, green parts only, finely chopped
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste
Butter, Boston, or Bibb lettuce leaves

Steps:

  • In a large heatproof container, combine the couscous with 2 cups boiling water. Cover and let stand for 10 minutes, then uncover and fluff with a fork.
  • Let cool, uncovered, for 5 minutes, then stir in the remaining ingredients except for the lettuce.
  • Serve warm or at room temperature, arranging some of the salad over a few lettuce leaves for each serving.

I found this one on allrecipes and tweaked it a bit. It's a wonderful salad for a cookout or potluck, and leftovers keep well (it makes quite a large batch). Don't let the long ingredient list scare you off, it's actually very simple to make. For any ingredients with a range of amounts, the least amount is what I like to use, the greatest amount is what the original recipe calls for. This is a vegan-friendly recipe if veggie broth is substituted for chicken broth.

1 cup uncooked couscous
1 1/4 cups chicken broth or 1 1/4 cups vegetable broth
2 -3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
1/2 teaspoon ground cumin
5 -8 green onions, chopped (white and green parts)
1 grated carrot
1 red bell pepper, seeded and chopped
1 fresh jalapeno pepper, seeded and chopped
1/4 cup chopped fresh cilantro
1 cup corn kernel (fresh is best, but use what you have on hand)
1 (15 -30 ounce) can black beans, drained
salt and pepper, to taste
1 (1 1/4 ounce) envelope goya salad and veggie seasoning (optional)

  • Bring broth to a boil in a 2-quart or larger saucepan and stir in the couscous.
  • Cover and remove from heat.
  • Allow to stand for 5 minutes.
  • In a large bowl, whisk together the olive oil, lime juice, vinegar, cumin, and Goya seasoning (if using).
  • Add green onions, carrot, red and jalapeno peppers, corn, cilantro, and beans.
  • Toss to coat.
  • Fluff the couscous with a fork.
  • Add to the veggie mixture, and mix well.
  • Season to taste with salt and pepper.
  • Can be served immediately, or may be chilled first.
  • For vegetarians use the vegetable broth.
