Traditional cabbage rolls are a delicious but time-consuming classic, so we updated them with a modern casserole makeover! We've eliminated lots of steps to make this far easier version but kept all the robust flavors that cabbage rolls are famous for: hearty ground beef, rich tomato sauce and savory chopped cabbage. Make room for this new classic in your dinner rotation!

1 lb lean ground beef (at least 80%)
2 cups chopped yellow onions
2 tablespoons butter
1 bag (10 oz) angel hair coleslaw mix
4 cloves garlic, finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 can (15 oz) Muir Glen™ organic tomato sauce
2 cups cooked white rice
2 eggs
1/2 cup heavy whipping cream
1/4 cup chopped fresh parsley leaves
Sour cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Heat 12-inch nonstick skillet over medium-high heat. Add beef and onions; cook 8 to 10 minutes, stirring to break up chunks, until beef is brown. Remove from skillet; drain and set aside. Wipe out skillet.
  • In same skillet, melt butter over medium-high heat. Stir in coleslaw mix, garlic, salt and pepper. Cook 1 to 2 minutes, stirring frequently, until wilted. Stir in tomato sauce; heat to simmering. Remove from heat. Stir in beef mixture and rice. In small bowl, beat eggs and whipping cream; stir into mixture in skillet.
  • Spoon mixture into baking dish. Cover with foil. Bake 22 to 24 minutes or until heated to 165°F in center of casserole. Top with parsley; serve with sour cream.

2 pounds ground beef
1 large onion, chopped
3 garlic cloves, minced
2 cans (15 ounces each) tomato sauce, divided
1 teaspoon dried thyme
1/2 teaspoon dill weed
1/2 teaspoon rubbed sage
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
2 cups cooked rice
4 bacon strips, cooked and crumbled
1 medium head cabbage (2 pounds), shredded
1 cup shredded part-skim mozzarella cheese
Coarsely ground pepper, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in 1 can tomato sauce and next 6 ingredients. Bring to a boil. Reduce heat; simmer, covered, 5 minutes. Stir in rice and bacon; remove from heat., Layer a third of the cabbage in a greased 13x9-in. baking dish. Top with half the meat mixture. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top. , Cover and bake 45 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, about 10 minutes. Let stand 5 minutes before serving. If desired, sprinkle with coarsely ground pepper.

This casserole has all the elements of cabbage rolls-ground beef, onion and rice cooked in tomato sauce-and skips the fuss of rolling. The cabbage is chopped instead and layered with the saucy filling, then topped with cheese, for a satisfying and easy casserole. Feel free to substitute other ground meats, such as turkey, for the ground beef-this recipe would also be great with a vegetarian meat substitute.

3 tablespoons extra-virgin olive oil, divided
1 pound lean ground beef
1 cup chopped onion
3 cloves garlic, minced
2 cups low-sodium chicken or beef broth
1 (15 ounce) can no-salt-added tomato sauce
1 cup long-grain white rice
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
8 cups chopped green cabbage (1 1/4 pounds)
2 teaspoons dried dill
¼ teaspoon crushed red pepper
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
  • Heat 1 tablespoon oil in a large saucepan over medium heat. Add ground beef and onion; cook, stirring, until the beef is no longer pink, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in broth, tomato sauce, rice, 1/4 teaspoon salt and 1/4 teaspoon pepper; bring to a simmer. Cover, reduce heat to maintain a simmer and cook, stirring once or twice, until the rice is tender, about 17 minutes (the mixture will be a little saucy). Uncover and remove from heat.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium heat. Add cabbage, dill, crushed red pepper and the remaining 1/4 teaspoon each salt and pepper. Cook, stirring, until the cabbage is just tender, 5 to 7 minutes. Remove from heat.

2 pounds ground beef
1 cup chopped onion
1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
  • In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

1 small green bell pepper
1/4 cup shredded Parmesan
2 pounds ground beef (80/20)
1 pound ground pork
Kosher salt
1 large head green cabbage
10 strips applewood bacon
1 medium yellow onion
8 ounces ground breakfast sausage
1/2 cup white rice
1/4 cup ketchup
1 tablespoon chopped garlic
1 tablespoon black pepper
1 tablespoon seasoning sauce, such as Kitchen Bouquet
1 large egg
Clarified parsley butter, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a gallon of salted water to a rapid boil in a stockpot. Remove the core of the cabbage head by cutting about a 3-inch deep cone only around the thick stem, keeping most of the head solidly intact. Place the cabbage de-cored-side down into the boiling water. Place a plate or a smaller pot on top of the cabbage head to keep it from floating. Boil until tender, soft to the touch and bright green, 15 to 20 minutes. Place in an ice water bath to stop the cooking process. Remove the damaged first couple of outside leaves and save for the bottom the pan. Then carefully remove the rest of the cabbage leaves until the head is smaller than a baseball.
  • Cook the bacon, saving the drippings. Place the cooked bacon into a food processor and puree. Then place into a large mixing bowl. Puree the onion and green pepper and place into the mixing bowl. Then do the same with the Parmesan. Then add the ground meats, rice, ketchup, garlic, 1 tablespoon salt, pepper, seasoning sauce and egg to the mixing bowl. Mix well. Scoop or ball into 4-ounce portions. Place the damaged outside leaves and the too-small center leaves on the bottom of a baking pan. Place a blanched cabbage leaf into one hand like a cup. Then place the ball of meat mixture in the center, pull the hard spine over the top and almost tuck into the meat, then fold the rest of the leaf around the ball.
  • Place in the baking pan with the folded sides down. Repeat. Place them nice and tight next to one another. Add about 1/2 cup water to the pan to help steam the cabbage rolls. Cover tightly with foil. Cook for 1 hour and 15 minutes. Drizzle with clarified parsley butter and serve.

There are many recipes on Zaar for Cabbage Roll Casserole, but none are quite the same way as I make it. This Casserole is very similar to how I make my Cabbage Rolls, so this is what I make when the Family wants my Rolls, but I don't have the time to make them.

1/2 lb ground pork
1 1/2 cups long grain rice (raw)
1 large yellow onion (chopped)
1 large green bell pepper (chopped small)
4 stalks celery (diced)
1/2 cup green onion (chopped)
1 head cabbage (shredded)
1 (16 ounce) can diced tomatoes (undrained)
1 (12 ounce) bottle spicy hot V8
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13-inch baking pan with cooking spray.
  • Brown the ground beef and the ground pork together.
  • When meat is done, drain.
  • In a large mixing bowl, stir all ingredients together until blended well.
  • Spread out into the prepared baking dish, and cover with foil.
  • Bake at 350°, for 1-1/2 hours.
  • At 45 minutes into cooking, remove from oven, open foil carefully, and stir the casserole well.
  • Recover with the foil, and continue baking for the rest of the cooking time.

1 tablespoon vegetable oil
1 ½ pounds ground beef
2 onions, chopped
1 cup water
1 (14 ounce) can tomato sauce
1 clove garlic, minced
1 teaspoon salt
1 pinch ground black pepper
½ cup white rice
4 cups shredded cabbage
8 slices bacon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x12-inch baking dish.
  • Heat vegetable oil in a large skillet over medium-high heat; cook and stir ground beef until crumbly, evenly browned, and no longer pink, 8 to 10 minutes. Drain and discard any excess grease. Stir in onions, water, tomato sauce, garlic, salt and black pepper; bring to a simmer. Add rice, cover, and cook for 10 minutes.
  • Spread half the shredded cabbage in prepared baking dish; cover with half the beef mixture. Repeat layers. Arrange bacon over final layer of beef. Cover baking dish with aluminum foil.
