BISCUIT BOWL CHILI

Kids love to help make these biscuit bowls almost as much as they love to eat them. For another weeknight meal, fill them with taco-flavored meat and all the fixin's or even your favorite sloppy joe mix. -Cassy Ray, Parkersburg, West Virginia

1 tube (16.3 ounces) large refrigerated flaky biscuits
2 teaspoons cornmeal
1 pound lean ground beef (90% lean)
1/2 cup chopped onion
1 can (16 ounces) kidney beans, rinsed and drained
1 can (11-1/2 ounces) V8 juice
1 cup ketchup
2 teaspoons chili powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. Place two muffin tins upside down; spray bottoms and sides of eight alternating muffin cups. On a work surface, roll or press biscuits into 4-in. circles. Sprinkle both sides with cornmeal, pressing lightly to adhere. Place biscuits over greased muffin cups, shaping biscuits around cups., Bake 11-13 minutes or until lightly browned. Carefully remove biscuit bowls from pans; cool on a wire rack. , Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink; drain. Stir in beans, V8 juice, ketchup and seasonings. Bring to a boil. Reduce heat; simmer, covered, 10 minutes. Serve in biscuit bowls; top with cheese.

I made these today for hamburger stew. So So So good and easy. You can leave out the spicy C pepper for the kiddos or add more for them fire lovers.

Number Of Ingredients 4

2 cups baking biscuit mix (recommended -- Bisquick)
2/3 cup whole milk
1/2 teaspoon cayenne pepper
all-purpose flour, for dusting

Steps:

  • Preheat the oven to 450 degrees F.
  • Invert a 6-cup muffin tin and spray the underside with vegetable oil cooking spray.
  • Stir together the biscuit mix, milk and cayenne in a medium mixing bowl.
  • Shape into a ball.
  • Turn out onto floured surface and knead 2 to 4 times.
  • Divide the ball into 6 pieces.
  • Roll each piece into a 6-inch circle.
  • Place 1 dough circle over each muffin cup.
  • Press around the cup to form a bowl shape.
  • Bake for 12 to 15 minutes, until lightly browned.
  • Let cool slightly. Remove the biscuit bowls and reserve.

I got this from Paula Deen on foodnetwork. Plan to try in the next week or so. Cant wait! I have never tried a recipe of Paula's that I didnt like.

2 c biscuit baking mix (bisquick prefered)
2/3 c whole milk
1/2 tsp cayenne pepper
1 lb ground chuck
1 medium onion
1 medium green bell pepper
2 can(s) (14 ounce) cans mexican style stewed tomatos
15 oz can kidney beans (drained and rinsed)
2 Tbsp chili powder
1 tsp salt

Steps:

  • 1. Preheat the oven to 450 degrees F. Invert a muffin tin and spray the underside with vegetable oil cooking spray. Stir together the baking mix, milk, and cayenne. Shape into a ball. Turn out onto a floured surface and knead 3 or 4 times. Divide the ball into 6 pieces. Roll each piece into a 6-inch circle. Place a dough circle over the back of each muffin cup. Press around the cup to form a bowl shape. Bake for 10 to 12 minutes, until lightly browned. Let cool slightly. Remove the biscuit bowls and reserve. Brown the ground chuck over medium heat in a Dutch oven. Add the onion and green pepper and continue to cook until the meat is completely browned and the vegetables are tender. Drain off any fat and discard. Stir in the tomatoes, beans, chili powder, and salt. Bring the mixture to a boil, cover, and reduce the heat to low. Simmer for 35 minutes. When ready to serve, spoon the hot chili into the biscuit bowls. Top with shredded cheese, sour cream, sliced green onions, and corn chips.

2 tablespoon(s) chili powder
1 teaspoon(s) salt
TOPPINGS
- shredded sharp cheddar cheese
- sour cream
- sliced green onion
- crushed corn chips

Steps:

  • pre heat oven to 400 degrees F invert muffin tin an spray bottom with oooking spray
  • Biscuit Bowls.....stir together baking mix milk and cayenne pepper . shape into ball Turnout on floured board knead 3 or 4 times Divide ball into 6 pieces . Roll into 6 inch circles, press around cup to form bowl bake 15 min till lightly brown cool and reserve
  • Chili....brown meat over medium heat in dutch oven. add onions and peppers...cook till meat is completely browned and vegetable are tender. Drain fat add beans and tomatoes, chili powder and salt bring to boil cover simmer 35 min
  • When ready to serve spoon hot chili in bowls garnish with shredded cheese sour cream green onions and corn chips
