Depending on whom you talk to, making ice cream floats with beer is either a genius idea, or a horrible mistake. The key is to choose a beer that's on the toasty, malty, sweeter side, and stay away from beers that are too hoppy, dry, and bitter. Here I pair coffee ice cream with stout and vanilla, the safest option, with a Belgian raspberry sour (or any fruity beer). I'd make a small test glass first, to make sure it works for your palate.

1 cup chocolate stout beer
1 scoop coffee ice cream
1 pinch unsweetened cocoa powder
1 cup Belgian-style raspberry sour beer
1 scoop vanilla ice cream

Steps:

  • Version 1: Pour stout into a British pint glass and scoop coffee ice cream on top. Garnish with a dusting of cocoa powder.
  • Version 2: Pour raspberry beer into a pint glass; top with vanilla ice cream.
  • Add a straw to each float and serve with spoons alongside.

1 pound ground beef
1 medium onion, finely diced
1 tablespoon minced garlic
1/2 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon coarse ground black pepper
1 tablespoon salt
1 jalapeno, finely diced
1/2 cup bread crumbs
1/2 cup beef broth
1 beaten egg
1 teaspoon curry powder
1 tablespoon water
2 packages premade pie crust
Special equipment: 3-inch cookie cutter

Steps:

  • Preheat the oven to 400 degrees F.
  • Brown the ground beef in a large saute pan over medium heat. Add the onion, garlic, paprika, thyme, black pepper, and salt. Stir together, and then add the jalapeno. Remove from the heat, and add the bread crumbs and the beef broth. Stir well to combine and set aside to cool completely.
  • In a small bowl, whisk together the egg, curry powder and water. Set aside.
  • On a work surface, flatten the pie crusts and cut out 3-inch rounds using a cookie cutter.
  • Add a hearty tablespoon of the beef mixture onto each round. Fold over and press the edges with your fingers. Crimp the edges with a fork. Transfer the patties to a baking sheet and brush the tops with the egg mixture. Bake in the preheated oven for 30 minutes.
  • Arrange on a serving platter and serve.

3 tablespoons smoked paprika
1 teaspoon salt
1 tablespoon onion powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon dried ground thyme
1 teaspoon dried oregano
1/2 teaspoon garlic powder
4 tilapia fillets
2 tablespoons grapeseed oil
1/2 lemon, juiced

Steps:

  • In a small bowl combine all of the spices. Press a heaping tablespoon of the spice mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 minutes at room temperature prior to cooking.
  • In a large skillet, heat the oil over medium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 minutes on each side. Sprinkle with lemon juice and transfer the fillets to serving platter.

2 tablespoons grapeseed oil
1 pound beef tenderloin, diced
1 teaspoon cracked black pepper
1 teaspoon salt
1/4 cup Vidalia onion, minced
1/4 cup green pepper, minced
2 cloves garlic, minced
3 tablespoons steak sauce (preferred: A1 Steak Sauce)
2 tablespoons dark brown sugar
Dash hot sauce
1 teaspoon dry mustard
6 brioche buns, toasted

Steps:

  • In a large skillet over medium-high heat, add oil. Add beef tenderloin, pepper and salt. Mix together. Allow to cook for a few minutes. Add onions, peppers and garlic and stir. Mix in steak sauce, brown sugar, hot sauce and dry mustard. Cook until browned.
  • Serve on toasted brioche.

6 cups Granny Smith apples, peeled, cored and diced
1/2 cup granulated sugar
1/4 cup dark brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch salt
Pinch ground nutmeg
1/2 lemon, juiced
Ginger Whipped Cream, recipe follows
2 tablespoons butter, softened
1/2 cup self-rising flour
1/2 cup sugar
Pinch salt
Pinch ground ginger
1 egg, beaten
1 cup whipping cream, chilled
1/4 cup confectioners' sugar
1/4 cup candy ginger, minced

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly butter a 9 by 9-inch baking dish.
  • In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish.
  • Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream.
  • Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.

1 1/2 cups rolled oats
1/2 cup peanuts, roasted
1/2 cup almonds, blanched
1/2 cup chopped walnuts
1/2 cup sweetened coconut
2 tablespoons brown sugar
2 tablespoons molasses
3 tablespoons peanut oil
1/2 cup raisins
1/2 cup coarsely crushed graham crackers
1 pint blueberries
1 quart vanilla yogurt

Steps:

  • Preheat the oven to 275 degrees F. Lightly grease a half sheet tray lined with parchment paper.
  • In a large bowl, combine the oats, peanuts, almonds, walnuts, coconut and brown sugar. Mix well. Add the molasses and peanut oil. Toss well until all ingredients are evenly dispersed and coated. Spread the granola out evenly on the sheet tray. Bake in the oven for 60 minutes, stirring occasionally to achieve even color.
  • Remove from the oven and transfer to a large bowl. Fold in raisins and graham crackers. Stir the blueberries into the yogurt in a small bowl. Spoon the yogurt into serving glasses or bowls and top with graham cracker granola.

1 orange
2 ounces bourbon
2 dashes orange bitters
3/4 cup root beer
1 ounce heavy cream

Steps:

  • Use a vegetable peeler to remove a long piece of zest from the orange, working your way around the fruit.
  • Combine the bourbon and bitters in a tall glass. Twist the orange zest over the glass to release the oils, then drop it in. Fill the glass halfway with ice. Add the root beer.
  • Slowly pour the cream over the back of a spoon into the glass so it floats on top.
